1/3 cup olive oil
4 large cloves garlic, thinly sliced
1 medium onion, chopped
Kosher salt
1 large carrot, shredded on the large holes of a box grater
2 tablespoons tomato paste
1/4 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
2 bay leaves
1 large sprig basil; plus 1/4 cup leaves, coarsely chopped
1 large sprig thyme
One 10-ounce box frozen chopped spinach, thawed
1 pound ricotta cheese
3/4 cup grated Parmesan
1 large egg
Kosher salt
1/4 teaspoon freshly grated nutmeg
12 no-boil lasagna noodles
1 pound shredded low-moisture whole-milk mozzarella (4 cups)
Cooking spray

Steps:

  • For the sauce: Put the olive oil and garlic in a medium pot over low heat. Cook the garlic, stirring occasionally at first and more often as it colors, until golden brown, about 7 minutes. Raise the heat to medium-low, add the onions and a large pinch of salt and cook, stirring occasionally, until the onions are softened, about 5 minutes. Add the carrots, and cook, stirring occasionally, until softened, about 5 minutes. Add the tomato paste and red pepper flakes, and cook, stirring constantly, for 2 minutes. Add the tomatoes, bay leaves, basil sprig, thyme and 1 teaspoon salt, raise the heat to medium and bring the sauce to a lively simmer. Continue to cook, stirring frequently, until quite thick (if you draw a spoon through the sauce, you'll see the bottom of the pot for a few seconds before the sauce fills back in), about 30 minutes. As the sauce thickens, turn the heat down a bit so the bottom doesn't scorch. Stir in the chopped basil. Let cool to room temperature before assembling the lasagna. (Makes 1 quart.)
  • To assemble: Preheat the oven to 350 degrees F. Squeeze the spinach in your hands to remove as much liquid as possible. Put it in a large bowl, and stir in the ricotta, 1/2 cup of the Parmesan, the egg, 1 teaspoon salt and the nutmeg.
  • Spread 3/4 cup of the tomato sauce on the bottom of a 9-by-13-inch baking dish. Lay 3 lasagna noodles across the sauce (they won't touch). Spread 3/4 cup tomato sauce on top. Dollop 1/3 of the ricotta mixture (about 1 cup) across the sauce, and use the back of a spoon to spread it (it will smush into the tomato sauce, which is fine). Scatter 1 cup of the mozzarella on top.
  • Repeat the layering 2 more times. Top with the last 3 noodles, spread the last 3/4 cup tomato sauce over them and scatter the remaining 1 cup mozzarella and 1/4 cup Parmesan over the top. Spray a large piece of foil with cooking spray, and cover the baking dish.
  • Bake until the noodles are soft and the cheese has melted, about 40 minutes. Remove the foil, and continue to bake until the cheese is bubbling and the lasagna is slightly browned around the edges, about 15 minutes more. Let rest 10 minutes before serving.

3 tbsp butter 45 mL
¼ cup all-purpose flour 60 mL
½ tsp salt 2 mL
¼ tsp pepper 1 mL
4 cups milk 1 L
⅛ tsp nutmeg 0.5 mL
1 pkg fresh lasagna noodles 360 g
1 cup shredded mozzarella cheese 250 mL
1 cup grated Parmesan cheese 250 mL
4 zucchini, sliced lengthwise into 1/4-in. (5-mm) thick strips

Steps:

  • Preheat oven to 350°F (180°C). Place spinach in large colander in sink. Bring 6 cups (1.5 L) water to boil in a kettle. Pour boiling water over spinach, drain and cool.
  • Meanwhile, in large saucepan, make white sauce by melting butter over medium heat; whisk in flour, salt and pepper. Cook, whisking constantly, 1 to 2 min., or until mixture turns pale golden and is texture of scrambled eggs. Gradually whisk in milk until sauce is smooth. Bring just to a boil then immediately reduce heat to low. Simmer 5 to 7 min., stirring often, until sauce thickens. Remove from heat. Whisk in nutmeg.
  • Arrange a layer of lasagna noodles in the bottom of lightly greased 13 x 9-in. (3 L) baking dish, cutting noodles to size if necessary. Top with about 3/4 cup (175 mL) white sauce and ¼ cup (60 mL) each mozzarella and Parmesan. Arrange ⅓ of the zucchini strips over the cheese. Cover zucchini layer with ⅓ of the spinach. Repeat layering process two more times, finishing with a layer of lasagna noodles topped with remaining white sauce and cheese. Bake until lasagna is golden brown and bubbling, about 45 to 50 min. Let stand 10 min. before slicing.

