FIESTA CHICKEN ENCHILADAS
I can't take the credit for this recipe but it's really good and quick and easy to make.....it was discovered in a cookbook I bought from our school to help out with a classmate of my daughter who has CF (the classmate not my daughter) the cookbook is called:Country Cookin,For a Cure great fundraiser they done here and has lots of great recipes!

Steps:
- Preheat oven to 350 degrees.
- Pour 1 can of enchilada sauce in a 9by13 inch baking dish.
- In a large bowl,combine chicken,sour cream,chilies,onions and salt.
- Stir in one cup of cheese.
- Spoon about 1/3 cup of chicken mixture down the center of each tortilla.
- Roll up tortillas and place seam side down in prepared baking dish.
- Pour remaining can of enchilada sauce over top;sprinkle with remaining one cup of cheese.
- Bake uncovered 30 minutes or until cheese is melted and enchiladas are heated through.
- Serves 6-6 I have doubled this recipe before- experiment around with the enchilada sauce-- I prefer one can of green sauce and 1 red sauce-- but you can use whatever you like-- also you can add more cheese on the top-- these really are yummy!

- Cook and stir onions and garlic in large skillet spayed with cooking spray on medium heat 2 min. Add chicken, 1/4 cup salsa, cream cheese, cilantro and cumin; mix well. Cook 5 min. or until heated through, stirring occasionally. Add 1/2 cup shredded cheese; mix well.

AUTHENTIC MEXICAN ENCHILADAS
This is the real thing! Corn tortillas are dipped in a home made sauce, fried, filled with Mexican queso fresco, then topped with sour cream, lettuce and tomato. My mother in law is from Mexico and taught me to make this delicious dish! Serve with authentic refried beans, it has a taste different from the norm--so good!

- Snap the tops off of the dried chilies, and place in a saucepan with enough water to cover. Bring to a boil, and simmer for 15 minutes. Drain the water, and place chilies into a food processor or blender with the garlic and salt. Puree until smooth. Press sauce through a strainer, and set aside.
- Heat the oil in a large skillet over medium heat. Soak each tortilla in the sauce, then place in the hot oil. Turn over almost immediately, and fry for about 5 seconds on the other side. Remove to a plate that is lined with paper towels. The easiest way to do this is to fry the tortillas and stack them directly on top of each other until you have fried them all. This will keep the tortillas pliable until you are ready to fill them.
- Take one fried tortilla at a time, and fill with about 2 tablespoons of the queso fresco. Roll up, and place seam side down on a plate. Place three of these on each plate. Top in the following order: Start with a layer of sour cream, then a small handful of lettuce, three tomato slices, 2 more tablespoons of queso fresco, and finally, 1 tablespoon of green onions.

MEXICALI ENCHILADAS -SEMI-HOMEMAKER RECIPE
Steps:
- Preheat oven to 400 degrees F.
- Wrap corn tortillas in wet paper towels and microwave for 45 seconds. In a large bowl, combine chicken, 1 1/2 bags of cheese, onion, cilantro, and 2 cans of enchilada sauce. Mix well Add the cilantro and stir to combine.
- Cover the bottom of a large baking dish with half of the remaining enchilada sauce.
- Carefully spoon mixture into tortillas, roll up and place seam side down in the baking dish. Cover the top with the other half can of the enchilada sauce and the rest of the cheese (1 1/2 bags). Bake for 35 to 40 minutes. Serve with sour cream sauce.
- Make sour cream sauce by adding butter to a saucepan over medium heat. While the butter is melting add the chicken broth, cumin, garlic and sour cream. Whisk to combine; season with salt, bring to a boil and remove from the heat.
- Serve enchiladas topped with sour cream sauce.
SHRIMP FIESTA ENCHILADAS WITH CREAM SAUCE
Shrimp and vegetable medley wrapped in corn tortillias with creamy cheese sauce. I came up with this idea as I wanted to prepare an untraditional Easter dinner. It was hit with my family! It presented beautifully on the table. It was rich enough so that I really didnt need alot of extra dishes to accompany the main entree. I served them with a caesar salad, some spanish rice and black beans. This recipe makes approximately one dozen enchiladas.

