EDIBLE COOKIE DOUGH FOR ONE (EGGLESS)

Edible Cookie Dough for One (Eggless) image

Made with heat-treated flour and no eggs, this cookie dough is perfect for when a craving strikes. No need to share, the recipe serves one or two.

Provided by Laurel Randolph

Categories     Dessert

Time 11m

Number Of Ingredients 9

5 tablespoons all-purpose flour
2 tablespoons unsalted butter, softened
1 tablespoon brown sugar, packed
1 tablespoon granulated sugar
1/4 teaspoon vanilla extract
1 pinch salt
1 tablespoon heavy cream or milk
2 tablespoons chocolate chips (mini or regular), optional
2 teaspoons rainbow sprinkles, optional

Steps:

  • Gather the ingredients.
  • Add the flour to a small heatproof bowl and microwave on high power for 1 minute. Use an instant-read thermometer to make sure the internal temperature has reached at least 165 F. Let cool to room temperature.
  • Combine the softened butter, granulated sugar, and brown sugar in a small mixing bowl. Mix for about a minute to help the sugar dissolve a bit, scraping the sides of the bowl often.
  • Add the vanilla and salt and mix.
  • Stir in the heat treated flour.
  • Add up to 1 tablespoon of heavy cream or milk to achieve your desired texture. A small amount of cream or none at all will make a stiff dough, while adding more cream will make for a creamier texture.
  • Add the chocolate chips and/or sprinkles, if using, and mix just until combined.

BEST EGGLESS COOKIE DOUGH (FOR 1)

Best Eggless Cookie Dough (For 1) image

I was tired of trying eggless cookie dough recipes that didn't taste like the "real" cookie dough we all love and adore. I found that as long as you aren't baking them, simply substituting milk for the eggs works out perfectly! Also, I've tried cutting down on the margarine a bit and it turns out fine. This recipe can be quite easily doubled, tripled, whatever, depending on how many people are in the mood for cookie dough... P.S.- try freezing in balls or spoonfulls!

Provided by TinkerToy

Categories     Dessert

Time 5m

Yield 1 bowl, 1 serving(s)

Number Of Ingredients 11

1/4 cup white sugar
1/4 cup brown sugar
2 tablespoons margarine (can be reduced fat)
2 tablespoons shortening
1 tablespoon nonfat milk
1 teaspoon vanilla
1/4 teaspoon salt
1/4 teaspoon baking soda
3/4-1 cup flour
1 tablespoon rolled oats
1/4 cup chocolate chips

Steps:

  • In cereal bowl, cream together butters and sugars with spatula.
  • Add milk, vanilla, salt and soda and mix well.
  • Mix in flour. (probably start with half, then add the rest. That way it won't go everywhere when you try to stir).
  • Add in oats and chocolate chips.

1/2 cup granulated sugar
1/4 cup (packed) light brown sugar
1/4 teaspoon kosher salt
2 tablespoons milk
1/2 teaspoon vanilla extract
For the Chocolate Chip Dough:
1/2 cup chocolate chips
For the Cookies and Cream Dough:
8 cream-filled chocolate sandwich cookies, such as Oreos
2 teaspoons vegetable oil
For the Rocky Road Dough:
3 tablespoons unsweetened cocoa powder
1/2 cup mini marshmallows
1/3 cup almonds, coarsely chopped
1/3 cup chocolate chips
2 teaspoons vegetable oil
For the Oatmeal-Raisin Dough:
1/ 2 cup quick-cooking oats
1/3 cup walnuts, coarsely chopped
1/2 cup raisins
2 teaspoons vegetable oil

For the Peanut Butter and Chocolate Dough:
1/3 cup smooth peanut butter
1/3 mini peanut butter cups, cut into 1/8ths
1/4 cup hard shell peanut butter chocolate candies, such as Reese's Pieces

Steps:

  • Make the Base Cookie Dough:
  • Preheat oven to 350˚F. Spread flour on a parchment-lined rimmed baking sheet and bake 10 minutes. Let cool slightly (flour should still be warm to the touch), about 3 minutes.
  • Meanwhile, using an electric mixer on medium speed, beat butter, granulated sugar, brown sugar, and salt in a large bowl until light and fluffy, 2-3 minutes. Reduce mixer speed to low and beat in milk and vanilla. Add warm flour and beat on low speed until incorporated. Increase speed to medium-high and continue to beat until dough separates, then comes back together, about 30 seconds. Chill 10 minutes.

  • Make the Rocky Road Dough:
  • Sift cocoa powder over base cookie dough. Add marshmallows, almonds, chocolate chips, and oil and mix with a spatula or your hands until incorporated. Using a small ice cream scoop or tablespoon, divide dough into balls and transfer to a rimmed baking sheet. Chill at least 15 minutes.
  • Make the Oatmeal-Raisin Dough:
  • Preheat oven to 350˚F. Spread oats and walnuts on a rimmed baking sheet and bake until walnuts are lightly toasted, about 10 minutes. Let cool at least 15 minutes.
  • Mix base cookie dough, oats, walnuts, raisins, oil, and cinnamon with a spatula or your hands in a large bowl. Using a small ice cream scoop or tablespoon, divide dough into balls and transfer to a rimmed baking sheet. Chill at least 15 minutes.
  • Make the Peanut Butter and Chocolate Dough:
  • Using an electric mixer on medium-high speed, beat base cookie dough and peanut butter in a large bowl until smooth. Add peanut butter cups and candies and fold with a spatula. Using a small ice cream scoop or tablespoon, divide dough into balls and transfer to a rimmed baking sheet. Chill at least 15 minutes.
  • Do Ahead
  • Cookie dough made 5 days ahead. Store in an airtight container and chill, or freeze up to 1 month.
