1 lb ground lean lamb
1 medium yellow onion, peeled and chopped
2 garlic cloves, crushed
4 tablespoons olive oil
salt and pepper, to taste
1/2 cup tomato sauce, canned
1/4 cup red wine
1/2 teaspoon cinnamon
1/2 teaspoon allspice
3 tablespoons pine nuts (you might want to add more for personal taste)
1 large eggplant

Steps:

  • Brown the lamb, onion and garlic in the oil, in a large skillet over medium-high heat. Once the meat is browned, add the salt, pepper, tomato sauce, red wine, cinnamon, allspice and pine nuts. Cook for about 15 minutes while the sauce reduces a little.
  • Cut the eggplant into 1/2 inch slices. Lightly brown them in a separate skillet with just a touch of olive oil. Turn and brown the other sides. Do not overcook, just brown them.
  • Place the eggplant slices on a baking sheet and spread some of the filling on each.
  • Bake in a 375 degree F. oven for about 15-20 minutes, or until it is all hot and the eggplant is tender.

2 large firm eggplants, cut into 1/2-inch slices
4 tablespoons extra-virgin olive oil
2 teaspoons kosher salt, more as needed
1 medium yellow onion, finely diced
2 garlic cloves, minced
1 pound ground lamb or beef (80 percent lean)
1/2 teaspoon ground cinnamon
Black pepper
1/2 tablespoon unsalted butter
1/2 cup pine nuts
1 (28-ounce) can tomato sauce, or 31/2 cups homemade sauce (see recipe)
12 ounces fresh mozzarella, sliced

Steps:

  • Step 1Heat broiler and line a baking sheet with foil or parchment. Step 2Brush both sides of eggplant slices with 2 tablespoons olive oil and sprinkle with 1 teaspoon salt. Arrange slices on prepared baking sheet and broil in batches until they are deep mahogany brown, turning once halfway through, 5 to 7 minutes per side. Step 3Adjust the oven to 375 degrees with rack positioned in the center. Step 4In a large skillet, heat 1 tablespoon of the remaining olive oil over medium heat. Add onion and sauté until translucent, but not browned, stirring occasionally, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Add ground lamb or beef, stirring frequently and breaking up meat into very small pieces with the side of a metal spoon. Season with remaining teaspoon salt, cinnamon and pepper. Sauté until meat is just cooked through. Taste and add more salt or pepper, or both, as needed. Step 5In a medium skillet, melt butter over medium heat. Add pine nuts and reduce heat to medium-low. Stir nuts to coat them with butter and continue stirring constantly until nuts are golden brown, 2 to 4 minutes. Keep a close watch over the nuts; they can burn quickly once they begin to brown. Transfer nuts to a bowl while still warm and salt Step 6Coat a 13-by-9-by-2-inch baking dish with remaining 1 tablespoon of olive oil. Spread 1/2 cup of tomato sauce in the bottom of the dish. Lay 1/3 of the eggplant slices in a single layer over the sauce, covering as much surface area of the bottom of the dish as possible. Spoon half the meat evenly over eggplant. Pour 1/3 of the remaining tomato sauce evenly over meat. Sprinkle with 1/3 of the pine nuts. Layer again with eggplant, meat, tomato sauce and pine nuts. Finish with a layer of eggplant and cover with more tomato sauce, sprinkling top with pine nuts. Step 7Pour 1 cup warm water around the perimeter of the baking dish. (Sauce will thicken as it bakes.) Cover pan with foil and bake for 90 minutes. Remove foil and top eggplant evenly with mozzarella. Bake for 15 minutes longer, uncovered, or until the cheese is bubbling and golden. Serve eggplant warm, over rice.

In his and his partner Sami Tamimi's new book Jerusalem: A Cookbook, there are copious recipes for eggplant-stuffed, puréed, roasted, baked, and everything in between. In their Stuffed Eggplant with Lamb and Pine Nuts, they fill the silky, humble nightshade with a warmly spiced blend of gamey ground lamb, sweet onions, and a smattering of pine nuts.

