HEALTHY NAPA CHICKEN SALAD

- For the tarragon yogurt dressing: Put the yogurt, mustard, honey, vinegar, celery seed and tarragon in a small bowl. Season with 1/4 teaspoon salt and about 1/8 teaspoon pepper and whisk to combine.
- For the chicken salad: Combine the chicken, grapes, almonds, celery and onion in a medium bowl. Add the dressing to the chicken mixture and toss until evenly coated.
- Serve the chicken salad on top of butter lettuce, cucumber slices, rice cakes, your favorite bread or even by itself!

This is a great salad recipe that is great for large gatherings, dish to pass and bbqs. This is so flavorful whether you use the napa or the green leaf cabbage. In Florida I have found it difficult to find a good head if any at all of red leaf lettuce so I will substitute with 2 heads of Romaine Lettuce if I have no other...

- 1. Combine dressing ingredients together in a shaker bottle and chill.
- 2. Clean and chop lettuce and cabbage, chill.
- 3. In a sautee pan, melt 5 Tbsp of butter, break Ramen noodles into the pan and add sunflower seeds and slivered almonds. Cook until golden brown and set aside to cool.
- 4. Just before serving and when mix in pan has cooled, toss together leaf mixture with seed mixture, add dressing and serve promptly. YUMMMmmmmmm!
- 5. ***Note: If you are taking the salad elsewhere other than your own kitchen and diningroom table, Be sure that you dont mix everything together until its ready to be served.
ELLEN'S EASY NAPA SALAD
This recipe has been handed down through my whole family, my mother-in-law gave it to me, she got it from her sister, who got it from another sister and so on. The last time i served it for my sister-in-laws family reunion and got raves. I had to pass it along to her family too. Everyone went back for bowl after bowl.

- Topping--melt butter in large skillet, brown sesame seeds, almonds, sunflower seeds and ramen noodles until golden brown.
- Drain on paper towels and cool.
- Dressing-- mix sugar, oil, vinegar and soy sauce in small saucepan.
- Cook over medium heat until sugar is disolved.
- Cool.
- Salad-- slice cabbage into ribbons and toss with green onions.
- To serve-- mound salad into bowl, sprinkle on desired amount of topping, and drizzle on desired amount of dressing.

ELLEN'S YUMMY PASTA SALAD
This recipe can be played with. You can use all, or just a few of the vegetables. Choice of pasta goes the same. I even tried it with tortollini and it was delicious. I just suggest that you DO NOT SUBSTITUTE ON THE DRESSING AND SALAD SEASONING. I have given out this recipe before and have to stress that since many did not use those. Using an assortment of peppers is great for the color.

- Finely shred the head of cabbage; do not chop. Combine the green onions and cabbage in a large bowl, cover and refrigerate until ready to serve.
- Preheat oven to 350 degrees F (175 degrees C).
- Make the crunchies: Melt the butter in a pot. Mix the ramen noodles, sesame seeds and almonds into the pot with the melted butter. Spoon the mixture onto a baking sheet and bake the crunchies in the preheated 350 degrees F (175 degrees C) oven, turning often to make sure they do not burn. When they are browned remove them from the oven.
- Make the dressing: In a small saucepan, heat vinegar, oil, sugar, and soy sauce. Bring the mixture to a boil, let boil for 1 minute. Remove the pan from heat and let cool.
- Combine dressing, crunchies, and cabbage immediately before serving. Serve right away or the crunchies will get soggy.

- Put the garlic in a large salad bowl and mix in all the remaining ingredients except the cabbage.
- Trim the cabbage, removing and discarding damaged or wilted leaves, and cut the head crosswise into 1-inch slices. You should have about 8 cups. Wash well and spin dry in a salad dryer (moisture would dilute the dressing). Ten or 15 minutes before serving, add the cabbage to the dressing, toss well and set aside, so the dressing can penetrate the cabbage and soften it slightly.