Steps:
- Heat 2 Tbs. oil in medium skillet and add vegetables and garlic, saute for about 3 minutes on medium high heat.
- Add Shrimp and continue cooking just until shrimp turn pink.
- Remove from heat and add lime juice. Set aside.
- Heat 1/2 vegetable oil in 8" skillet and fry tortillias for approximately 30 seconds.
- Drain on paper towels and stack.
- Mix Jar of Salsa and can of Enchilada sauce in shallow bowl.
- Prepare a 9X13 casserole dish by spreading 1/4 Celsius green sauce to coat bottom.
- Coat tortillia in sauce, *(you will have green sauce left over to add to cream sauce).
- Lay tortillia in casserole dish and spread 2 Tbs. shrimp filling, and 1 Tbs. of grated cheese in middle of tortillia and roll and place seam side down. Continue until all tortillias are rolled and arrange in single layer in dish.
- Cover with foil and bake in preheated 325 degree oven approximately 15 minute.
- Meanwhile prepare CREAM SAUCE:.
- Melt butter in sauce pan over medium to medium high heat.
- Wisk in flour and stir untill flour melts and mixture bubbles.
- Slowly incorporate half and half. As soon as mixture comes to boil and thickens remove from heat and stir in cheese and *remaining green sauce.
- Remove dish from oven, remove foil and pour sauce over enchiladas. You may top with additional grated cheese and sliced olives if desired.
- Return to oven, uncovered and continue baking another 15 - 20 minutes or until hot and bubbling.

- Heat oven to 350 degrees F. Spray an 8x11x2-inch baking dish with cooking spray.
- Pour chicken broth into a small frying pan, heat to simmer, add chicken breast, cover and simmer until no longer pink, turning once (approximately 25 minutes). Cool and shred.
- In same frying pan, add onions and red pepper. Saute over medium heat until soft, approximately 5 minutes. Remove from heat.

ENCHILADA'S WITH FIESTA CREAM SAUCE
Awesome chicken enchiladas that my entire family loves. Great flavor and easy to prepare. I usually serve with a side salad or Spanish rice. Although verde sauce on it's own has some heat it is very mild when prepared with chicken in this dish.

- Rinse and clean chicken breast and place in crockpot.
- Add 1 pkt of fiesta ranch seasoning on top of chicken.
- Add 2/3 cup of water to mix and chicken and be sure chicken is coated thoroughly.
- Add coarsely chopped onion on top of chicken and turn crock on low.
- After chicken is tender and reserve 2/3 cup broth for sauce.
- Shred chicken and drain off remaining liquid over colander to be sure to catch any onion and then return onion to chicken.
- Add 1 jar verde salsa to chicken and stir.
- Cut Monterey jack cheese into large chunks and place in chicken then stir.
- Turn on crock to high and cover for about 20 minutes.
- To make cream sauce add mushroom soup to medium sauce pan then add sour cream, Goya seasoning packets, 1/2 pkt of fiesta ranch mix, and the reserved broth and stir frequently over medium until heated.
- Soften corn tortillas in warmer then fill with chicken mixture, roll and place in 9/13 inch pan sprayed with pam.
- Top enchiladas with cream sauce. Make sure to run a scraper along edges of pan to allow sauce to fully surround enchiladas.
- Top with shredded cheddar jack and bake for 30 minutes at 375 degrees.

MEXICAN BRUNCH ENCHILADAS WITH CREAMY CHEESE SAUCE
If you want a spicy cheese sauce add in some cayenne pepper. I used the small pork breakfast sausages for this but really any kind will do, with the small sausages there is no need to remove the casings just crumble as you are cooking them, you will have to remove the casings if you are using the larger sausages. This recipe is also great for a dinner! The sauce from this recipe is wonderful, so you might want to consider using the sauce recipe alone for other recipe!

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- For the cheese sauce; melt butter in a heavy-bottomed saucepan over medium-low heat.
- Add in flour; whisk constantly for about 1 minute.
- Slowly add in the half and half cream; cook over medium heat whisking for about 5 minutes or until thickened; remove from heat.
- Add in the shredded cheese and chiles; mix until the cheese is melted and smooth.
- Season with salt and pepper if desired.
- For the enchiladas; cook the sausage in a large skillet crumbling with a spoon until cooked; remove the meat to a plate and drain fat.
- Melt butter in the skillet, add in the green onions; saute for 1 minute.
- In a bowl whisk the eggs with whipping cream then season with salt and pepper; add into the skillet that has the green onions in it; cook eggs without stirring until set on the bottom, then continue to cook stirring gently until the eggs are cooked but still moist; remove from heat and gently fold in the 1-1/2 cups shredded cheddar and the cooked sausage.
- Spoon about 1/3-cup of the egg mixture down the middle of each flour tortilla; roll and place seam side down into prepared baking dish.
- Pour the prepared cheese sauce evenly over the tortillas.
- Bake covered for about 25 minutes.
- Remove from oven and sprinkle with more shredded cheddar; return to oven and bake another 8 minutes, or until the casserole is hot and the cheese has melted (you can also bake it uncovered with the cheese added on top for 30 minutes, but I find that the cheese becomes too hard).
- Delicious!
