FIRE AND RICE
Rice....with a kick!! This is really, really good. The "kick" in it is determined by if you use 1 or 2 jalapenos. If you like a little kick-in-the butt, you'll love this flavorful rice! I don't know where this origional recipe comes from. I've had it for 20 years plus!

Steps:
- Heat oil in large skillet until hot.
- Add onions, cilantro, garlic and pepper.
- Cook and stir 5 to 7 minutes or until onion is tender.
- Add rice and stir until blended.
- Cook 3 minutes sor until thoroughly heated.

KICK-ASS DIRTY RICE

Steps:
- 1. Cook your rice. The right way. See my cooking rice tutorial.
- 2. Dice your bell peppers, onion, and celery. Drizzle a few tablespoons of olive oil in the pan, or if you are feeling frisky - 2 tablespoons bacon grease - and cook those veggies till they are carmelized.
- 3. Crumble that raw ground beef (I use very lean) in with those veggies and them till browned together.
- In the meantime, toss those chicken livers in a pan and brown them. Then, put them through the food processor to make a pate of sorts.
- Now, combine the ground beef mixture with the chicken liver pate.
- Gently fold the cooked rice into this mixture.
- Add the cayenne, Parsley, Crystal, garlic powder, salt and pepper, and mix. Start with the smaller amounts of cayenne, salt, pepper, and Crystal, and add more if you want it.
- SERVE AND SMILE - you made some KICK-ASS DIRTY RICE!
ELIZABETH'S RICE WITH A KICK!
I wanted to have a light dinner "just rice" and maybe a tomato, instead I came up with this great concoction. Just a few ingredients and barely any prep time. Goes well with grilled chicken and warm flour tortillas. I hope you enjoy it as much as I do

Steps:
- In a small pot add 2 cups water, rice, margarine, salt, pepper, embasa salsa, and 1 cube tomato/chicken bouillion.
- Bring to a boil.
- Reduce heat to low.
- Cover with lid.
- Let cook for 20 minutes without lifting lid.
- Add 1/2 cup of sour cream and enjoy!

- In a small dish, mix together the salt, garlic powder, paprika, black pepper, minced onion, oregano, ¼ teaspoon of the cayenne, the crushed red pepper, the lemon juice and 2 teaspoons of the olive oil to form a paste. Rub the paste over the surface of the chicken breasts on all sides. Set aside.
- In a dutch oven, bring 1 ½ teaspoons of oil over med-high heat. Once hot, add the sliced sausage and cook, stirring/flipping occasionally, until browned (about 5 minutes). Remove the sausage to a side plate.
- Add another 1 ½ teaspoons olive oil to the pot and allow them to come to temperature (should happen quickly). Add the chicken breasts in a single layer and sear on one side for 2-3 minutes. Flip the breasts and sear on the other side for another 2 minutes. Remove the chicken from the pot to the plate with the sausage.
