LECHE FLAN
Leche Flan is silky smooth, rich, and creamy with golden caramel. This classic Filipino custard dessert is easy to make and sure to be crowd favorite.

Steps:
- Place 3 tablespoons of sugar in each of the three llaneras.
- Set llanera on the stove over low heat and using tongs, move repeatedly over flames until sugar is melted and turns into a golden liquid.
- Continuously tilt and swirl the llanera to ensure even melting and to distribute the liquid on the bottom of the mold. Remo
- Remove from heat and allow caramel to cool and harden. Repeat the process with the remaining llanera.
- In a bowl, combine egg yolks and condensed milk. Whisk to combine.
- Add evaporated milk, gently stirring in a circular motion until blended.
- Using a cheesecloth or fine-mesh sieve, strain egg-milk mixture to remove stray egg whites.
- Pour mixture into prepared llaneras and cover tighly with foil Arrange in a a wide, oven-safe dish with about 1-inch of water (bain marie or water bath)..
- Bake in a 375 F oven for about 50 minutes to 1 hour or until a toothpick inserted in the middle of custard comes out clean.
- Remove from oven, allow to cool, and refrigerate to chill and completely set. To serve, turn flan over on a serving plate, ending with caramel on top.

- For the caramel, add sugar and water to a small saucepan. Bring to a simmer, stirring frequently. Once it starts boiling, turn down the heat, let simmer until it's dark golden brown and thickens, then turn off the heat.
- Quickly pour the caramel into 4 small ramekins and spread the caramel around the bottom with a spoon or simply by tilting the ramekins. Set aside while you make the custard.
- For the custard, add coconut milk, maple syrup, cornstarch, agar powder, vanilla extract, and sea salt to a medium-sized saucepan and stir with a whisk.
- Once combined, bring to a boil over medium-high heat, stirring frequently. As soon as it starts boiling, turn the heat to low and let simmer for 2 minutes to activate the agar, then remove from heat.
- Pour the custard into the 4 ramekins and refrigerate for at least 3-4 hours or overnight.
- To unmold the flan, gently slide a knife around the edges of each ramekin. Invert a platter on top of the ramekin and turn the ramekin and platter over (shake it carefully). Check the step-by-step photos in the blog post above.
- Enjoy! Store leftovers covered in the refrigerator for up to 3 days.

Steps:
- 1. In preparing caramel: In an aluminum molder, boil sugar & water for a few minutes in a medium heat until the sugar caramelized. Spread the caramel mixture on the bottom of the molder. Set aside.
- 2. Pour condensed milk and evaporated milk in a pot (preferably cast iron to avoid scorching). Add vanilla. Stir for a few minutes.
- 3. In a separate pan, combine water & the jelly powder mix. Stir until the mixture dissolved. Boil. Keep on stirring until the mixture becomes very fine. Strain and pour into the boiling milk-vanilla mixture. Stir constantly for a few minutes. Remove from heat.
- 4. Gently pour the mixture on top of the caramel on the aluminum molder. Fill the molder to about 1 to 1 1/4 inch thick. Refrigerate for 30 minutes. Invert & serve.
