NOODLE KUGEL
This is the kugel my mother made every Friday night when I was growing up, adapted from my great-grandmother's recipe. It's not the dairy overload of most kugels and, made with margarine, can be served with a kosher meat meal. Note that it's a main course side dish, even though it looks very sweet. You can use other fruit/spice combos like pear, plums or peaches with ginger.

Steps:
- Preheat oven (see below).
- Boil water (with a little salt, as desired).
- Add noodles and cook as per directions on package (around 10 minutes) Drain and mix other ingredients in.
- Make sure margarine/butter melts and egg mixes in quickly and does not cook.
- Grease pan (8-9 inch square or round or loaf pan) and add noodle mixture.
- Bake 1 hour at 300 F or 1/2 hour at 350 F (depending on whether the rest of your dinner is cooking in the oven).

EGG FREE NOODLE KUGEL
Although this is made with egg noodles, there are no added eggs to the recipe and it binds together well. This dairy kugel can also be prepared using low-fat sour cream and lowfat ricotta cheese. Even though this is a sweet side dish, I will confess to having it (cold) for beakfast on occasion!

- Preheat oven to 350 degrees F.
- Cook noodles according to package and drain.
- Put noodles in a 3 quart baking dish and add the butter while the noodles are warm so it can melt.
- Mix until evenly coated.
- In a bowl, combine all other ingredients and mix.
- Add this to the buttered noodles and mix until evenly blended.
- Bake for about 45 minutes to an hour, until top browns.

- Boil the noodles in salted water for about 4 minutes. Strain noodles from water. In a large mixing bowl, combine noodles with remaining ingredients and pour into a greased, approximately 9-by-13-inch baking dish.
- Bake until custard is set and top is golden brown, about 30 to 45 minutes.
NOODLE KUGEL
This sweet, noodle-based kugel is along the lines of what you'd typically see on the table at a Shabbat dinner or Passover.

- Preheat the oven and prepare casserole dish: Preheat the oven to 350ºF. Grease a 9x13-inch casserole dish with butter. Set aside until ready to use.
- Cook the noodles: Bring a large pot of water to a boil over medium-high heat. Add the noodles and boil until al dente, about 8 minutes or the according to package instructions. When the noodles are done boiling, drain into a colander, then add to a large bowl.
- Make the cornflake topping: While the noodles are boiling, make the topping. In a large bowl, use your hands to crush the cornflakes into coarse crumbs. Add the brown sugar, cinnamon, and melted butter and stir to combine. Set aside until ready to use.
- Assemble kugel: After you've drained the noodles, add the butter into the large bowl while the noodles are still hot, and stir until the butter is melted. Add the diced apples, eggs, sour cream, cottage cheese, sugar, raisins, cinnamon, and salt, and stir until evenly combined.
- Transfer to baking dish: Transfer the noodle mixture to the greased baking dish, then sprinkle the cornflake mixture evenly over the noodle mixture.
- Bake kugel: Cover the dish tightly with aluminum foil. Bake the kugel for 1 hour, then remove the foil and bake for 20 more minutes. You'll know your kugel is done when an instant-read thermometer inserted in the center of the casserole reads 150 to 160°F, the topping is lightly browned, and the noodles have turned golden brown around the edges of the baking dish.
- Cool, cut, then serve kugel: Remove from the oven and let cool for at least 1 hour before serving, to allow the kugel to set up. Cut the kugel into squares or rectangles-this casserole makes 8 or 9 generous servings (about 4 inches by 3 inches), or 12 smaller ones (about 3 inches square). Serve warm or at room temperature.

- Drizzle some oil into a large pot of boiling salted water. Cook the noodles for 6 to 8 minutes, until tender. Drain.
- In a large bowl, whisk together the eggs, half-and-half, brown sugar, vanilla, cinnamon, salt, and pepper. Stir in the ricotta and raisins. Add the drained noodles.

ONION, FETA, AND ZAATAR EGG NOODLE KUGEL
This kugel uses traditional Eastern European kugel components but with a modern Israeli flair...and just happened to be stuff I had stocked the fridge and pantry with one night! Very easy to double, use half the bag of noodles for a little kugel in a 8 x 8 square pan or 9" pie pan, and the whole bag for a big kugel in a 9 x 13 pan then simply double everything else. Pot cheese also works nicely in this if you don't like the tang of feta or goat cheese; so long as it's dry and crumbly it'll work.

- Cook the noodles according to the package directions, I wouldn't recommend more than 7-8 minutes total. Drain and set aside.
- If using a block of feta, run it through your food processor or blender a few times to get it nice and crumbled. If lacking such an appliance, mashing it up with a fork does the trick too. Drain any excess liquid.
- Mix everything in a large mixing bowl, then pour into an oiled 8 x 8 square pan.
- Bake for 45-50 minutes (55-60 minutes if doubling) or until golden browned on top.

- Butter a 13 x 9-inch baking pan.
- Spread the UNCOOKED egg noodles and raisins or dried fruit into the pan.
- In a bowl in whisk the eggs with sour cream until very smooth, then whisk in melted butter, sugar, cinnamon and salt; whisk vigorously until well combined and no sugar granules remain (mix in order stated starting with eggs and sour cream).

- Preheat oven to 350^F.
- Butter a 13x9x2 inch glass baking dish.
- Place uncooked noodles in pan and spread evenly over bottom.
- Sprinkle with the raisins.
- In a large bowl, whisk the eggs, sour cream, sugar and butter.
