Hardly a day goes by that I don't eat meat, but when something is good, its good and that's that! Let me tell you, this is good. You can certainly follow the baking directions for a bit less fat. FALAFEL
3 can(s) chick peas/garbanzo beans, drained and rinsed
1 bunch fresh parsley, chopped
1 bunch fresh cilantro, chopped
3 green onions, sliced
3 clove garlic, minced
1 tsp ground cumin
1/2 tsp ground allspice
1/2 tsp ground black pepper
1 tsp salt
WRAP FALAFEL SANDWICH
5 medium pita rounds
tahini sauce
hummus
SUGGESTED VEGGIES
2 c chopped iceburg or leaf lettuce
1 tomato, diced
1 red onion, chopped
1 cucumber, sliced
2 green onions, sliced

Steps:

  • 1. Run all ingredients through a food processor until very finely ground and well blended, but not mushy, you want a nice ground texture.
  • 2. Shape into patties
  • 3. Pan Fry Directions: Heat 1/4 inch of olive oil in a frying pan over medium heat. Add falafel patties and fry for about 7 minutes per side or until crispy and browned.
  • 4. Baking Directions: Coat a jelly roll pan with 3-4 Tbsp. olive oil and bake in a 375 degree, preheated oven for 13 minutes. Turn and bake for another 13 minutes or until crisp and browned on both sides. Add more oil if desired for crispier falafel.
  • 5. To make a pita wrap: Warm pitas by wrapping them in aluminum foil and placing them in a 375 degree oven for about 10 minutes or so.
  • 6. Spread 2 Tbsp. hummus onto pita bread. Add two falafel patties. Drizzle with a bit of tahini sauce. Load up with veggies of your choice. Fold pita into a wrap sandwich and enjoy!

1 Middle Eastern-style flatbread or pitta
4-5 falafels (see recipe below)
4-5 slices avocado
small handful of parsley, coriander and mint leaves
½ lime, juiced
generous drizzle of sriracha
75ml natural yogurt
½ tbsp tahini
½ lemon, juiced
1 small garlic clove, crushed
pinch of ground cumin

Steps:

  • For the tahini sauce, mix together all the ingredients with some seasoning in a small bowl.
  • Warm the flatbread in a dry frying pan - around 30 seconds on each side. Spoon the tahini sauce onto the flatbread and top with the falafel and avocado, then scatter with the herbs, squeeze over the lime juice and add the chilli sauce. Roll up and enjoy.

  • Preheat oven to 375 degrees. Place all ingredients for falafel (except for the pitas, baking powder, and nonstick spray) in a food processor, and give them a good chop.
  • Transfer into a bowl, add the baking powder and stir together. Using a potato masher, mash any big chunks that remain – Mixture should remain slightly chunky, not smooth.
  • Spray a baking sheet thoroughly with olive oil nonstick spray. One at a time, take spoonfuls of mixture in your hands and form 15 balls, each about the size of a ping pong ball, and gently place them on the baking sheet. Spray the top of each ball with olive oil nonstick spray, for a total of about a 2-second spray.
  • Bake in the oven for 15 minutes. Meanwhile, combine 2 parts hummus to 1 part water, and stir until blended (add more water to taste depending on how watery you like your sauce). Season to taste with salt / black pepper and refrigerate until ready to serve.