8 uncooked whole wheat lasagna noodles
1 (15 ounce) container low-fat ricotta cheese
2 cups chopped raw vegetables (I suggest squash, brocolli, onion, carrot, cauliflower, spinach etc.)
1 (8 ounce) package low fat mozzarella cheese

Steps:

  • Preheat oven to 375 and prepare 9X9 baking dish.
  • Pour 1/3 jar of sauce into bottom of pan.
  • Lay 4 lasagna noodles on top of sauce.
  • Pour 1/3 Sauce on top of noodles.
  • Cover noodles with the ricotta cheese, vegetables, and 1/2 the mozerella.
  • Lay 4 remaining noodles on top.
  • Pour on final 1/3 sauce.
  • Cover with aluminum foil and bake for 1 hour.

1 cup chopped yellow onion
2 large cloves garlic, finely chopped

3 tablespoons unsalted butter
6 tablespoons all-purpose flour
3 ½ cups whole milk

  • Preheat oven to 375°F. Lightly coat a 9-by-13-inch baking dish with cooking spray.

½ cup skim milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 10x15 inch lasagna pan with cooking spray.

2 small zucchini (about 8 oz. each)
1/2 bunch broccoli
1 bunch spinach leaves (firmly packed)
2 tablespoons butter (or margarine)
1/2 teaspoon dried oregano leaves
1/2 teaspoon salt (divided)
15 ounces ricotta cheese (can be part skim)
2 eggs
12 lasagna noodles (about)
3 tablespoons butter (or margarine)
1/4 cup flour
2 1/2 cups milk
1/4 cup parmesan cheese
8 ounces mozzarella cheese (slices)

Steps:

  • Dice zucchini. Coarsely chop broccoli and spinach.
  • In a nonstick 12 -inch skillet over medium heat, melt butter (or margarine), cook zucchini, broccoli, oregano, and 1/4 teaspoon of salt, stirring frequently, until vegetables are tender-crisp, about 5 minutes. Add Spinach and toss until wilted. remove skillet from heat.
  • In medium bowl, with fork, mix ricotta and eggs; set aside.
  • Prepare lasagna noodles as label directs. Drain.
  • Meanwhile, preheat oven to 350 degrees F.
  • In 2-quart saucepan over medium heat, melt 3 tablespoons margarine (or butter). Stir in flour and 1/4 teaspoon salt until smooth. Gradually stir in milk; cook, stirring constantly until sauce comes to a boil and thickens. Remove saucepan from heat; stir in Parmesan cheese.
  • In13-by-9-inch glass baking dish, layer half of the prepared lasagna noodles, half of the ricotta mixture, half of the vegetable mixture, and half of the mozzarella. Top with half of the sauce, then with the remaining noodles, ricotta, and vegetable mixture. Spoon remaining sauce over vegetable layer; arrange remaining mozzarella on top.
  • Bake lasagna 40 to 45 minutes until hot and bubbly. Let lasagna stand 10 minutes for easier serving.

