PHOEBE'S FABULOUS OATMEAL-RAISIN COOKIES

From aspoonfulofsugar.net These are crispy crunchy buttery oatmeal cookies. I made them without raisins and they DIDN'T SPREAD even though made with butter. See tip below.

12 tablespoons unsalted butter, softened (175g)
3/4 cup firmly packed light brown sugar (160g)
2/3 cup granulated sugar (130g)
1 large egg
1 teaspoon vanilla extract
2 cups rolled oats (170g)
1 1/4 cups all-purpose flour (160g)
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups raisins, if desired (200g)

Steps:

  • Preheat oven to 375°F/190°C/Gas Mark 5.
  • Cream together; butter and sugars until light and fluffy.
  • Add egg and vanilla extract; beat until well combined.
  • In a small bowl combine oats, flour, soda, baking powder and salt.
  • Mix into butter mixture until just combined.
  • Stir in raisins if desired.
  • Drop the dough by heaped tablespoons onto ungreased baking sheets, leaving a 2" gap between each mound.
  • Tip: I used a dessert-spoon and made ovals rather than balls (quenelles, if we're being posh) as I heard that this caused the dough to spread less.
  • Bake for 12-15 minutes until golden brown.
  • Cool on sheet for at least a minute before transferring to a rack.

I came up with this recipe for chewy, delicious, spiced oatmeal cookies. If you prefer a crisp cookie, bake them for about two minutes longer.

1 cup butter
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3 tablespoons ground cinnamon
1 teaspoon nutmeg
1/4 teaspoon ginger
1/2 teaspoon clove
3 cups quick-cooking oats
1/2 cup semi-sweet chocolate chips (optional)
1/4 cup sugar, set aside

Steps:

  • 1. In a medium bowl cream together butter, white sugar and brown sugar.
  • 2. Beat in eggs, one at a time.
  • 3. Add Vanilla.
  • 4. Combine flour, baking soda, salt, and spices.
  • 5. Mix in oats. If using electric mixer, stir in by hand.
  • 6. Stir in chocolate chips. You can substitute raisins, or add them in with the chocolate chips.
  • 7. Cover dough and chill for about an hour.
  • 8. Preheat oven to 375ºF.
  • 9. Grease cookie sheets.
  • 10. Roll the dough into walnut sized balls and roll in sugar. Place balls of dough about two inches apart. If you want a crisper cookie, press the cookie a little bit flat.
  • 11. Bake cookies for 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1/2 cup granulated sugar
1 large egg
1/4 cup water
1 teaspoon vanilla extract

1 teaspoon salt
1/2 teaspoon baking soda
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon clove
1 teaspoon ginger
3 cups quick oats
2 cups raisins

Steps:

  • Preheat oven to 350°F.
  • In a small bowl, sift flour, salt, baking soda, cinnamon, cloves, nutmeg, and ginger; set aside.
  • In a large mixing bowl, cream butter, granulated sugar, brown sugar, egg, water and vanilla extract.
  • Add dry ingredients to the creamed mixture; mix well.
  • Stir in quick oats and raisins.
  • Drop by well rounded teaspoonfuls onto a lightly greased baking sheet.
  • Bake for 10 - 12 minutes.
  • Cool on tray for 1 minute and move to wire rack to complete cooling.

1 cup shortening
1/2 cup brown sugar, firmly packed
1 cup granulated sugar
2 large eggs, beaten
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 cups quick-cooking rolled oats
1/2 cup chopped nuts (optional)
1/2 cup semi-sweet chocolate chips (optional)
1/2 cup raisins (optional)

Steps:

  • Preheat oven to 350°F.
  • Cream together shortening and sugars.
  • Add eggs and vanilla, beat well.
  • Sift together flour, salt and soda.
  • Add to creamed mixture.
  • Stir in oats slowly.
  • Mix well. Add nuts, chips or raisins, if desired. Dough will be fairly stiff.
  • Drop by heaping tablespoon on lightly greased cookie sheet. (I use a 4 teaspoon cookie scoop and press them down slightly before baking).
  • Bake for 8-10 minutes.

1 teaspoon salt (optional)
1/2 teaspoon baking soda

Steps:

  • Heat oven to 350°F.
  • Cream together brown sugar, shortening, and granulated sugar; add water, eggs, and vanilla: beat well.
  • Add combined oats, flour, salt, and baking soda: mix well.
  • Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 11-13 minutes until edges are golden brown.
  • Remove to wire rack; cool completely.
  • Store tightly covered.
