- pre heat the oven 200 degrees c.
- mix the sugar and flour first.
- mix the water and vanilla add to dry ingredients.
- add oil
- the mix will create a batter that you pour or spoon into muffin cases and bake for approximately 20 minutes.
- you can add fruit or substitute 1 cup of flour for coco powder for chocolate cake.

- Preheat oven to 180C/gas mark 6.
- Grease 12-cup muffin tin or line tin with muffin cups.
- Cream together the sugar and butter.
- Sift the flour, salt and baking powder into the mixture alternately with the milk.
- Fold in the fruit and spoon into muffin cases.
- Bake in the oven for 20-25 minutes until golden brown and a toothpick inserted into the centre of a muffin comes out clean.

- Mix together brown sugar, flour, cinnamon, and salt. Cut in butter using a pastry cutter or rub in with your fingers until small to medium clumps form. Set aside.
- Preheat oven to 350º F (180º C). Line the bottom of a 9 or 10-inch springform pan with parchment paper and lightly grease and flour. I used a 9-inch (10 cups capacity) springform pan.
- If desired, make the glaze by whisking together powdered sugar and milk. Drizzle over cooled coffee cake.