8 ounces zucchini (about 1 medium), sliced into 1/2-inch rounds
8 ounces yellow squash (about 1 medium), sliced into 1/2-inch rounds
1 cup sliced baby bella mushrooms
1 cup spinach
Salt and freshly ground black pepper
Cooking spray, for spraying the baking dish
9 lasagna noodles (7 inches by 3 inches), cooked according to the package instructions
One 15-ounce container whole-milk ricotta cheese
Cherry Tomato Sauce, recipe follows
1 cup fresh basil leaves
1 cup shredded mozzarella
2 pounds cherry tomatoes
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh thyme
1 tablespoon finely chopped fresh parsley
1 tablespoon olive oil
10 garlic cloves, unpeeled
1 white onion, roughly chopped
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large saute pan on medium heat. Add the zucchini and yellow squash and cook until slightly tender, about 4 minutes. Add the mushrooms and cook for about 3 minutes. Add the spinach and turn off the heat. Toss to combine, letting the spinach wilt. Season with salt and pepper.
  • Spray a 9-by-13-by-2-inch baking dish with cooking spray. Place 3 lasagna noodles on the bottom of the baking dish, forming 1 layer (the noodles may overlap). Layer one-third of the veggie mixture, one-third of the ricotta cheese and one-third of the Cherry Tomato Sauce in the dish, spreading each layer evenly. Top with 1/2 cup of the basil. Repeat a second time with the noodles, veggie mixture, ricotta and tomato sauce; top with the remaining 1/2 cup basil. Repeat a third time, but finish the top layer with the mozzarella.
  • Cover with aluminum foil and bake for 35 minutes. Remove the aluminum foil, turn the oven to broil and broil on high until the cheese is crisp and golden, about 5 minutes.
  • Preheat the oven to 350 degrees F.
  • Combine the tomatoes, oregano, thyme, parsley, olive oil, garlic and onions on a large baking sheet. Season with salt and pepper and toss, making sure everything is evenly coated. Bake until the tomatoes are golden and the onions are caramelized, about 20 minutes.
  • Carefully peel the garlic, making sure not to burn your fingers. Transfer the ingredients to a blender and process until smooth. Check for seasoning and add more salt and pepper if desired. Reserve for later use.

Delicious vegetable lasagna recipe with white sauce. Lots of vegetables, a creamy white sauce, and cheese, a vegetarian lasagna can hardly get any better.

3 shallots
2 garlic cloves
½ teaspoon sugar
3 medium carrots (the total weight of about 200 g/ 7 oz (See note 1 and 2))
2 red or yellow bell peppers
1 medium zucchini
½ broccoli (or use only broccoli stems if you have leftovers)
1 1/3 cup frozen peas
3 cup chopped cremini mushrooms (optional (See note 2))
4 tablespoons olive oil (divided)
2 cans chopped tomatoes (400 g/ 14 oz each)
1/2 cup water
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried rosemary
1 tablespoon lemon juice
1/4 cup butter
1/2 cup all-purpose flour
3 cups milk
9 no-boil lasagna sheets (See note 4)
2 mozzarella balls (125 g/ 4.4 oz each)
1 cup freshly grated hard cheese (Parmesan or vegetarian hard cheese)
a few gratings of nutmeg
fine sea salt and pepper

Steps:

  • Peel and finely chop the shallots and the garlic. Keep separately.
  • Clean the vegetables. Cut the carrots, bell peppers, zucchini into small cubes. Set aside in a bowl. Divide the broccoli into small florets and chop the broccoli stem into small cubes as well.If using mushrooms, wipe them clean with kitchen paper and slice them thinly. Set aside separated from the other vegetables.
  • Defrost the peas.
  • Cheese: Chop the mozzarella into cubes and grate the Parmesan. Set aside separately.
  • Preheat the oven to 180 degrees Celsius/ 360 degrees Fahrenheit.
  • Saute: Heat 2 tablespoons of olive oil in a large pan. Cook the shallots until translucent, about 2-3 minutes. Add the garlic and stir for 1 minute. Add the sugar and stir for another minute or until slightly caramelized.
  • Add the chopped vegetables, except the mushrooms, and cook for about 8 minutes or until softer. Stir well a few times in between.
  • Simmer: Add the chopped tomatoes, water, dried herbs, and lemon juice. Stir well, bring to a boil and simmer the sauce for about 10 minutes until slightly thickened.
  • Fry mushrooms: In the meantime, cook the mushrooms if using. Heat the remaining oil in a pan and fry the mushrooms until golden and until all the juices they have released are evaporated.
  • Melt the butter in a small saucepan. Sprinkle the flour on top and stir for 1 or 2 minutes until lightly golden. Slowly start adding the milk while whisking all the time to avoid the formation of clumps.
  • Let the sauce simmer for 2 or 3 minutes while whisking or stirring continuously. Adjust the taste with nutmeg, salt, and pepper.
  • Butter a rectangular casserole dish of about 30x20 cm/ 12x 8 inches. You should have 3 layers of noodles, and you should finish with a layer of Parmesan.
  • White sauce: Place a few tablespoons of white sauce in the prepared casserole dish. Spread them all over the bottom of the dish.
  • Pasta sheets: Add some lasagna sheets. I can use 3 sheets for each layer, but use as many as they fit in one layer without overlapping.
  • Vegetable sauce: Cover with 1/3 of the vegetable sauce.
  • Cheese: Add ½ of the mozzarella and 1/3 of the hard cheese on top. Cover with white sauce.
  • Repeat twice. End with the last layer of grated hard cheese.
  • Bake the lasagna in the preheated oven for 30-40 minutes or until bubbly and golden. Check if the noodles are cooked through by inserting a fork into the lasagna.
  • Rest for about 10 minutes, cut into 12 squares, and serve with a green salad.

