PALMIERS COOKIES (ELEPHANT EARS)



Palmiers Cookies (Elephant Ears) image

This easy palmiers recipe uses store-bought puff pastry and sugar! That's it! two ingredients and you have some classic French cookies that are sure to impress.

Number Of Ingredients 2

2 sheets all-butter puff pastry ((520 grams))
1 cup sugar ((you won't use all of it))

Steps:

  • If frozen, thaw puff pastry in the fridge overnight or on the counter for about 30 minutes.
  • Sprinkle a cool, flat surface with sugar. Gently open up the sheet of puff pastry and lay flat on top of the layer of sugar. Sprinkle sugar evenly all over the sheet of puff pastry.
  • Fold the long sides of the pastry in 1/4 of the way, then sprinkle with more sugar.
  • Fold the long sides toward each other again so they meet in the middle, and sprinkle with more sugar.
  • Using a rolling pin, gently roll down the sheet of puff pastry to deepen the creases so the rectangle will hold the shape. You don't want it unfolding again!
  • Fold the rectangle in half one more time, and gently roll down the strip of dough so that it is pressed together and holds its shape. Again, you do not want to make the dough thinner, you are just ensuring it stays folded. Place in the fridge for 30 minutes to chill on a parchment lined baking sheet.
  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Remove the dough from the fridge and slice into 1/4 inch pieces. Place the slices on a parchment-lined baking sheet cut-side down, so you can see all the little folds in the dough. Make sure the folds stay tightly together. Allow plenty of space between each one, as the dough will expand on both sides as they bake.
  • Place them in the oven and begin checking them after about 5 minutes. Cook time could be anywhere between 5 - 15 minutes depending on how big your palmiers are. Once the palmiers are caramelized on the bottom, carefully flip each one over with an offset spatula and return to the oven for 5 more minutes.
  • Remove palmiers from the oven and allow them to cool on a wire rack. Again, transfer them with an offset spatula and take care not to burn your fingers.

1 1/4 cups milk
1/4-1/2 cup cup butter
1 package active dry yeast
3/4 cup granulated sugar
1/4 cup water (105 to 115 degrees F.)
5 1/2-6 1/2 cups all-purpose flour
1 teaspoon salt
1 dash freshly grated nutmeg
3 large eggs, lightly beaten
vegetable oil (for frying)
confectioners' sugar or cinnamon sugar

Steps:

  • Heat milk with butter until butter melts.
  • Set aside to cool to lukewarm.
  • Stir yeast and 1 teaspoon sugar into warm water and let stand until foamy, about 5 to 10 minutes.
  • In a large bowl, combine milk and yeast mixtures with 2 1/2 cups flour, salt, and nutmeg.
  • Stir until smooth.
  • Cover and let stand until bubbly, 30 minutes.
  • Stir in beaten eggs, then add additional flour to make a soft but not sticky dough.
  • Turn dough onto a floured board and knead until smooth, supple, and elastic, about 8 minutes.
  • Return dough to bowl, cover, and let rise in a warm spot until dough is doubled, about 1 1/2 hours.
  • Punch down and divide into 4 pieces.
  • Divide each piece into 4 or 5 pieces.
  • Put several inches of oil in a large, deep pan such as a chicken fryer or heavy dutch oven.
  • Heat to about 360 degrees F.
  • Work each ball of dough with the hands, shaping into a large disk, about 10 inches long and 6 inches wide.
  • Fry one at a time, turning once, until nicely browned.
  • Drain on paper towels and sprinkle with confectioner's sugar or cinnamon sugar while hot.
  • Serve at once.

1 cup pecan halves
1/3 cup granulated sugar, plus more for surface
1/4 cup plus 2 tablespoons light-brown sugar
1 3/4 teaspoons cinnamon
1/2 teaspoon salt
All-purpose flour, for rolling
2 sheets frozen puff pastry (from one 17.3-ounce package), thawed
1 large egg, beaten well

Steps:

  • Preheat oven to 350 degrees. Toast pecans on a baking sheet until fragrant and lightly toasted, 8 to 10 minutes. Let cool completely.
  • Grind pecans, sugars, cinnamon, and salt in a food processor until very finely chopped (mixture should resemble very coarse sand).
  • Raise oven temperature to 400 degrees. Place puff pastry sheets side by side on floured parchment; press together at seam to form a 9 1/2-by-18-inch rectangle. Roll out to an 11-by-20-inch rectangle using a rolling pin. Transfer pastry on parchment to a baking sheet. Cover loosely with plastic wrap; refrigerate until firm, about 45 minutes. Brush generously with beaten egg, and evenly sprinkle with pecan mixture, patting it into dough. Starting with a short side, use one hand to roll up as tightly as possible, holding unrolled portion firmly with other palm. Brush off excess flour with a dry pastry brush as you are rolling, and press sides back into shape (they tend to splay). Roll tightly in parchment.
  • Freeze dough until firm, about 20 minutes. Cut crosswise into 1-inch slices. Generously sprinkle a work surface with granulated sugar, and coat both cut sides of dough slices in sugar. Press dough slices to flatten slightly. Roll out into 6- to 7-inch rounds on sugared surface, sprinkling more sugar on top as needed. Place on parchment-lined baking sheets, 3 per sheet; refrigerate until firm, about 30 minutes. Bake in batches until golden brown, 17 to 18 minutes, rotating halfway through. Let cool on baking sheets.

