1 lime, juiced

2 (8 ounce) boneless New York strip steaks, cut into thin strips
8 (6 inch) white corn tortillas, or more as needed
1 (8 ounce) jar salsa
1 (8 ounce) package shredded Mexican cheese blend

Steps:

  • Whisk olive oil, lime juice, cilantro, onion, garlic, cumin, salt, and black pepper in a bowl, and pour into a resealable plastic bag. Add steak strips, coat with the marinade, squeeze out excess air, and seal bag. Marinate in the refrigerator for 4 hours to overnight.
  • Heat a large skillet over medium heat; cook and stir beef in hot skillet until all liquid is absorbed, 15 to 20 minutes.
  • Serve cooked beef with tortillas, salsa and Mexican cheese blend.

1 pound beef top sirloin steak or flank steak, trimmed and cut against the grain into 1/4-inch strips
MARINADE:
3 tablespoons canola oil
2 tablespoons lemon juice
1 teaspoon dried oregano
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
FAJITAS:
1/2 medium onion, sliced
1 medium sweet red pepper, sliced into thin strips
2 tablespoons canola oil, divided
8 flour tortilla shells, warmed
2 avocados, peeled and sliced
Salsa
Sour cream

Steps:

  • In a large resealable bag, combine marinade ingredients; add beef. Seal and refrigerate for 3-6 hours or overnight, turning several times. , Discard marinade. In a skillet, saute onion and pepper in 1 tablespoon oil until crisp-tender; remove from pan. Pat steak strips dry with paper towels. Add remaining oil and saute meat until no longer pink, about 4 minutes. Return vegetables to pan and heat through. , To assemble, place a spoonful of meat and vegetable mixture on a warmed tortilla and top with avocado, salsa and sour cream. Roll tortilla around filling.

3 skirt steaks, about 3 pounds
1 tablespoon finely minced garlic
1 1/2 tablespoons fresh lime juice
1 tablepoon water
Salt to taste
Freshly ground pepper to taste
12 tortillas
Chipotle chili sauce (see recipe)
Red onion rings for garnish
3 large romaine lettuce leaves
Guacamole
Hot chili sauce (pico de gallo) (see recipe)
Mexican table sauce (see recipe)
Cowgirl beans (see recipe)

Steps:

  • The skirt steak should be as free of surface fat as possible. Place each steak on a flat surface, and carefully slice away most of the fat using a sharp knife. Trim well on both sides.
  • Cut each steak crosswise into three or four pieces, each about five or six inches long.
  • Place each piece of meat on the flat surface, and holding a sharp slicing knife parallel to the cutting surface, cut each piece of meat, sandwich-style, into two thin rectangles. Count on four or five slices per person.
  • Blend the garlic, lime juice, water, salt and pepper in a small bowl. Spoon a small amount into a flat dish. Make one layer of meat slices and brush the tops with the mixture. Make another layer of meat, another brushing of sauce and so on. Continue until all the slices of meat and sauce are used.
  • Cook the meat slices over a hot charcoal fire about 2 minutes on each side. Meanwhile, heat another grill or a skillet, and add the flour tortillas. Cook briefly just to heat through without browning. They must remain soft.
  • To serve, arrange equal portions of the hot grilled meat on each of six preheated plates. Smear a generous quantity of the chipotle sauce over the meat. Garnish the top with three red onion rings. Cut each lettuce leaf crosswise in half and add a half to each plate. Spoon equal portions of guacamole (two avocados will produce the right quantities for these proportions) on top. Serve the hot chili sauce and the Mexican table sauce on the side. Serve the beans in individual small bowls to be eaten with a spoon. Serve the warm flour tortillas, covered, on the side.
  • To eat, add one piece of sauce- covered, garnished meat in the center of a tortilla. Add hot chili sauce and Mexican table sauce to taste. Fold left and right sides of the tortilla over the center to enclose the meat. Fold up the bottom edge to prevent dripping.

2 1/4 pounds skirt or flank steak, trimmed of fat
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 red onion, thinly sliced
Guacamole, recipe follows
Salsa Fresca, recipe follows
12 flour tortillas, warm

Steps:

  • In a small bowl, whisk together marinade ingredients. Place steak in a shallow container, and pour marinade over it. Refrigerate, covered, 8 hours or overnight to tenderize meat.
  • Drain the marinade from the meat. Grill the steak in a ridged grill pan over medium-high heat for 4 minutes each side. Transfer the steak to a cutting board and let stand.
  • In the same pan with the steak juices, add the bell peppers and onions. Saute the mixture for 3 minutes until the vegetables are limp. Thinly slice the steak against the grain on a diagonal.
  • Spread some guacamole on a tortilla, top with a few slices of steak, peppers and onions and salsa fresca. Roll up the tortilla to enclose the filling.
  • May also serve with sour cream and shredded cheese.

