Steps:
- In a small bowl, combine rosemary, ground pepper, and salt; rub rosemary mixture on pork chops.
- Melt butter in a large skillet over medium-high heat; stir the garlic into the melted butter, then place the pork chops in the skillet. Cook the pork chops 3 to 5 minutes per side, or until golden brown.
- Turn the heat down to low, pour in the beef broth, and simmer for 35 to 45 minutes, or until pork chops are fully cooked and meat thermometer inserted into thickest chop reads 145 degrees F (63 degrees C).

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with foil.
- In a bowl, stir together the barbecue sauce, brown sugar, soda, garlic, and pepper until the sugar has dissolved. Set the sauce aside. Place the pork chops on the prepared baking sheet.
- Bake the pork chops in the preheated oven until the juices start to run clear and an instant-read thermometer inserted into the center of a chop reads 120 degrees F (49 degrees C.) Transfer the pork chops to a baking dish big enough to lay the chops into the dish without overlapping. Pour the sauce over the chops, and cover the dish with foil.
- Bake the chops until no longer pink in the center, about 25 minutes. An instant-read thermometer inserted into the center should read 165 degrees F (75 degrees C).

This was my Mother's Simmered Pork Chop recipe which I believe is the absolute best pork chop recipe I have ever tried. Easy too! Try it - you'll love it!

- Season meat with salt& pepper.
- Brown in skillet.
- Combine applesauce, onion, catsup, water, soy sauce and sage.
- Pour over meat.
- Cover and simmer 45 minutes or until meat is tender.
- I've cooked it longer and it is still tender, moist and the sauce it has simmered in is mouth-watering!
- Use yellow or red onion-- I prefer red onion.
- I've even used cinnamon applesauce I had on hand and the chops were just as tasty and delicious.
- Often served with spanish rice and a green vegetable.

3-INGREDIENT PAN-SIMMERED ITALIAN BONELESS PORK CHOPS
You will NOT believe how good these pork chops are, after seeing how EASY they are to make. These are so simple, yet worthy of serving to company. I get rave reviews every time I serve them and I'm always asked for the recipe, yet almost embarrased to give it! The trick is to cook slowly with enough heat, but not so much that the chops are boiling to get tough and dry. And the cooking time is very flexible...you can simmer these for up to 6 hours if you'd like. (By the way, I consider the salt and pepper "freebies" in the ingredient count!)

Steps:
- Heat oil over medium-high heat in large frying pan that has a lid.
- Season pork chops with salt and pepper.
- Sear chops in pan till lightly browned, about 1-2 minutes per side.
- REMOVE frying pan from burner (so you don't burn yourself on next step).
- Slowly pour can of stewed tomatoes over chops. Distribute tomatoes so some are under chops and the balance is evenly covering the tops of the pork chops.
- Cover pan and return to burner. Reduce heat to low and simmer (do not boil) for 2-3 hours, or until chops are fork tender. You can leave the chops on low for even longer, if you prefer - adjust to your schedule.
- Uncover and let simmer for another hour (or longer) until some of the water in the pan evaporates.
- Serve with side of mashed potatoes (the pan juice goes well with them!) or over pasta of your choice with some parmesan cheese.
SIMMERED STOVETOP PORK CHOPS
These pork chops are slow-simmered for 1 to 1 1/2 hrs in a covered skillet on the stovetop... they melt in your mouth. No knife necessary!

- Heat oil in a large skillet over medium heat. Brown pork chops in the hot oil on both sides, 5 to 7 minutes total.

SLOW SIMMERED PORK ROAST

- Trim the visible fat from the roast, rinse the roast with cool water, and pat it dry with paper towels. Coat a nonstick 4-quart pot with cooking spray and preheat over medium-high heat. Add the roast to the pot and cook for a couple of minutes on each side or until nicely browned.
- Combine the water, bouillon granules, rosemary, sage, and black pepper, and pour over the roast. Reduce the heat to low, cover, and simmer for 1 hour and 15 minutes.
- Place the potatoes, carrots, and mushrooms around the roast and raise the heat to return the mixture to a boil. Reduce the heat to low, cover, and simmer for an additional 30 minutes or until the meat and vegetables are tender.
- Remove the meat to a serving platter and, using a slotted spoon, transfer the vegetables to the platter. Pour the pan juices into a fat separator cup, then pour the defatted broth into a 2 cup measure. If necessary, add water to bring the volume up to 1 1/2 cups.
- To make the gravy, pour the defatted broth into a 1 quart pot, and bring to a boil over medium heat. Combine the evaporated milk and flour in a jar with a tight fitting lid and shake until smooth. Slowly pour the milk mixture into the boiling broth, while whisking constantly. Cook and stir for a minute or 2 or until the mixture is thickened and bubbly. Pour the gravy into a warmed gravy boat, and serve hot with the meat and vegetables.

APPLE CHERRY PORK CHOPS
This was a variation on a Cranberry Pork Chop recipe that I got from a "Very Best Baby" promo magazine. (No, it's not baby food. No worries.) I didn't have some of their ingredients, so this is what I came up with instead. My husband doesn't like the fruit/meat combo, but he said the sauce wasn't too fruity on the meat. (It was a little too fruity on the rice we had with it, though.) Hope you like it!

- For the Chops.
- Season pork chops with salt and pepper on both sides.
- Heat olive oil in pan.
- Sear chops for 3-4 minutes on each side.
- Add in balsamic vinegar and orange marmalade.
- Reduce heat to simmer, cover, and cook for about 7 minutes.
- For the French Beans & Olive Tapenade.
- Combine all ingredients for the tapenade in a food processor, and process until smooth. Set aside.
- Bring a pot of water to a boil.
- Add in the french beans and boil for a minute.
- Strain out and transfer to an ice water bath for about 2 minutes to stop the cooking process.
- Just before serving, sauté the chopped shallots and french beans in a little olive oil.
- Top off with the tapenade, give a quick stir, and take off the heat.
- Serve while hot.

- Preheat oven to 200°F.
- In a large skillet mix together all sauce ingredients.
- Bring to a boil over medium-high heat.
- Turn heat to medium-low and simmer, uncovered, for about 5 minutes.
