CREAMY CARBONARA (NO EGG)

Creamy Carbonara is a quick and easy weeknight dinner that's ready in 30 minutes! This eggless penne carbonara is tossed with bacon, mushrooms, parmesan cheese and a creamy sauce. One bite of this pasta carbonara with cream and you'll be dying to go back for seconds!

200g / 7 oz Penne Pasta
Salt (for the pasta water)
1 tablespoon Olive Oil
1 tablespoon Unsalted Butter
1/2 Brown Onion
2 Bacon Slices / Rashers, diced
4 White Mushrooms, diced
1/2 cup Heavy Cream
Handful of Parmesan Cheese, plus extra to serve.
1/4 cup Pasta Water (reserved before draining)
Chopped Parsley, to serve

Steps:

  • Bring a large pot of water to boil, add a generous amount of salt to the pot and the pasta. Cook according to packet instructions. Reserve 1/4 cup of pasta water, then drain the pasta and set aside.
  • Meanwhile, heat oil and butter in a frying pan on medium heat. Add onion, bacon and mushrooms to the pan and cook, stirring, for 5 minutes or until the bacon is crisp and mushrooms are tender.
  • Reduce heat to low, then add cream, 1/4 cup of reserved pasta water and the cooked penne pasta and cook, stirring regularly, until the liquid has reduced into a thick creamy sauce. Remove the frying pan from heat and add a good handful of shredded parmesan cheese, tossing through the pasta.
  • Serve immediately with extra parmesan cheese on top and garnish with chopped parsley, if desired.

2 cups semolina flour
½ teaspoon salt
½ cup warm water

Steps:

  • In a large bowl, mix flour and salt. Add warm water and stir to make a stiff dough. Increase water if dough seems too dry.
  • Pat the dough into a ball and turn out onto a lightly floured surface. Knead for 10 to 15 minutes. Cover. Let dough rest for 20 minutes.
  • Roll out dough using rolling pin or pasta machine. Work with a 1/4 of the dough at one time. Keep the rest covered, to prevent from drying out. Roll by hand to 1/16 of an inch thick. By machine, stop at the third to last setting.
  • Cut pasta into desired shapes.
  • Cook fresh noodles in boiling salted water for 3 to 5 minutes. Drain.

A blend of two different types of flours and the absence of eggs in this homemade pasta dough give whatever pasta you make from it that signature al dente chew. It's great for using with pasta shapes that need to be sturdy enough to twirl around a fork, give this dough a try when making Pici with Short-Rib Ragu.

1 1/2 cups "00" flour, plus more as needed
1 1/2 cups semolina flour
Kosher salt
1 tablespoon extra-virgin olive oil, plus more for brushing and serving

Steps:

  • On a clean work surface or in a large bowl, combine both flours and 1 teaspoon salt. Make a well in center; add 1 cup warm water and oil. Using a fork and whisking outward from the center of well, gradually incorporate flour mixture into liquid until a ragged dough forms.
  • Transfer to a lightly floured work surface and knead until dough is smooth and springs back when pressed with a finger, 8 to 10 minutes. While kneading, add more water, 1 tablespoon at a time, if dough feels too dry; or add more "00" flour, 1 tablespoon at a time, if dough feels too sticky.
  • Pat dough into an approximately 1-inch-thick square; tightly wrap in plastic and let stand at least 1 hour and up to 3 hours before using.

VEGAN CACIO E PEPE

This speedy vegan take on cacio e pepe utilizes a classic technique: Cook the pasta just short of al dente, reserve some of the starchy pasta water to add body to the sauce, then simmer the pasta in its sauce with a splash of pasta water, stirring vigorously until the sauce is emulsified. While many dairy-free pasta recipes look to puréed, soaked cashews for their creaminess, this one cuts corners by using store-bought cashew butter. A spoonful of miso adds depth, and tangy nutritional yeast adds umami. Toasting the peppercorns boosts their flavor and softens them.

1/3 cup nutritional yeast
1/4 cup cashew butter
2 tablespoons white miso paste
1 tablespoon whole black peppercorns
16 ounces dried spaghetti
1/4 cup extra-virgin olive oil, plus more for drizzling
1/2 lemon, squeezed as needed (optional)

Steps:

  • Bring a large pot of lightly salted water to a boil over high. (Go easy on the salt here, since the miso paste added in Step 4 is high in salt.) Add the nutritional yeast, cashew butter and miso to a small bowl and stir into a thick paste. Crush the peppercorns using the flat side of a knife. (Alternatively, you can roughly chop them, or use a pepper grinder set to a coarse setting.)
  • Add the pasta to the boiling water, reduce the temperature to medium, and cook, stirring occasionally, about 2 minutes before al dente according to package instructions. Reserve 2 1/2 cups pasta cooking water, then drain the pasta.
  • Add 1/4 cup olive oil to the empty pot and heat over medium. Add about two-thirds of the crushed black peppercorns and toast, stirring frequently, until fragrant, 2 to 3 minutes.
  • Add the miso mixture, and stir, then whisk in 1 3/4 cups reserved pasta water until sauce is smooth. Add the pasta to the sauce and cook over medium-high, tossing it constantly and vigorously with tongs, until the sauce is glossy and the pasta is fully al dente, 1 to 2 minutes. Add an extra splash of reserved pasta water to keep the sauce glossy, if needed.
  • Divide among bowls. Drizzle with olive oil, sprinkle with remaining crushed pepper and serve immediately.

BASIC PASTA DOUGH (NO EGG)

This recipe yields the equivalent of about 1-1/2 lbs of dry pasta, and can be used to make 4 dozen raviolis.

3 cups flour
1 cup warm water
2 tablespoons olive oil

Steps:

  • Put flour in large mixing bowl, making a well in the center.
  • Add wet ingredients to well and very slowly mix together with a fork, incorporating only a little flour at a time so it mixes smoothly and evenly. Trust me, the more patient you are with this the better it will turn out.
  • Continue kneading by hand for about 10 minutes, let rest for a half hour covered with a towel. Repeat a couple times until dough is smooth and silky, and just slightly sticky.
  • Shape by hand or with a machine.
  • Note: Boiling fresh pasta takes significantly less time than dry pasta. Depending on the shape, cook for 30 seconds to 2 minutes.

1 cup frozen baby peas
2 1/2 cups heavy cream
1 cup freshly grated parmesan cheese
1 tablespoon chopped fresh Italian parsley
fresh ground black pepper, to taste

Steps:

  • Bring a large pot of salted water to a rapid boil. Cook spaghetti 8 -9 minutes, or until al dente. (Pasta cooking time will need to coincide with the finishing of the sauce).
  • In a large frying pan heat thebacon pieces over medium high heat until they start to sizzle. Add the peas and cream. Bring the sauce to a boil and reduce heat slightly. Boil gently for 8 minutes. Sprinkle in parmesan and stir continuosly to blend in and thicken the sauce.
  • Drain pasta and immediatley toss with the sauce. Add black pepper to taste and garnish with fresh parsley.
