PILAF FOR A CURRY BANQUET

- Cook the onion in the oil, in a deep saucepan with the cloves, cardamom pods, cinnamon stick, cumin seeds, and nigella seeds, if using, until the onion is slightly browned and soft. Keep the heat medium to low and stir frequently; this should take about 10 minutes.
- Add the rice and move it about in the oily spiced onion until it is slicked and glossy, then pour in the stock and bring the pan to the boil. Cover the pan with a lid and cook over the lowest heat possible for 20 minutes.
- Turn off the heat, take the lid off, cover with a tea towel and clamp the lid back on the saucepan. You can leave the rice to rest like this for at least 10 minutes, and up to about 1 hour. Fork the rice through when you are ready to serve it, scattering the toasted sliced almonds and cilantro on top.
SHRIMP IN YELLOW CURRY
Many Thai dishes are not unlike what we call curries, but although they may contain curry powder, they are more often based on a combination of herbs and aromatic vegetables, rather than dried spices. A typical curry might feature a mixture of garlic, shallots, chiles, lime leaf, sugar and galangal (or ginger). This simplified version leaves out the lime leaf and sugar, but benefits from the addition of a couple spoonfuls of fish sauce at the end of cooking. It is brightly flavored, but blessedly easy to toss together on a weeknight.

- Place the oil in a large, deep skillet and turn the heat to medium. Add the onion, garlic, ginger, and chilies and cook, stirring frequently, until the vegetables are tender and the mixture pasty. Add the curry and cook, stirring, another minute.
- Add the coconut milk and raise the heat to medium-high. Cook, stirring occasionally, until the mixture is nearly dry. Add the shrimp, a few pinches of salt and a little black pepper and cook, stirring frequently, until the shrimp release their liquid (the mixture will become quite moist again) and turn pink.
- Add half the nam pla, stir, then taste and add the rest if necessary. Garnish with cilantro and serve with white or sticky rice.

CHRISTMAS SHRIMP CURRY

- Melt butter in a double boiler. Add onion. Simmer until tender. Stir in flour and other dry ingredients. Gradually stir in chicken broth and milk. Cook over boiling water, stirring until thickened. (Could be 10 minutes.) Add shrimp and lemon juice. Heat to serving temperature. (Be sure not to heat too long or shrimp will over-cook and turn to rubber.) Serve over fluffy rice with two or more accompaniments on top: chutney, shredded coconut, diced bananas, sliced avocado, pineapple chunks, bacon bits, salted almonds, Spanish peanuts or currant jelly.
ERIC'S PIZZA (THE DOUGH THAT WOULDN'T GO!)

- Place a pizza stone onto the floor of the oven and preheat the oven to 450 degrees F.
- Put the dough onto a floured work surface, dust with some more flour, and roll the dough out to the desired size. Carefully place the dough onto a floured pizza paddle. Spread the tomato sauce over dough and sprinkle with cheese. Top evenly with the pineapple, bell peppers, and pepperoni. Slide the pizza onto the pizza stone and cook until the edges are brown, about 10 to 15 minutes.

Steps:
- Scoop out pineapple flesh and freeze shells. Discard core. Blend flesh with 1/4 cup water. Pour into saucepan and cook over medium heat. Add lime juice and bring to boil. Boil for 2 minutes.
- Combine gelatin and 1 tablespoon water. Dissolve this in pot with remaining water, over low heat. Add Kirsch and food coloring. Add to pineapple mixture and chill.
- Once cooled, beat in whipped cream. Chill again.
- Place two banana pieces in each pineapple shell. Sprinkle with almonds. Pour chilled mousse mixture over them. Place in refrigerator to set.
- Once mousse is set, preheat broiler and place rack 3 inches from heat. Beat egg white, gradually adding sugar until stiff. Place in piping bag and pipe decorative swirls on top of the mousse, covering it completely. Broil for 3 minutes. Remove and sprinkle with coconut. Broil again for another minute to toast.
ENSALADA DE NOCHE BUENA (CHRISTMAS EVE)

- In a small bowl, whisk together olive oil, orange juice, vinegar, salt, and cilantro. Set aside. Wash and dry lettuce leaves and then shred. Arrange the lettuce on the bottom of a glass bowl and then layer beets and fruit on top of lettuce, it can be mixed, although, doesn't have to be. Top with peanuts and pour the dressing over the salad.
TRADITIONAL MEXICAN CHRISTMAS SALAD

- Slice 1/4 of the top off of each apple and reserve. Using melon baller, scoop out the apple flesh to leave a hollow cavity (which will be filled with finished salad). Coarsely chop the apple flesh and mix with the remaining ingredients in large bowl. Season with salt and pepper, to taste.
- Spoon about 3 tablespoons of the mixture in each hollowed out apple and place the reserved tops on the filling (any unused filling can be refrigerated for up to 1 day). Serve cold or at room temperature.
- Cook's Note: To prevent the apples from turning brown while preparing the filling, place them in a bowl of water with the juice of 2 limes added.

- In a large saucepan, heat butter over medium-high heat. Add onion, apple and celery; cook and stir until tender, 3-4 minutes. Add garlic; cook 1 minute longer. - Lightly oil a medium bowl; set aside. Stir together flour, sugar, yeast, salt, cumin, turmeric, and white pepper in a separate medium bowl. Stir in 2/3 cup warm water to form a soft, sticky dough. Using oiled hands, knead dough in bowl until smooth and stretchy, about 2 minutes. Transfer dough to oiled bowl; cover with a dish towel, and let stand at room temperature until doubled in size, 30 minutes to 1 hour.
- Heat oil in a large Dutch oven over medium-high. Add onions and bell pepper; cook, stirring occasionally, until softened, about 8 minutes. Add scallions, thyme, curry powder, and garlic; cook, stirring constantly, until fragrant, 1 to 2 minutes. Add tomato paste; cook, stirring constantly, until beginning to caramelize on bottom of Dutch oven, 1 to 2 minutes. Stir in broth, coconut milk, and 1 1/2 teaspoons salt; bring to a boil over medium-high. Reduce heat to medium-low; simmer, uncovered, stirring occasionally, until flavors meld and curry sauce reduces slightly, 10 to 15 minutes. Toss shrimp with remaining 1/2 teaspoon salt in a large bowl. Add to curry mixture; cook, stirring occasionally, until shrimp are opaque and cooked through, 3 to 4 minutes. Season with salt to taste. Reduce heat to low, and cover to keep warm.
- Pour oil to a depth of 1/2 inch in a large skillet; heat over medium to 350°F. Turn bara dough out onto a lightly oiled work surface. Divide dough evenly into 18 pieces (about 5/8 ounce each). Using lightly oiled hands or a lightly oiled rolling pin, flatten 1 dough piece into a 4 1/2-inch circle. Repeat process with a second dough piece. Add flattened dough pieces to hot oil, and fry, carefully basting dough with hot oil, until puffed, 20 to 30 seconds per side. Using a slotted spoon, carefully transfer fried bara to a baking sheet lined with paper towels. Repeat process with remaining dough pieces.
