2 3/4 cups self raising flour
1 cup sugar
10 ml vanilla extract
1 cup water
1/3 cup extra virgin olive oil

Steps:

  • pre heat the oven 200 degrees c.
  • mix the sugar and flour first.
  • mix the water and vanilla add to dry ingredients.
  • add oil
  • the mix will create a batter that you pour or spoon into muffin cases and bake for approximately 20 minutes.
  • you can add fruit or substitute 1 cup of flour for coco powder for chocolate cake.

  • Preheat oven to 180C/gas mark 6.
  • Grease 12-cup muffin tin or line tin with muffin cups.
  • Cream together the sugar and butter.
  • Sift the flour, salt and baking powder into the mixture alternately with the milk.
  • Fold in the fruit and spoon into muffin cases.
  • Bake in the oven for 20-25 minutes until golden brown and a toothpick inserted into the centre of a muffin comes out clean.

3 teaspoons baking powder
1 teaspoon baking soda
1/4-1/2 teaspoon salt
1 tablespoon oranges or 1 tablespoon pineapple juice
1 cup low-fat milk
1/2 cup applesauce
1 -2 mashed banana
1/2 cup raisins with 1 tsp cinnamon
1/2 cup chocolate chips
1/2 cup blueberries or 1/2 cup fruit

Steps:

  • 1. Mix all ingredients until combined. Do not overmix!
  • 2. Spoon into prepared muffin tins and bake at 350 degrees for 20-35 minutes, or until a knife comes out clean when inserted in the middle.
