BAKED SWEET POTATOES

Sweet potatoes are in the same family as other potatoes but cooking them requires a different approach to get the fluffy interior and sweet caramelized flavor we all love. After testing several techniques-wrapping in foil, pricking and not pricking, using a roasting pan-we found the following method delivered on all fronts, with minimal effort. Pricking with a fork allows steam to release and the potato flesh to separate from the skin, something that didn't always happen otherwise. Baking the potatoes on a wire rack nested in a baking sheet also helped the potatoes cook more evenly (and made cleaning up much easier). Lastly, allowing the potatoes to rest in the turned-off oven for 30 minutes after baking allowed the flavors to develop even further, though you can skip this step if you are short on time.

2 medium sweet potatoes (8 to 12 ounces each)
Kosher salt and freshly ground black pepper
Unsalted butter, for serving (optional)

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with foil, then set a wire rack inside the baking sheet.
  • Prick each of the sweet potatoes 5 times with a fork and place on top of the prepared rack, keeping space between potatoes to allow heat to circulate. Bake the sweet potatoes until a paring knife can easily go through without resistance, about 1 hour. Turn the oven off and let the potatoes rest inside for 30 minutes more. Remove from the oven and cut each potato in half lengthwise. Season with salt and pepper and top with butter if using.

4 cups chopped peeled sweet potato
1 sweet onions (such as Vidalia®), cut into wedges
2 cloves garlic, sliced
3 tablespoons olive oil
1 tablespoon balsamic vinegar, or more to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix sweet potatoes, sweet onion, and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into a shallow roasting pan.
  • Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes. Drizzle balsamic vinegar over the vegetables; season with salt and pepper.

Four 8-ounce sweet potatoes
Extra-virgin olive oil, for rubbing and drizzling
Kosher salt and freshly ground black pepper
Shaved Parmesan, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Wash the potatoes well and pat dry. Poke holes all around each potato using a fork.
  • Rub the potatoes all over with oil, then sprinkle liberally with salt and pepper. Place the potatoes on a baking sheet or aluminum foil and roast until tender when pierced with a fork, 40 to 45 minutes.
  • Transfer the potatoes to a plate and serve with shaved Parmesan and a drizzle of olive oil.

ROASTED SWEET POTATOES

1 tsp. coriander seeds
1/2-tsp. fennel seeds
1/2-tsp. dried oregano
1/2-tsp. dried hot red pepper flakes
1 tsp. kosher salt
2 lb. medium sweet potatoes
3 Tbs. vegetable oil

Steps:

  • Preheat oven to 425 degrees F. Coarsely grind coriander, fennel, oregano and red pepper flakes in an electric coffee or spice grinder or with a mortar and pestle. Stir together the spices and salt. Cut potatoes lengthwise into 1-inch wedges.
  • Toss the wedges with oil and spices in a large roasting pan and roast in middle of the oven for 20 minutes. Turn the wedges over with a spatula and roast until tender and slightly golden (15-20 minutes more).

Smoked sweet potatoes have a subtle smoky flavor that's delicious with a brown sugar butter drizzle. Serve at your next bbq or holiday feast.

4 sweet potatoes, cleaned
2 Tbsp. (30 g) light brown sugar
2 tsp. ground cinnamon
2 tsp. kosher salt
1 tsp. allspice
4 Tbsp. (56 g) unsalted butter
1 Tbsp. (20 g) honey

Steps:

  • Using a fork, poke a few holes in the skin of the sweet potatoes. Set them aside.
  • Preheat your smoker to a medium-low temperature (about 275°F).
  • Place the sweet potatoes into the smoker and cook for about 1 hour, or until they begin to soften inside. Wrap the sweet potatoes in aluminum foil and return to the smoker for 1 hour until completely softened. Pull the sweet potatoes off the and let cool for 2 minutes.
  • While the sweet potatoes cook, in a small bowl, stir together the brown sugar, cinnamon, salt, and allspice. Set aside.
  • Slit open the cooked sweet potatoes. Top each with 1 tablespoon (14 g) of butter, a sprinkle of the brown sugar spice mix, and a drizzle of honey. Serve immediately.

4 sweet potatoes (about 1.2kg), peeled
2 tbsp olive oil
sliced red onions, unpeeled garlic cloves, thyme sprigs or other veg or herbs of your choice (optional)

Steps:

  • Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
  • Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.

  • Stir together 1 can coconut milk, coconut sugar, and salt in a medium saucepan. Bring to a boil over medium-high; immediately reduce heat to medium-low to maintain a light simmer. Roast sweet potatoes, rotating occasionally, until completely tender, 40 minutes to 1 hour. Remove potatoes from coals, and let cool 10 to 15 minutes. Remove foil, and cut potatoes in half. Top evenly with butter and desired amount of coconut-caramel mixture.
