CROCKPOT ELK STEW
This crockpot elk stew is chunks of tender meat simmered in broth, with lots of vegetables and herbs. Hearty and healthy meal for the chilly fall months.

Steps:
- Heat olive oil in large skillet over med-high heat. When oil is hot, add meat.
- Let meat brown well, stir every 2-3 min. Let meat fry for 7-8 minutes. Place meat in crockpot.
- Place skillet back over heat, and add broth. Stir and scrape the browned bits, and bring the broth to a boil. When it boils, remove from heat and pour broth into the crockpot with the meat.
- Add onions, garlic, tomatoes, spices and bay leaves to crockpot. Cover and cook on high for 2 hours.
- After meat has cooked for two hours, add potatoes, jalapeño, carrots, bell pepper, green beans, and water. Continue cooking on high for 3 more hours.
- Stir and serve.

CROCK POT ELK ROAST RECIPE - (3.7/5)

- Coat a large skillet with nonstick spray and bring to high heat. Season roast with 1/4 teaspoon each salt and pepper. Cook and rotate until all sides are browned, about 5 minutes. Place in a slow cooker. Add all remaining ingredients except cornstarch, including 3/4 teaspoon each salt and pepper. Gently stir. Cook on high for 3 to 4 hours or on low for 7 to 8 hours, until roast is cooked through. Turn off slow cooker. In a small bowl, dissolve cornstarch in 2 tablespoons cold water. Stir cornstarch mixture into liquid in slow cooker. Let sit, uncovered, until slightly thickened, about 5 minutes. Discard thyme. Slice meat and top with veggies and sauce.

- 1. Rinse steaks well. Trim and cut into pieces. Heat oil and slightly saute steaks.
- 2. Place steaks, celery, garlic, and onions to crock pot. Mix water with vingar to make about 1 cup liquid. Pour over meat and vegetables. Cook on low about 4 hours.
- 3. Mix water and wine and add to pot, along with peppers and mushrooms. Grate some orange zest (about 2-3 tablespoons)into pot. Stir slightly. Cook about another hour or two, until meat is tender and falls apart.
- 4. Serve with rice, noodles, or just crusty bread and a salad.

- Cut elk steak in serving pieces.
- Sprinkle lightly with flour.
- Fry in hot butter, browning both sides.
- Put in a baking pan.
- Brown onions and mushrooms in same pan as the steak.
- Add to steak in baking pan.
- Combine remaining ingredients and pour over the steak.
- Cover and bake at 350F degrees for 1 1/2 hours.
GRILLED ELK STEAKS
My husband brought home a freezers worth of elk meat from a hunt in Montana. I am a firm believer in eating whatever is brought home from a hunt. I really love elk meat! It has a mild flavor and is a good source of lean protein. If marinated, even the "tougher" cuts come out great. I recommend cooking to medium/medium rare for ideal tenderness, but I have had it cooked well done and it is still tasty. My husband remembers the smell of the field dressing the elk in full rut, so I came up with the recipe to "help" him enjoy elk as much as I do.

- Using a fork or other tenderizing tool, puncture both sides of the elk steaks.
- Place elk steaks in a pan or dish.
- Sprinkle Italian dressing over the steaks. Turn to coat the opposite side of the steaks. (I use Good Seasons Italian Dressing that I make using red wine vinegar.)
- Sprinkle McCormick's Brand Montreal steak seasoning to coat one side of the steaks. (You could sprinkle seasoning over both sides, but if you use too much seasoning, you'll overpower the taste of the meat.).
- Cover the steaks with foil and place in the fridge.
- *Marinate at least an hour, overnight if possible.
- Grill steaks over medium heat approximately 5-6 minutes on each side depending on the thickness of the steaks and the desired doneness.
- Serve with mushrooms. Enjoy!
- *Prep time does not include marinating time.
