EASY/HEALTHY SALMON



Easy/Healthy Salmon image

I got this recipe from my old college roomie, Moe. I like this recipe because it is so simple and doesn't use butter, mayo, breadcrumbs or other "heavy" ingredients, so the taste of the salmon shines through. It's easy to modify based on the size of your fillet(s). I've also used a combo of low-sodium soy sauce and garlic salt (when I was out of fresh) and it was fine.

Number Of Ingredients 5

2 lbs salmon fillets
1/4 cup soy sauce
1 medium onion, diced
2 lemons (one for garnish)
2 garlic cloves (finely chopped)

Steps:

  • Line broiler pan with foil, place salmon on foil, skin side down.
  • Combine soy sauce and the juice of one lemon. Pour mixture over the top of the fillet. Scatter diced onion over the top.
  • Slice the other lemon into thin rounds, arrange across the top of the fillet.
  • Cover pan with foil and bake at 350 for one hour.
  • Suggestion: serve with rice and steamed broccoli or snow peas.

  • Preheat oven to 400 degrees and grease a large baking pan. Arrange salmon fillets on the baking sheet and season generously with salt and pepper.
  • Stir together olive oil, garlic, herbs, and juice of 1/2 lemon. Spoon over salmon fillets being sure to rub all over the tops and sides of the salmon so it has no dry spots. Thinly slice remaining 1/2 of lemon and top each piece of salmon with a slice of lemon.
  • Bake for 15-18 minutes until salmon is opaque and flaky when pulled apart with a fork. You can broil the last 1-2 minutes if desired.
