BAKED EGGPLANT WITH PORTABELLAS AND TOMATO SAUCE (VEGETARIAN)



Baked Eggplant With Portabellas and Tomato Sauce (Vegetarian) image

The amount listed will serve about 3-4 people although my DH and DS could eat this dish by themselves lol! you can double this recipe if desired, white button mushrooms can be replace for the portabellos. This dish will have you clammering for more, and it tastes even better the following day, but I doubt if there will be any leftovers lol! Use as much portabello mushrooms or button mushooms and cheeses as desired for this recipe, I don't bother measuring. This can be served as a side dish or a main dish, it's a pretty filling dish especially if you use portabello mushrooms!

1 large eggplant (peeled and sliced into 1/4-inch slices)
2 -4 tablespoons olive oil
salt and black pepper
2 onions, chopped
2 -3 tablespoons fresh minced garlic (or to taste)
2 teaspoons italian seasoning (or to taste)
2 -4 teaspoons dried chili pepper flakes
portabella mushroom, coarsley chopped (or use white mushrooms, sliced)
2 (8 ounce) cans tomato sauce (can use less tomato sauce if desired, Hunt's is the best for this!)
3 cups mozzarella cheese, divided (or to taste)
1/3 cup grated parmesan cheese (or to taste)

Steps:

  • Grease a 2-3-quart oval baking dish (I use my Le Creuset cookware for this recipe!).
  • Set oven to broiler heat.
  • Grease a large baking sheet.
  • Brush each side of eggplant slices with olive oil, then season lightly with salt and black pepper.
  • Arrange the eggplant slices on the baking sheet; broil for 3 minutes on each side, or until lightly browned.
  • In a large skillet heat 2-4 tablespoons olive oil over medium heat; add in onion, garlic, Italian seasoning, chili flakes (if using) and mushrooms; saute for about 7-8 minutes, or until the liquid from the mushrooms evaporates, season the mixture with salt and pepper.
  • Spread HALF the mushroom mixture on the bottom of the dish.
  • Arrange HALF the eggplant slices over the mushroom mixture.
  • Top with HALF of the tomato sauce and about 1-1/2 cups of the mozza cheese.
  • Spread the remaining mushroom mixture over the mozza cheese; top with remaining eggplant slices, then top with remaining tomato sauce.
  • Cover and bake in a 375 degree oven for about 1 hour.
  • Remove then sprinkle with about 1/3 cup Parmesan cheese and about 1-1/2 cups mozza cheese.
  • Return to oven uncovered for another 5-6 minutes or until the cheese melts.
  • Let stand about 10-15 minutes before serving.
  • Delicious!

Roasted eggplant slices, layered with a delicious cheese mixture with spinach and fresh herb, and of course a little red pasta sauce. This hearty vegetarian eggplant lasagna can stand alone as dinner (2 pieces per person) along with your favorite salad!

2 to 3 eggplants (about 1 ½ pounds), (sliced lengthwise into ½-inch thick slices (about 12 slices))
Extra virgin olive oil
Kosher salt
1 large egg
1 15-oz tub part-skim ricotta cheese
1 ½ cup park-skim mozzarella cheese (divided)
½ cup grated Parmesan cheese (divided)
3 garlic cloves (minced)
1 teaspoon dried oregano
10 oz frozen spinach, (thawed and fully dried (wring out all the water))
1 cup packed chopped fresh parsley
½ cup packed chopped fresh basil (⅔ ounce)
Black pepper to your liking
2 cups prepared pasta sauce of choice

Steps:

