4 eggs
1-1/2 cups milk
2 tsp. GREY POUPON Dijon Mustard
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken, any flavor
1 cup chopped ham
1 cup chopped broccoli or any other vegetable
1 cup KRAFT Shredded Mild Cheddar Cheese or Mozzarella Cheese

Steps:

Preheat oven to 350°F. Beat eggs with milk and mustard in greased 9-inch square baking dish with wire whisk until well blended.
Stir in remaining ingredients.
Bake 40 minutes or until center is set.

Ingredients

2 cups fully cooked ham, cubed
2 cups cooked, diced potatoes
1 cup frozen and defrosted or canned whole kernel corn, drained, or 2 ears of fresh
1/4 cup fresh, minced parsley or 1 tb. dried
1-2 tb. chopped onion
1/4 cup butter
1/3 cup flour
1 3/4 c. milk
1/8-1/4 tsp. pepper
1 c. shredded cheddar
1/8-1/4 tsp. salt, depending on the saltiness of your ham

Steps:

1. In a large bowl, combine first 4 ingredients; set aside. Saute onion in butter for 2 minutes. Then, stir in flour until blended. Cook, stirring for 1 minute. Gradually whisk in milk, and pepper.
2. Bring to a low simmer and stir for 2 minutes. I occasionally add 1/4 c. shredded cheddar at this point, too. Remove from heat, pour over the ham mixture and stir to combine. Taste test for salt. Add 1/8- 1/4 tsp. depending on the saltiness of your ham.
3. Transfer to a greased 11x7x2 baking dish.
4. Cover and bake at 350 degrees for 25 minutes. Uncover and sprinkle with cheese. Bake 5-10 minutes longer until cheese is melted.

I work nights and crock pot recipes are life savers. This one is often requested by my family. My family doesn't much care for peas so I increase my potatoes and carrots to equal 1 1/2 C to substitute. The cream of celery soup really makes this good. I have used cream of chicken or mushroom and my family makes comments.

Ingredients

1 1/2 lbs ground beef
1 onion, chopped
1 1/2 cups potatoes, diced
1 1/2 cups carrots, sliced
1 1/2 cups peas
1 1/2-2 cups macaroni, cooked
1 (10 3/4 ounce) cream of celery soup
1/2-3/4 lb cheddar cheese, grated
2 cups milk
1 1/2 teaspoons salt
1/2 teaspoon garlic powder
1/8 teaspoon pepper

Steps:

Spray crock pot with Pam.
Fry beef and onion, drain. Place in crock pot.
Combine all ingredients *EXCEPT* Milk and Macaroni.
Cover, cook on low 8-10 hours, or cook on High 4 hours.
During the last 30 minutes of cooking add the milk and the macaroni and stir well. reduce the heat to low.