4 medium eggplants (about 2 pounds/1.2 kg), halved lengthwise
6 tablespoons/90 ml olive oil
1 teaspoon ground cumin
1 tablespoon sweet paprika
1 tablespoon ground cinnamon
2 medium onions (12 ounces/340 grams in total), finely chopped
1 pound/500 grams ground lamb
7 tablespoons/50 grams pine nuts
2/3 ounces/20 grams flat-leaf parsley, chopped
2 teaspoons tomato paste
3 teaspoons superfine sugar
2/3 cup/150 ml water
1 tablespoon freshly squeezed lemon juice
1 teaspoon tamarind paste
4 cinnamon sticks
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425°F/220°C. Place the eggplant halves, skin side down, in a roasting pan large enough to accommodate them snugly. Brush the flesh with 4 tablespoons of the olive oil and season with 1 teaspoon salt and plenty of black pepper. Roast for about 20 minutes, until golden brown. Remove from the oven and allow to cool slightly.
  • While the eggplants are cooking, you can start making the stuffing by heating the remaining 2 tablespoons olive oil in a large frying pan. Mix together the cumin, paprika, and ground cinnamon and add half of this spice mix to the pan, along with the onions. Cook over medium-high heat for about 8 minutes, stirring often, before adding the lamb, pine nuts, parsley, tomato paste, 1 teaspoon of the sugar, 1 teaspoon salt, and some black pepper. Continue to cook and stir for another 8 minutes, until the meat is cooked.
  • Place the remaining spice mix in a bowl and add the water, lemon juice, tamarind, the remaining 2 teaspoons sugar, the cinnamon sticks, and 1/2 teaspoon salt; mix well.
  • Reduce the oven temperature to 375°F/195°C. Pour the spice mix into the bottom of the eggplant roasting pan. Spoon the lamb mixture on top of each eggplant. Cover the pan tightly with aluminum foil, return to the oven, and roast for 1 1/2 hours, by which point the eggplants should be completely soft and the sauce thick; twice during the cooking, remove the foil and baste the eggplants with the sauce, adding some water if the sauce dries out. Serve warm, not hot, or at room temperature.

With its layers of golden eggplant, cinnamon-scented lamb, and sweet tomato sauce topped with melted cheese, this traditional Lebanese dish is made for celebratory meals and gatherings. Even better, it's just as good served warm or room temperature as it is hot from the oven. It also reheats well, meaning that you can bake it the day before, and reheat it before serving if you like. Pull it out of the refrigerator, let it come to room temperature for an hour, then reheat it covered for about 40 minutes at 350 degrees.

This hearty dish is inspired by moussaka, but simpler to prepare. Everything is baked in one roasting pan, with the different elements added in stages. Made with yogurt, cheese and egg, the topping cuts wonderfully through the richness of the eggplant and lamb, even though it lacks the body of béchamel. If you can get them, sweet and properly ripened tomatoes would be better than the canned ones. This is best served with a piece of pita or a slice of white bread to scoop it all up.

2 or 3 eggplants (aubergines) (about 1 1/2 pounds/680 grams), cut into 1-inch/3-centimeter cubes
1 pound/450 grams ground lamb (lamb mince)
1 medium onion, halved and thinly sliced
1/2 cup/15 grams fresh oregano leaves, roughly chopped
1/3 cup/80 milliliters olive oil
1/4 cup/65 grams tomato paste
6 garlic cloves, thinly sliced
1 tablespoon ground cinnamon
2 teaspoons ground allspice
1/2 teaspoon red-pepper flakes
Kosher salt and black pepper
1 (14-ounce/400-gram) can whole, peeled plum tomatoes with their juices
3 cups/700 milliliters chicken stock
1/3 cup/20 grams roughly chopped flat-leaf parsley
2 cups/450 grams plain Greek yogurt
3 large egg yolks
1 1/2 tablespoons all-purpose (plain) flour
2 garlic cloves, minced
2 lightly packed cups/70 grams finely grated Parmesan
1 cup/100 grams roughly crumbled feta
Scant 1/3 cup/40 grams pine nuts
2 packed tablespoons roughly chopped flat-leaf parsley
1/4 teaspoon red-pepper flakes

Steps:

