Steps:
- Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
- In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
- Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
WAFFLES I
You can keep the batter covered in the fridge for up to a week. Just be sure to whisk well before using again. You may also use whole wheat flour for this recipe.

- Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.
- Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.

HEALTHY AND YUMMY WAFFLES
My husband loves to make these waffles on weekends. He usually makes a double batch so that we can freeze the extras and enjoy a healthier version of Eggos on busy weekday mornings. These waffles are low in fat and made from half whole wheat flour, but they taste delicious! My picky kids love them! We got this recipe years ago from Eating Well magazine.

Steps:
- In a large bowl, stir together flours, baking powder, salt, and baking soda.
- In a separate bowl, whisk together buttermilk, egg yolk, vanilla, and oil.
- Add to the dry ingredients and stir with a wooden spoon until just moistened.
- In a grease-free mixing bowl, beat the 3 egg whites with an electric mixer until soft peaks form.
- Add sugar and continue beating until stiff and glossy.
- Whisk 1/4 of the beaten egg whites into the batter.
- With a rubber spatula, fold in the remaining egg whites.
- Preheat waffle iron.
- Brush the surface lightly with oil.
- Fill the iron 2/3 full.
- Cook for 5-6 minutes, or until the waffles are crisp and golden.
- Repeat with the reamaining batter, brushing the surface with oil before cooking each batch.
EASY YUMMY WAFFLES
Pillsbury discontinued their frozen waffles, and none of the others on the market have that nice vanilla flavor. So, I came up with my own, very easy version! The added sugar and vanilla make these yummy. They smell like waffle cones when they cook!

- Beat eggs and vanilla with milk in small bowl.
- Mix sugar with baking mix in large mixing bowl.
- Add milk/egg to dry ingredients. Stir till mixed well.
- Ladle about 1/3 cups of batter into each well of the pre heated waffle iron. Enough to cover the grids. Close waffle iron and cook for about 5 minutes, or until golden brown.
