EASY AIR FRIED CORN RIBS
These air fried corn ribs are reminiscent of Mexican street corn, but each ear is split into quarters and then air fried. I used frozen corn on the cob which I thawed.

Steps:
- Preheat an air fryer to 400 degrees F (200 degrees C) for 7 minutes.
- Meanwhile stand corn cobs on the end, and with a sharp knife (I used a wüsthof nakiri) cut each ear down the middle. Place corn cob halves flat on a cutting board and cut in half lengthwise (you will get a total of 4 'ribs' per ear of corn).
- Spray each corn rib with non-stick spray. Sprinkle 2 tablespoons of seasoning over the 16 corn ribs.
- Air fry corn ribs in batches for a total of 12 minutes. Remove from air fryer.
- Drizzle crema con sal over corn 'ribs' and sprinkle with cotija cheese and remaining seasoning. Garnish with chopped cilantro.

AIR FRYER CORN RIBS
This is my fun take on air-fried elote ribs. Cutting the corn this way causes them to curl up in the shape of ribs once cooked. This also makes the corn a lot easier to handle and eat, not to mention a lot less messy.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Place an ear of corn on a cutting board and cut in half lengthwise. Cut each half in half lengthwise. Repeat with remaining ear of corn. You should have 8 "ribs" total.
- Whisk olive oil, chili powder, garlic powder, and black pepper together in a bowl until smooth. Brush onto both sides of each rib and place in the air fryer basket.
- Air fry for 12 minutes, flipping halfway through the cook time.
- Meanwhile whisk mayonnaise, lime juice, and hot sauce together until thoroughly combined.
- Transfer corn ribs to a serving plate. Drizzle sauce over the ribs and top with cotija cheese and cilantro.

- To make compound butter, mix the butter and cayenne. Set aside at room temperature.
- Cut the kernels from the cobs and discard the cobs. Heat a nonstick saute pan over medium-high heat and add a few teaspoons of oil. Add the corn and saute for 2 minutes. Add a few tablespoons of the compound butter, depending on spice preference, and cook for another 2 minutes. Add the cilantro, Parmesan, lime juice and a pinch of salt. Toss to coat. Serve hot.

- Wrap each ear of corn in damp paper towel. Microwave on HIGH 5 min. Remove corn from microwave. (Caution: Use oven mitts. Corn will be hot.) Remove and discard paper towels. Cool corn completely.
- Heat air fryer to 375°F. Cut corn ears crosswise in half. Stand each piece of corn, cut end down, on cutting board, then cut lengthwise in half. Cut each piece crosswise in half again.
- Place corn "riblets" in medium bowl. Add vinaigrette dressing; mix lightly. Spoon into even layer in air fryer basket sprayed with cooking spray. Cook 13 to 15 min. or until corn is tender.
- Spoon corn onto platter; spread with mayo. Sprinkle with cheese and cilantro.

- First, begin by peeling the corn, removing the husk and excess debris. Rinse and clean the corn, dry and set aside.
- Next, with a sharp butchers knife, carefully slice the corn on the cob in half. Then, slice the half into quarters creating four "ribs" per corn.

- Cut the corn to the size of your air fryer basket or rack (some might need to be cut in half). Coat the corn with melted butter and season with salt and pepper.