  • Heat the oven to 450 degrees Fahrenheit/240 degrees Celsius.
  • Add the eggplant, lamb, onion, oregano, oil, tomato paste, garlic, cinnamon, allspice, red-pepper flakes, 1 3/4 teaspoons salt and a good grind of pepper to a 10-by-13-inch/26-by-34-centimeter (or similar) roasting pan (tin) and mix well to combine. Bake until the mixture is well browned, stirring twice throughout and breaking apart the meat with a spoon, 30 to 35 minutes.
  • Remove from the oven and continue to break apart the meat very well (don't worry if you break apart some of the eggplant, too). Add the canned tomatoes with their juices, lightly crushing the tomatoes by hand. Stir in the chicken stock and parsley then return to the oven and bake for another 35 minutes, stirring twice throughout, until the sauce is thick and rich and the eggplant is very soft. Remove from the oven and turn the oven temperature up to 475 degrees Fahrenheit/250 degrees Celsius.
  • While the casserole is in the oven, prepare the topping: Whisk together the yogurt, yolks, flour, garlic and half the Parmesan with 1/4 teaspoon salt and a good grind of pepper. Once ready, spoon the yogurt mixture over the lamb and eggplant, gently spreading to cover. Top evenly with the remaining Parmesan, feta, pine nuts, parsley and red-pepper flakes.
  • Bake until golden and bubbling, 15 to 20 minutes. Let cool for about 15 minutes before serving.

1 medium eggplant, halved lengthwise (about 10 ounces)
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon sweet paprika
1 teaspoon ground cinnamon

2 tablespoons chopped flat leaf parsley
1 teaspoon tomato paste

Steps:

  • Preheat oven to 425. Place eggplant halves, skin side down, in an ovenproof pan that holds them snugly. Brush the flesh with half the olive oil and season with 1/4 teaspoons salt and plenty of black pepper. Roast for 20 minutes, until tops are golden brown. Remove from oven and allow to cool slightly in the pan.
  • Reduce the oven temperature to 375 after removing the pan of eggplant.
  • While the eggplants roast, start the stuffing: heat the remaining olive oil in a frying pan. Mix together the cumin, paprika, and ground cinnamon and add half the mixed spices to the pan, along with the onions. Cook on medium for about 8 minutes, stirring often so spices don't burn, then add the lamb, pine nuts, parsley, tomato paste, 1/2 teaspoons of the sugar, 1/4 teaspoons salt, and some black pepper. Continue to cook and stir another 8 minutes to cook the meat through.
  • Place the remaining half of the spice mix in a bowl and add the water, lemon juice, tamarind, the remaining 1/2 teaspoons sugar, the cinnamon stick, and 1/4 teaspoons salt. Mix well and pour this mixture into the bottom of the eggplant baking pan.
  • Spoon the lamb mixture on top of the eggplant halves. Cover the pan tightly with aluminum foil, return to the oven, and bake for 75 to 90 minutes,basting the eggplants with the sauce every 30 minutes and adding more water if necessary. The eggplants should be completely soft and the sauce thick at the end of the cooking time. Allow to cool slightly before serving, or serve at room temperature.

1 eggplant
Coarse salt
3 tablespoons olive oil
1 clove garlic, minced
1 pound fusilli
2 tablespoons chopped fresh oregano
1/2 cup pitted black olives
4 large ripe tomatoes, seeded and chopped
1/2 cup toasted pine nuts
Freshly ground pepper to taste
Freshly grated Parmesan

Steps:

  • Slice the eggplant and sprinkle with salt. Leave them for 30 minutes, then pat them dry with paper towels.
  • Preheat grill or broiler. Brush the eggplant slices on both sides with olive oil and sprinkle them with garlic. Grill them until tender and set aside. When the eggplant has cooled, chop it into half-inch pieces.
  • Meanwhile, bring six quarts salted water to a rolling boil and add the fusilli. Cook until al dente.
  • While the pasta is cooking, chop the oregano and saute it in the remaining olive oil for one to two minutes. Add the olives, tomatoes and eggplant and heat them through.
  • Drain the fusilli. Put the sauce in a heated serving bowl and add the pasta. Toss well and add the pine nuts. Season with salt and pepper and serve. Freshly grated Parmesan cheese should be passed separately.
