- Combine the chicken, celery, carrot, red onion, mayonnaise, mustard, celery salt, granulated garlic, paprika and 1 teaspoon pepper in a bowl. Mix until combined.

While I normally like using all fresh ingredients, sometimes it's just not feasible. I like to keep comfort foods simple and this is no exception.

Steps:
- Drain chicken very well and empty into mixing bowl.
- Add remaining ingredients and mix well with a fork shredding chicken as you do so.
- Place in fridge to chill and let flavors disperse, think 30-60 minutes. Spread on your favorite bread with some romaine lettuce and enjoy!

YUMMY CHICKEN SALAD FOR SANDWICHES
Ok, this recipe is inspired by a sandwich I'd eaten at Togo's sandwich shop. The toasted almonds in the salad really set it off! The measurements are approximated as i just throw everything together and add mayo little by little to taste. I HATE goopy salads, so I use just enough to cover the chicken, but not make it goopy.

Steps:
- Preheat oven broiler.
- Spray the chicken breasts with olive oil spray and sprinkle with salt and pepper.
- Broil the chicken breasts for 7 minutes on each side or until cooked through. (can BBQ if you prefer).
- Chop chicken breasts and put in refrigerator to cool.
- While oven is still hot, spread your almond flakes on a cookie sheet and toast on the broiling rack. Please keep an eye on them because they toast quickly, and you dont want burnt almonds.
- Once the chicken is cooled, mix in the almonds, celery, onion, mustard and mayo.
- You can either put the salad straight onto your choice of bread and add whatever you like on your sandwiches or can be eaten out of iceburg lettuce leaves for a no carb version.

DELICIOUS & EASY CHICKEN SALAD
My husband and our friends absolutely love my chicken salad! I originally got the recipe from my father, but have adapted it slightly. Very easy to make and great on crackers, sandwiches, etc. You can also substitute turkey and make turkey salad - it tastes just as great! This recipe can be halved for a smaller batch.

- Break the eggs apart with your hands by squeezing and crumbling them into the chicken.