  • Season the eggplant slices on both sides with kosher salt and set aside for 20 to 30 minutes (if you don't have the time, this step can be optional).
  • Meanwhile, preheat the oven to 400 degrees F and position a rack in the middle.
  • Wipe the eggplant slices very well with a paper towel (you want to dry it well and remove any excess salt), then arrange on lightly oiled baking sheet (or two if needed). Brush the top of the eggplant with extra virgin olive oil. Roast in the heated oven until the eggplant softens and becomes pliable (about 15 to 20 minutes or so).
  • While the eggplant is roasting, prepare the ricotta filling. In a mixing bowl, beat the egg. Add the ricotta, 1 cup mozzarella, ¼ Parmesan, garlic, oregano, spinach and chopped herbs. Add a small pinch of kosher salt and black pepper to your liking. Mix well to combine.
  • Remove the eggplant from the oven. Lower the heat to 375 degrees F.
  • Prepare a 9 x 13-inch baking dish. Pour a bit of the pasta sauce (about ½ cup or so) and spread it out into one layer. Lay a few eggplant slices (anywhere from 4 to 6 and it's fine if they overlap a bit). Spread 1/2 of the ricotta filling, then spread a thin layer of the sauce. Repeat the process in the same pattern. Spread the final layer of sauce and follow with the remaining ½ cup mozzarella cheese and ¼ cup of Parmesan.
  • Cover the dish tightly with foil. Bake in the heated oven for 15 to 20 minutes, then carefully uncover and return to the oven. Bake for another 10 to 20 minutes or until the cheese has melted and the edges of the lasagna turn a nice golden brown.
  • Let the lasagna rest for 10 minutes before cutting and serving.

1 large eggplant, (cut into 1/4 inch thick slices (lengthwise or into round slices))
2-3 large zucchinis, (cut into 1/4 inch thick slices (lengthwise or into round slices))
32 oz tomato sauce (about 2 cups)
8 oz mozzarella cheese ()
2/3 cup parmesan cheese
1/4 cup fresh basil, (chopped)
1-2 tablespoons fresh oregano, (chopped)
1-2 teaspoons olive oil

Steps:

  • Preheat oven to 425F.
  • Cut zucchini and eggplant: remove the stems, and slice vegetables into 1/4 inch thick pieces - either length-wise into sheets or cut into round pieces. Note: carefully use a mandoline slicer if cutting lengthwise, or cut by hand with a knife if slicing into round pieces.
  • Roast the vegetables: brush two sheet pans with oil, then arrange vegetable pieces on pans and bake for 20 minutes.
  • Layer lasagna: when eggplant and zucchini are cooked, layer in lasagna. Spread a thin layer of sauce on the bottom of the baking dish, arrange one layer of eggplant slices, one layer of zucchini, then sprinkle with fresh chopped herbs, and top with mozzarella and parmesan cheese. Repeat layers until ingredients are used up.
  • How to layer the top: when you get to the final layer, instead of doing cheese after the vegetables, layer with sauce first, then sprinkle the cheese.
  • Bake: then bake at 425F uncovered for 20 minutes, cheese should be melted and browned. Top with fresh herbs and serve right away!

4 large portobello mushrooms
1/2 cup extra virgin olive oil, plus additional for coating pan
sea salt
freshly ground black pepper
1 large zucchini, sliced 1/4 inch thick
2 small eggplants
1/4 lb provolone cheese, thinly sliced
1 bell pepper, quartered (roasted red or yellow)
1 lb mozzarella cheese, thinly sliced

Steps:

  • Preheat the oven to 450°F
  • Clean the mushrooms.
  • Lightly coat a 13 x 9 x 2-inch baking pan with olive oil.
  • Place the mushrooms, cap side down, in the pan and bake for 10 to 14 minutes, or until the mushrooms are tender.
  • Sprinkle with salt and pepper and reserve.
  • Don't turn off the oven or clean the pan.
  • Heat 1 to 2 tbs of olive oil in a large nonstick skillet over medium heat.
  • Add the zucchini slices and saute, turning once, until lightly browned, about 5 minutes.
  • Remove with a slotted spoon, sprinkle with salt and pepper, and reserve.
  • Remove the stems from the eggplants; halve each lengthwise, and then cut into 1/4 inch crescent slices.
  • Adding more olive oil if necessary and keeping the skillet hot at all times, add the eggplant and saute, turning once, until lightly browned on both sides, about 5 minutes.
  • Remove with a slotted spoon, sprinkle with salt and pepper, and reserve.
  • Oil the baking dish again, if necessary, and add the mushrooms, create the layers by topping each mushroom with the zucchini, eggplant, provolone, red pepper, and mozzarella on top.
  • Bake the Portobello caps for 6 to 8 minutes, or until the cheese has melted and ingredients are heated through.
  • Allow to rest for 5 minutes, before serving. Serves 3-4.

