Steps:
- In a food processor, combine the chickpeas, scallions, garlic, cumin, coriander, cayenne, parsley, cilantro, egg, and lemon juice. Pulse to combine and season with salt. The mixture will not be smooth, but it should not have large chunks.
- Add in the baking powder and 1/3 cup of the flour and pulse to just combine. Remove to a bowl and chill in the refrigerator for 30 minutes.
- Remove the chickpea mixture from the refrigerator. Add enough oil to a large saute pan so it reaches 1/2-inch up the sides and heat it over medium-high heat until an inserted thermometer reads 360 degrees F.
- Meanwhile, drop spoonfuls of the chickpea mixture onto a plate with 1/4 cup flour. Roll into balls on the floured plate and press gently into patties. Fry in batches of hot oil for about 3 to 4 minutes each side and drain on paper towels.
- Serve the falafel on a bed of lettuce with chopped salted tomatoes, grated cucumber and White Bean Yogurt Sauce.
FALAFEL DRY MIX
This is my own creation after realizing that normal boxed falafel is usually not all that good and quite expensive. I've also never found a dry falafel mix recipe where you just need to add water. This recipe is easily made in large batches for future use.

- Grind Garbanzo Beans - I used a spice grinder to grind the garbanzo beans. Then used a strainer with a decent size hole to sift the mixture to get rid of any large parts. This took a long while to grind up a decent amount, but these little beans are hard and I didnt want to ruin a blender or something else.
- Mix All dry ingredients together.
- Add water.
- Let sit 30 minutes.
- Roll into balls.
- If you prefer flatten into patties, I've found that you need less oil when cooked this way.
- Fry in corn oil at 300F until golden brown. Falafel will float near the time it is done cooking.
- Set on a paper towel to soak up any extra oil.
- Enjoy.

- 24 hours in advance, soak chickpeas in enough water to cover them. The next day, they will double in size. Drain, rinse and dry the chickpeas thoroughly.
- Place the chickpeas in the bowl of a food processor and blend until they're powder-like. Add the parsley, cilantro, onion, garlic, flour, salt, cumin, coriander, and black pepper and blend until the mixture turns to paste, scraping down the sides as needed. Cover the bowl and refrigerate for 1 hour to set. When ready to make, sprinkle baking powder on the falafel mix, and fold in gently.
- Scoop the falafel using a falafel scoop, an ice cream scoop, meat baller or your hands. Form a round ball with the falafel, each with about 1-2 tablespoons of the mixture. The balls may feel loose at first but they will bind once they fry. Makes roughly 36 falafel patties. Sprinkle sesame seeds on the patties, if desired

Steps:
- Bring water to a boil and remove from the heat.
- Mix in the bulgur.
- Cover well and allow the wheat to sit until all the water is absorbed -- about 20 minutes.
- Heat the olive oil in a small pan and saute the onion and garlic over medium heat until the onion is just transparent.
- Add red chili flakes, cumin, and coriander and saute for 1 more minute.
- Combine the chickpeas and bulgur in a food processor. Add the lemon juice, bread crumbs, cilantro, parsley and salt and process until just mixed, and has a pleasing texture.
- Set mixture aside for 15 minutes.
- Preheat oven to 400 degrees.
- Form falafel mixture into 2 inch balls and place on a lightly oiled sheet pan.
- Spray the balls with some olive oil.

- The night before, add dried chickpeas to a large bowl and cover with water. Cover bowl and let them soak overnight. They should double in size. When you're ready to make your falafel, drain chickpeas.
- Add all ingredients except for oil to a large bowl and toss to combine. Working in small batches, process in food processor. You don't want to run them until everything is completely smooth, but it should be about as course as fine sand. Give it a stir and pick out any large chunks that weren't processed and get them ground up and added back to the mixture.
- To cook, add at least an inch of oil to skillet and heat to 375 degrees F. To form the falafel balls, add a couple tablespoons of the mixture to the palm of your hand, form a ball, and slightly flatten the ball. The mixture doesn't hold together all that well, so just be gentle and steady with the pressure. Carefully drop into the oil. I prefer to cook just a few at a time so that the oil temperature can remain steady. Cook until they turn golden brown, flipping once (about 5 minutes total). Be sure the oil is at the correct temperature before adding the next batch. Transfer cooked falafel to a paper towel lined plate to drain.

- Drain and rinse the favas and chickpeas and put them in a food processor. Add the onion, parsley, cilantro, garlic, baking powder, salt, cumin and crushed red pepper. Pulse, scraping down the side of the bowl, to form a coarse paste. Add the water and process until the mixture is gritty but fine and brilliant green. Scrape the paste into a bowl.
- In a medium saucepan, heat 2 inches of oil to 350°. Scoop rounded tablespoons of the falafel mixture into the hot oil and fry in small batches until browned and crisp, about 2 minutes. Drain on paper towels set over a wire rack and serve hot, with Tahini Sauce.