1 teaspoon salt
2 tablespoons white sugar
⅜ cup shortening
2 tablespoons active dry yeast
4 cups all-purpose flour
1 quart oil for frying
3 tablespoons ground cinnamon
6 tablespoons white sugar

Steps:

  • In small saucepan over medium heat, combine milk, salt, 2 tablespoons sugar and shortening. Heat until shortening melts and sugar dissolves. Remove from heat and let cool to lukewarm, 110 degrees F (43 degrees C). Sprinkle in yeast and let sit until foamy.
  • Transfer mixture to large bowl, and stir in flour to make a dough. Knead until smooth, cover and let rise 30 minutes.
  • In a large heavy skillet or deep fryer, heat 1 inch of oil to 375 degrees F (190 degrees C).
  • Roll out 1 to 2 inch balls of dough into thin sheets. Fry sheets 1 to 2 minutes on a side, until puffed and golden. Drain on paper towels.
  • Combine cinnamon and 6 tablespoons sugar. Sprinkle over warm pastries. Serve.

1 cup sugar, divided
Pinch kosher salt
1/4 teaspoon cinnamon
1 sheet puff pastry, defrosted (recommended: Pepperidge Farm)

Steps:

  • Preheat the oven to 450 degrees.
  • Combine 1/2 cup of the sugar and kosher salt and pour it over a flat surface such as a wooden board or marble slab. Unfold the sheet of puff pastry onto the sugar mixture.
  • Combine 1/2 cup of the sugar and the cinnamon and spread it evenly on the puff pastry. This is not about sprinkling, it's about an even covering of sugar. With a rolling pin, lightly roll the dough until it's a 13-inch square and the sugar is pressed into the puff pastry on top and bottom. Fold the sides of the square toward the center so they go halfway to the middle. Fold them again so the two folds meet exactly at the middle of the dough. Then fold one half over the other half as though closing a book. You will have 6 layers. Slice the dough into 3/8-inch slices and place the slices, cut side up, on baking sheets lined with parchment paper.
  • Bake the cookies for 6 minutes, or until caramelized and brown on the bottom, then turn with a spatula and bake for another 3 to 5 minutes, until caramelized on the other side. Transfer to a baking rack to cool.

  • Preheat the oven to 400 degrees F.
  • Unfold the pastry sheet on a clean work surface. Sprinkle with 2 tablespoons of the cinnamon sugar. Starting at each long side, fold the pastry toward the center, leaving a 1/4-inch space in the middle. Sprinkle with the remaining 1 tablespoon cinnamon sugar. 1 cup warm milk (110° to 115°)

3 tablespoons shortening
4 to 4-1/2 cups all-purpose flour
Oil for deep-fat frying
GLAZE:
1/2 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Dissolve yeast in water. Add milk, sugar, salt, shortening and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , On a floured surface, knead until smooth and elastic, 6-8 minutes. Place in a greased bowl; turn once to grease top. My significant other bought me some new kitchen gadgets and a Wolfgang Puck food processor was one of them - was playing around making scalloped potatoes and one of the potatoes got a little thin cut - and then came the idea homemade potato chips! Enjoy.

6 potatoes (choose ones that are approximately 1 to 1 1/2 inches in diameter)
6 cups canola oil (or peanut oil, to fill 1/2 of a 5 quart pot)
2 tablespoons kosher salt (or as desired)

Steps:

  • If you have a food processor set your slicing blade to 1/4" this seemed to be the best slice size, or of course you could use the mandolin, slice your potatoes skins on (well scrubbed of course).
  • Immediately submerge in a large bowl of water that contains 4 cups of ice and 2 cups of cold water. Allow the potatoes to rest in the cold water for 20 minutes.
  • On a large towel place each potato slice on the towel and blot dry.
  • Heat your oil to fry temp just over 320°F and under 370°F gives the best results. Being careful not to over crowd the pot place 6-8 potatoes into the oil and cook to golden brown flipping as you go.
  • With a slotted spoon or a spider remove your chips from the oil and place on paper towels to drain any excess oils.
  • Sprinkle with salt - or be adventurous and add anything you think you might like as a flavor.
