2 cups corn (dried & cracked)
2 tablespoons clarified butter (NitirKebe)
3 tablespoons olive oil
1 medium shallots or 1 medium red onion
4 cups water
1/2 cup milk (optional)
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/8 teaspoon turmeric powder
salt

Steps:

  • Thinly chop the onion; in a medium pot saute the onion with one tablespoon of oil for 5 minutes or until tender.
  • To the saute onion add, 3 cups of water, milk, 1 tablespoon butter or 2 tablespoon oil, garlic, black pepper, turmeric powder, salt.
  • Rinse the cracked Corn, add to the spiced boiling pot; in a lower heat, cook it for 20 to 25 minutes or until it absorbs the water, stir continuously and gently.
  • Remove from heat; add the remaining butter or olive oil and mix it very well; serve it immediately or keep it in the fridge, warm it when needed.

Reduce heat to maintain a gentle simmer, cover and cook until fluffy and tender, about 10 minutes for bulgur or barley grits, 20 minutes for freekeh. Remove from heat and let stand, covered, for 5 minutes. Stir in niter kibbe (or butter or oil) and salt.
