"EVERYTHING" MASHED POTATO CASSEROLE



The everything-mashed potato casserole seemed to evolve over a year and it's a great dish to take to a covered dish event. If I need to keep it warm for a longer time, I sometimes place the mixture into a crockpot and then add the sour cream, bacon, cheese and chives. -Pamela Shank, Parkersburg, West Virginia

Number Of Ingredients 10

3 pounds potatoes (about 9 medium), peeled and quartered
1 package (8 ounces) cream cheese, cubed
1/2 cup butter, cubed
1/2 cup whole milk
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups sour cream
2 cups shredded cheddar cheese
3 bacon strips, cooked and crumbled
1 tablespoon minced chives

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until tender. Drain., In a large bowl, mash potatoes. Beat in the cream cheese, butter, milk, salt and pepper until fluffy. Transfer to a greased 3-qt. baking dish. Spread sour cream over the top. , Bake, uncovered, at 350° for 10 minutes. Sprinkle with the cheddar cheese, bacon and chives. Bake 5 minutes longer or until heated through and cheese is melted.

This is a chicken and potato casserole recipe I made up and may still need tweaking. It only takes a few ingredients and is super easy to make.

1 tablespoon olive oil
4 each potatoes, peeled and cubed, or more to taste
1 (15.25 ounce) can whole kernel corn, drained
1 (10.5 ounce) can condensed cream of chicken soup
1 ½ cups canned chicken, drained
½ cup milk
⅓ cup sour cream
2 tablespoons salted butter, melted
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat the bottom of a large baking dish with olive oil.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until halfway cooked, about 10 minutes. Drain and place in the prepared baking dish.
  • Combine corn, condensed soup, chicken, milk, sour cream, and melted butter in a large bowl; stir to combine. Pour mixture on top of potatoes and spread evenly across the baking dish. Cover with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove from the oven, discard aluminum foil, and sprinkle Cheddar cheese on top of the casserole. Bake until melted, another 10 minutes.

Number Of Ingredients 12

2 lbs boneless skinless chicken breasts, cut into 1/2-inch cubes
8 -10 medium potatoes, cut into 1/2-inch cubes (I leave the skin on)
1/3 cup olive oil
1 1/2 teaspoons salt
1 tablespoon fresh ground pepper
1 tablespoon paprika
2 tablespoons garlic powder
6 tablespoons hot sauce
Topping
2 cups fiesta Mexican blend cheese or 2 cups monterey jack and cheddar cheese blend
1 cup crumbled cooked bacon
1 cup diced green onion

Steps:

  • Preheat oven to 500F (This is NOT a typo, 500F is correct!) . In a large bowl mix together the olive oil, hot sauce, salt, pepper, garlic powder & paprika. Add the cube potatoes and stir to coat. Add the potatoes to a greased baking dish. When scooping the potatoes into the baking dish, leave behind any extra olive oil/hot sauce mix. Add the diced chicken to the "left behind" olive oil/hot sauce mix and stir to coat all the chicken. Allow to marinate as the potatoes bake. Roast the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and nice and crispy on the outside. Once the potatoes are fully cooked add the marinated chicken. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400°F. In a large bowl mix all the topping ingredients together. Top the raw chicken with the topping. Bake 15 minutes or until until the chicken is cooked through and the topping is melted and bubbly delicious. Serve with extra hot sauce and/or ranch dressing.

Like this is easy to prepare chicken casserole that's topped with seasoned bread crumbs and shredded swiss cheese. This is a tasty casserole that family and friends will love enough to go back to for seconds!