1 1/2 -2 cups frozen peas ((190-260 grams))
3 Italian sausages ((skinned and broken into pieces))
2 tablespoons olive oil
1 1/2 cups chopped mushrooms ((150 grams))
1/4-1/2 teaspoon oregano
1/4 teaspoon parsley dried or fresh (if fresh use about 1 tablespoon finely chopped)
1/4 teaspoon salt
1/4 cup water ((60 grams))
1 - 1 1/2 large fresh mozzarella chopped ((250-325 grams))
1 1/4 cups freshly grated parmesan cheese ((125 grams))
16 lasagna noodles (more if necessary) ((also referred to as strips))
3 1/2 cups milk (I used 2%) ((840 grams))
1/4 cup butter ((56 grams))
1/4 cup all purpose flour ((32 grams))
1/4 teaspoon salt

Steps:

  • Pre-heat oven to 350F (180C).
  • In a small pot of boiling water add the peas and cook until tender about 10 minutes, drain. Set aside.
  • Cook the sausage in a small frying pan adding 3 tablespoons of water, cook until slightly golden, and the water has evaporated (watch that it doesn't burn).
  • In a medium frying pan add the olive oil, mushrooms, oregano, parsley , salt and the water, cook on medium heat until tender and water has evaporated, stirring occasionally, watch that they don't burn. Then add the drained peas, the Italian sausage (break into smaller pieces if too large) and combine well. Set aside.

¼ cup all-purpose flour 60 mL
½ tsp salt 2 mL
¼ tsp pepper 1 mL
4 cups milk 1 L
⅛ tsp nutmeg 0.5 mL
1 pkg fresh lasagna noodles 360 g
1 cup shredded mozzarella cheese 250 mL
1 cup grated Parmesan cheese 250 mL
4 zucchini, sliced lengthwise into 1/4-in. (5-mm) thick strips

Steps:

  • Preheat oven to 350°F (180°C). Place spinach in large colander in sink. Bring 6 cups (1.5 L) water to boil in a kettle. Pour boiling water over spinach, drain and cool.
  • Meanwhile, in large saucepan, make white sauce by melting butter over medium heat; whisk in flour, salt and pepper. Cook, whisking constantly, 1 to 2 min., or until mixture turns pale golden and is texture of scrambled eggs. Gradually whisk in milk until sauce is smooth. Bring just to a boil then immediately reduce heat to low. Simmer 5 to 7 min., stirring often, until sauce thickens. Remove from heat. Whisk in nutmeg.
  • Arrange a layer of lasagna noodles in the bottom of lightly greased 13 x 9-in. (3 L) baking dish, cutting noodles to size if necessary. Top with about 3/4 cup (175 mL) white sauce and ¼ cup (60 mL) each mozzarella and Parmesan. Arrange ⅓ of the zucchini strips over the cheese. Cover zucchini layer with ⅓ of the spinach. Repeat layering process two more times, finishing with a layer of lasagna noodles topped with remaining white sauce and cheese. Bake until lasagna is golden brown and bubbling, about 45 to 50 min. Let stand 10 min. before slicing.

  • In a large pot bring 5 cups water to a rolling boil, add 2 tablespoons of salt to this along with uncooked pasta. Cook according to package instructions till al dente. Drain, wash with cold water and set aside.
