COUNTRY BREAKFAST PIE
A friend gave me this recipe I use to fix it often when our church met for Tue and Thur morning breakfasts. Of course I normally had to make a couple of them.

Steps:
- Preheat oven to 375°F.
- Place crust on baking sheet.
- Sprinkle sausage around bottom of crust.
- Top with potatoes, onions, bell peppers and cheese.
- Beat eggs, milk, salt and pepper until blended; pour over sausage-potato mixture in crust.
- Bake 30 minutes or until egg mixture is cooked and crust is lightly browned.
- Sprinkle with additional cheese and peppers, if desired.
- Makes 6 servings.

ELAINE'S BREAKFAST PIE
This is the easiest tastiest breakfast pie!! I love how the crust forms while baking. You can obviously add any other veggies, like a can of mushrooms or chopped bell peppers. Ham or Sausage may be substituted for bacon. Mmm good.

Steps:
- Heat oven to 400 degrees.
- Sprinkle cooked bacon, cheese, onion and any other veggies on the bottom of a greased 10 inch pie plate.
- Mix remaining ingredients until smooth and pour over bacon mixture.
- Bake 35 to 40 minutes until a toothpick comes out clean.

ELAINE'S CHEESE PIE ROYALE
My dear MIL always made this cheese cake for special occasions. According to my FIL, when they were dating (1955), she took him out to see her home town, Chicago, and they stopped for cheese cake at the Marshall Fields on State Street. He enjoyed it immensely, she won his heart, and they were married. When Marshall Fields stopped baking their cheese cake she searched until she found a recipe that came close. This is the result, and it is a family tradition. We call it "The Way-to-a-Texas-Boy's-Heart Cheese Cake." (Cooking time includes chill time).

Steps:
- Have all engredients at room temperature.
- Preheat oven to 375°F.
- Crust:.
- Make graham crackers into crumbs by placing ia plastic bag and crushing with a rolling pin or in a food processor.
- Combine cracker crumbs, melted butter and 2 Tablespoons sugar.
- Press into a 9-inch springform pan.
- Filling:.
- In a mixing bowl, beat eggs thoroughly.
- Gradually add 1/2 cup sugar.
- Add cream cheese a little at a time, beating between each addition until smooth.
- Add 1/2 teaspoon vanilla.
- Pour filling into crust.
- Sprinkle lightly with cinnamon.
- Bake for 20 minutes.
- Cool.
- Topping:.
- Increase oven temperature to 400°F.
- Combine sour cream, 2 Tablespoons sugar and 1/2 teaspoon vanilla.
- Spread topping over baked filling.
- Bake for 5 minutes.
- Place in refrigerator to cool.
- Enjoy!
- Refrigerate any leftovers.

- Heat oven to 400 degrees and grease a 10 inch pie plate.
- Cook sausage and onion until sausage is fully cooked; drain.
- Mix sausage, potatoes and 1 cup cheddar cheese in pie plate.
- Combine remaining ingredients except the 1/4 cup cheese and pour into pie plate with the sausage and potato mixture.
- Bake about 40 minutes or until knife inserted in center comes out clean.

BREAKFAST PIE
A recipe that came in an email from Taste of Home. Sounds like something I would love, so posting here for safe keeping. You can make the pie the night before to make for a easy morning meal. Update 6/23/2013: After having another chef try this recipe with bad results, I quickly got the ingredients to try it myself (and then make any corrections), which is why I posted it anyways!! Since it was only myself eating this time, I scaled it back for 2-3 servings and did use the shredded hashbrowns as did the previous reviewer, and it worked out perfectly. I only had mine in the refrigerator for a few hours, before baking it for my lunch. I really loved the crunchy topping from the cornflakes and bacon bits on top and next time might increase the amount of cornflakes, so good and really enjoyed the contrast of textures. After the crunchy topping you cut into a creamy tasty inside. I am leaving the recipe as I originally posted as it worked out wonderfully for me.

Steps:
- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels. Drain, reserving 2 teaspoons drippings. Stir reserved drippings into cornflakes; set aside.
- In a large bowl, combine the eggs, milk, cottage cheese, cheddar cheese, onion, salt and pepper until blended. Stir in hash browns. Pour into a greased 9-in. pie plate. Sprinkle with bacon and cornflake mixture. Cover and refrigerate overnight.
- Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 325° for 45-50 minutes or until a knife inserted near the center comes out clean. Let stand for 5-10 minutes before cutting.