1 1/2 lbs chicken breasts, skinless and boneless
2 tablespoons olive oil, divided
1 small yellow onion, sliced into thin rings
1 cup dry white wine
1 cup fresh button mushrooms, sliced in half
2 teaspoons chopped fresh thyme
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1 1/2 cups breadcrumbs
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 1/2 cups swiss cheese, shredded
1/4 cup fresh parsley, coarsely chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Thoroughly wash and pat dry chicken with paper towels. Pound flat - 1/2 inch. (Cook's Tip: Place the chicken between two wax paper sheets and use gentle strokes when pounding - The meat can tear easily.).
  • In a large oven-proof skillet, heat 1 tablespoon oil over medium-high heat.
  • Add onions and cook, stirring often, until just starting to soften, about 5 to 7 minutes.
  • Add wine to the skillet and increase heat to high; stir often, until the wine is slightly reduced, about 2 to 4 minutes.
  • Place the chicken and mushrooms on the onions; sprinkle with thyme, salt and pepper. Cover the pan tightly with foil; transfer to the oven and bake for 12 minutes.
  • In a small mixing bowl, toss together the bread crumbs, remaining oil, paprika, garlic powder, and onion powder.
  • Spread the bread crumb mixture over the chicken, top with the cheese, and garnish with parsley. Return to oven and continue to bake, uncovered, until the juices run clear, about 12 - 15 minutes more.

2 lbs boneless skinless chicken breasts
1 (10 3/4 ounce) can 98% fat-free cream of chicken soup
4 medium potatoes
2 cups shoestring carrots (I buy them already cut in the fresh vegetable section)
2 teaspoons onion powder
2 tablespoons garlic, minced (I but the jarred already minced garlic)
1 teaspoon Italian herb seasoning
1 teaspoon seasoning salt
1/2 teaspoon black pepper
1/2 cup water

Steps:

  • Preheat oven to 400.
  • Spray 11 X 9 casserole dish with cooking spray.
  • Cut chicken into bite size pieces, and place in casserole dish.
  • Cut potatoes in large bite size pieces and place in casserole dish.
  • Place carrots in casserole dish.
  • In a separate bowl mix soup, seasoning and water. Pour over Chicken, potatoes and carrots and toss until everything is covered in sauce.
  • Bake uncovered for about 45 minutes, until chicken and potatoes are cooked thoroughly.

I made up this recipe using what I had in the kitchen. It is a new family favorite! Super simple...and delicious!!

2 boneless skinless chicken breasts, cubed
5 medium potatoes, cubed
1 (10 1/2 ounce) can cream of chicken soup
2 tablespoons minced garlic cloves
1/4 cup celery, chopped
1/2 small onion, sliced
2 tablespoons chicken bouillon granules
1/2 cup warm water
1/4 cup butter
2 tablespoons lemon juice
1 tablespoon oregano
1 tablespoon italian seasoning
salt & pepper

Steps:

  • 1. Preheat oven to 400 degrees. Grease 9 x 13 dish with cooking spray.
  • 2. Place cubed chicken, potatoes, garlic, celery, & onion in dish and toss together.
  • 3. Mix water & chicken boullion until dissolved (or you can use 1/2 cup chicken broth).
  • 4. Melt butter and add to chicken broth, also add cream of chicken soup, lemon juice, oregano, and italian seasoning, mix well, then pour over top of chicken and potatoes.
  • 5. Season with salt & pepper to taste.
  • 6. Cover with foil and bake for approximately 45 minutes, then uncover and bake for another 20-25 minutes.

Steps:

  • Preheat oven to 500 degrees.
  • In large bowl mix olive oil, salt, pepper, paprika, garlic powder and hot sauce.
  • Add potatoes to bowl and allow to marinate for 10 minutes.
  • Using a strainer and another bowl, drain the potatoes. Collect all remaining sauce in one bowl and set aside.
  • Coat baking dish with cooking spray.
  • Spread potatoes evenly in baking dish and bake for 45 minutes, stirring every 15 minutes.
  • Fry bacon and set aside to drain.
  • Using the bacon grease, brown the chicken cubes and add them to the remaining sauce. Coat the chicken cubes evenly in the sauce.
  • Once potatoes are done, spread the chicken on top. Bake for 12 minutes.
  • Crumble the bacon, grate the cheese, and chop the green onions.
  • Layer the cheese, bacon, and half of the green onions and bake for 3 - 5 minutes more, until the cheese is melted.
  • Add fresh green onions before serving.
