Just lovely served hot or cold, this dessert comes from the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

Steps:
- Grease a casserole dish and preheat oven to 350°F.
- Heat butter in a skillet until it turns a deep brown, but not burned.
- Mix crumbs and sugar; add browned butter.
- Place a layer of apples in prepared casserole followed by a layer of crumbs; repeat until casserole is filled, retaining enough crumbs to cover the top.
- Mixture should be 3-4" deep.
- Bake for 90 minutes.

- In a bowl, combine the sugar, flour, baking powder and salt. Add eggs and vanilla; mix well. Stir in apple and walnuts. Spread into an ungreased 9-in. pie plate. Sprinkle with cinnamon-sugar if desired. , Bake at 375° for 25-30 minutes or until a toothpick inserted in the center comes out clean.

- Combine dry ingredients and add sugar.
- Add egg and vanilla, then stir in apples and walnuts.
- Liberally butter a bundt pan and pour batter in.
- Bake 375 degrees for approx.
- 50 minutes.
- Remove from pan when semi-cool and sprinkle liberally with cinnamon sugar.

A classic and favourite cake recipe from Norway. The Scandinavians love using fruit in their cooking, and this apple cake is a wonderful example of a moist and fruity dessert type cake. It can be served warm or cold and freezes very well.

Steps:
- Cream the sugar with the butter, until light, fluffy and pale golden. Slowly add the beaten eggs and then add flour, bit by bit - mixing well after each addition.
- Mix gently, pour mixture into greased 9 inch square pan.
- Peel and slice apples.
- Place slices on top of the mixture. (Place apple slices as close as possible to each other).
- Mix sugar and cinnamon.
- Sprinkle this topping over the apples.
- Bake for about 60 minutes in a 180C/350F oven, until well risen and golden.
- This delicious apple cake can be served warm or cold with cream or creme fraiche.
- It keeps and freezes very well - separate the slices with greaseproof paper for freezing.