1 1/2 lbs zucchini, cut into 1/2 inch pieces
1 1/2 lbs eggplants, cut into 1/2 inch pieces
5 tablespoons extra virgin olive oil
9 garlic cloves, minced
salt
pepper
1 onion, chopped fine
1 (28 ounce) can crushed tomatoes
1 (28 ounce) can diced tomatoes
2 tablespoons chopped fresh basil
12 no-boil lasagna noodles
8 ounces mozzarella cheese, shredded (2 cups)
3 ounces parmesan cheese, grated (1 1/2 cups)
4 ounces mozzarella cheese, shredded (1 cup)
1 ounce parmesan cheese, grated (1/2 cup)

Steps:

  • Grease two rimmed baking sheets. Adjust oven racks to lower middle and upper middle positions and heat oven to 400 deg F.
  • Toss zucchini and eggplant with 3 tbl olive oil two-thirds of garlic, 1 tsp salt and 1 tsp pepper.
  • Spread on baking sheets and bake, stirring occasionally, until softened and golden brown, 35-45 minutes; set aside to cool.
  • Meanwhile, heat remaining 1 tbl oil in large saucepan over medium heat until shimmering. Add onion and cook until softened, about 5 minutes.
  • Stir in remaining garlic and cook until fragrant, about 30 seconds.
  • Stir in crushed tomatoes and diced tomatoes with their juice, bring to simmer and cook until flavors blend, about 5 minutes.
  • Remove from heat and stir in basil and salt and pepper, to taste. Let cool to room temperature, about 45 minutes. You should have about 7 cups of sauce - add water, if necessary, to reach cups.
  • Spread 1 cup cooled sauce on bottom of a 9x13 baking dish.
  • Lay 3 noodles in dish, spread one-waurter of cooled vegetables over noodels, and top with 1 cup sauce.
  • Sprinkle 2/3 cup mozzarella and 1/2 cup Parmesan over sauce.
  • Repeat layering of noodles, veggies, sauce and cheeses two more times.
  • Lay remaining 3 noodles in dish and top with remaining vegetable and 1 cup sauce. Transfer remaining 2 cups sauce to storage container.
  • Wrap dish tightly with plastic wrap and refrigerate lasagna, and the remaining sauce, for at least 8 hours and up to 24 hours.
  • Adjust oven rack to middle position and heat oven to 400 deg F. Unwarp dish and spread reserved sauce over top.
  • Cover dish tightly with greased aluminum foil and bake lasagna until hot throughtou and bubbling around eges, about 45 minutes.
  • Remove foil, sprinkle with remaining mozarella and Parmesan an bake, uncovered, until cheese is melted and begins to brown, about 10 minutes.
  • Let cool ten minutes, and serve.

1 lb zucchini, ends removed and sliced lengthwise into wide, flat strips
1 large portabella mushroom, sliced into strips
1 large eggplant, ends removed and sliced lengthwise into wide, flat strips
15 ounces frozen chopped spinach, thawed, thoroughly drained and patted dry
16 ounces canned tomato sauce
2 garlic cloves, chopped fine
1 egg white
1 cup fat-free ricotta cheese
1/2 cup shredded fat free mozzarella cheese
1 tablespoon reduced-fat parmesan cheese
1 tablespoon chopped basil
1/4 teaspoon salt
1 pinch nutmeg

Steps:

  • Preheat oven to 425 degrees.
  • Set out a row of several paper towels (as you cook the veggies, transfer them to the paper towels to drain excess moisture). Spritz a large pan evenly with nonstick spray, and bring to high heat.
  • Once hot, lay as many zucchini and mushroom slices as you can fit flat in the pan, and cook for about 2 minutes per side. Continue until all slices are cooked, removing the pan from heat and re-spraying it between batches.
  • Cook eggplant slices for about 3 minutes per side, continuing to work in batches (removing and re-spraying pan each time).
  • Next, in a large bowl, mix the spinach, egg white, ricotta cheese, basil, salt and nutmeg. Stir well and set aside.
  • Spray a deep 8" X 8" pan with nonstick spray. Pour half (8 oz.) of the tomato sauce into the bottom of the pan. Sprinkle with one clove chopped garlic.
  • Then, layer half of the veggie slices on top in assorted order. Spread half of the spinach mixture on top.
  • Layer with remaining veggies, and then spread the rest of the spinach mixture on top. Cover with the remaining tomato sauce and the rest of the chopped garlic.
  • Then, evenly top the lasagna with the mozzarella and grated cheese. Finally, bake uncovered for 30 minutes (or until the cheese on top starts to brown).
  • Let cool, cut into 4 pieces, and dig in!
