Shape a mix of peanut butter, flaxseeds, pecans, raisins and coconut into balls for a healthy, energy-boosting snack

100g pecan
75g raisin
1 tbsp ground flaxseed (or a mix- we used milled flaxseed, almond, Brazil nut and walnut mix)
1 tbsp cocoa powder
1 tbsp agave syrup
50g desiccated coconut
2 tbsp peanut butter

Steps:

  • Put pecans in a food processor and blitz to crumbs. Add raisins, peanut butter, flaxseeds, cocoa powder and agave syrup, then pulse to combine.
  • Shape mixture into golf ball-sized balls and roll in desiccated coconut to coat. Put in the fridge to firm for 20 mins, then eat whenever you need a quick energy boost.

Here's what you need: creamy peanut butter, old fashion oat, honey, mini chocolate chips, flax seed

⅔ cup creamy peanut butter
1 cup old fashion oat, plus extra for rolling
1 ½ tablespoons honey
¼ cup mini chocolate chips, plus extra for rolling
¼ cup flax seed, optional

Steps:

  • Mix all ingredients in a bowl until well-combined.
  • Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Once done chilling, roll into approximately 1 inch (2.5 cm) balls. (Cover hands in a light layer of butter or oil to facilitate rolling and avoid getting sticky hands.)
  • Lay out a thin layer of oats and chocolate chips on a cutting board or work surface and roll the balls in the mixture. Finish off by rolling each ball between your hands to pack in the oats and chocolate chips.
  • Enjoy!

We love these tasty little treats at our house. I first discovered them on a food blog called "Smashed Peas & Carrots." My five year old calls them "Cookie Dough Balls" and he is the envy of all his classmates when he packs them for lunch. They're a great, healthy way to take the edge off your hunger. I'm sure they would freeze very well, but they never last that long--very yummy!

1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flax seed
1/2 cup mini chocolate chip
1 teaspoon vanilla

Steps:

  • Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.