I love a good fajita but have never been satisfied with most restaurants I've gone to. I've come up with a basic recipe you can build from that is awesome in itself. Give it a try! The meat is key in a good fajita. It must melt in your mouth along with all the other fixins you put into the tortilla. Serve fajitas in warm tortillas topped with fresh guacamole, garden salsa, and fresh cilantro.

1 flank steak
¼ cup shichimi togarashi
¼ cup orange juice
¼ cup low-sodium soy sauce
2 tablespoons lime juice
½ orange, zested
½ lime, zested
1 tablespoon cornstarch
1 tablespoon chili powder, or more to taste
1 teaspoon kosher salt
1 teaspoon smoked paprika
1 teaspoon brown sugar
1 teaspoon cayenne pepper
1 teaspoon red pepper flakes
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground cumin
1 tablespoon olive oil
1 onion, cut into slices and separated
1 red bell pepper, cut into thin strips
¾ cup water

Steps:

  • Flatten flank steak slightly with a meat mallet. Rub shichimi togarashi into both sides of steak, wrap the steak in plastic wrap, and refrigerate for 8 hours or overnight.
  • Combine orange juice, soy sauce, lime juice, orange zest, and lime zest together in a resealable plastic bag. Remove flank steak from plastic wrap and place the steak in the resealable plastic bag, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Remove steak from marinade and pour marinade into a small bowl.
  • Cook steak on the preheated grill, basting with the marinade every 5 minutes, until it starts to firm and is seared on the outside and reddish-pink and juicy in the center, 8 to 10 minutes per side. An instant-read thermometer inserted into the center should read 135 degrees F (57 degrees C).
  • Cut steak in half lengthwise and cut across the grain into thin slices.
  • Whisk cornstarch, chili powder, salt, paprika, brown sugar, cayenne pepper, red pepper flakes, onion powder, garlic powder, and ground cumin together in a bowl.
  • Heat oil in a large skillet over medium-high heat. Saute onion and red bell pepper in hot oil until soft, 5 to 10 minutes. Add sliced steak, chili powder mixture, and water to the skillet. Cook until sauce thickens and meat is glossy, 3 to 5 minutes.

1 medium onion, sliced 1/4 inch thick
1 medium green pepper, sliced 1/4 inch thick
1 garlic clove, crushed

8 -10 ounces filet of beef, trimed of all fat
2 tablespoons fresh cilantro, chopped
8 corn tortillas, heated
guacamole or avocado, slices
sour cream
salsa
olive oil flavored cooking spray, as needed

Steps:

  • Spray a large, non-stick skillet with olive oil spray and add 2 teaspoons olive oil; Add the onions and green peppers and cook over medium heat until onion is translucent.
  • Add the garlic and oregano and cook for 1 minute more; (this can be done a day ahead and reheated) Or kept warm while steaks are grilling.
  • Grill the meat to rare to medium rare as you like; then remove from heat and cut into strips on a cutting board.
  • Add the hot cooked steak and cilantro to the warm peppers and onion and mix together in skillet, cooking for 2 to 3 minutes, just to blend flavors.
  • Serve with warm corn tortillas, sour cream, salsa and avocados as garnishes.

1/2 cup fresh lime juice
1/3 cup corn oil
1 tablespoon oil
1/2 cup tequila
1 teaspoon ground cumin
1 teaspoon dried oregano, crumbled
1/2 teaspoon fresh ground pepper
3 large garlic cloves, finely chopped
6 small onions, peeled, cut in half
18 flour tortillas
3 cups refried beans

Steps:

  • Trim the excess fat from the meat and cut it crosswise into long strips about 1/2 inch wide. Place the strips in a shallow, nonreactive dish. In a bowl stir together the lime juice, 1/3 cup oil, tequila, cumin, oregano, pepper and garlic. Pour over meat, coating each piece well.
  • Cover with plastic wrap and refrigerate for 24 hours, turning the meat over a few times. In a heavy frying pan or a griddle over medium heat, warm the 1 tablespoon oil. Cook the onion, stirring, until well browned, 6 to 8 minutes. Transfer to a plate and keep warm.
  • Place the same pan or griddle over high heat. Drain the meat well, reserving the marinade. Add the meat to the pan or griddle and cook, turning once and basting with the leftover marinade, until done to your liking, about 2 minutes on each side for medium-rare. Transfer to the plate holding the onions and keep warm.
  • Heat the tortillas, turning once, on the same pan or griddle, about 10 seconds on each side. Alternatively, wrap in plastic wrap and place in microwave oven for about 30 seconds. Just before serving gently heat the refried beans in heavy saucepan. Cover and keep warm. Arrange the meat, onions and tortillas on a warmed platter. Place the refried beans, guacamole, salsa, sour cream and cilantro in separate dishes on the side. Diners can prepare their own fajita according to their liking.
