2 pkg. (8 oz.each) PHILADELPHIA Cream Cheese, softened
1/2 cup powdered sugar
1 tsp. vanilla
1/2 cup brewed MAXWELL HOUSE Coffee, cooled, divided
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
39 vanilla wafers, divided

Steps:

  • Beat cream cheese, sugar, vanilla and 3 Tbsp. of the coffee in large bowl with mixer on medium speed until well blended. Stir in 2 cups COOL WHIP.
  • Spoon 1/3 of the cream cheese mixture into 1-1/2-qt. serving bowl. Dip 9 wafers into remaining coffee for about 5 seconds; place evenly over cream cheese layer. Repeat layers twice. Cover with remaining COOL WHIP.
  • Refrigerate at least 1 hour. Top with remaining 12 wafers just before serving.

  • Set aside 4 vanilla wafers; coarsely crush remaining wafers. Divide wafer crumbs between 2 dessert dishes. , In a small bowl, dissolve coffee granules in hot water. Drizzle over wafer crumbs. Spoon pudding into dessert dishes. Top with whipped topping; sprinkle with cocoa. Garnish with reserved vanilla wafers.

4 1/2 cups milk
1 cup sugar
1/3 cup cornstarch
Kosher salt
5 large egg yolks, beaten
2 cups mascarpone cheese, at room temperature
1/2 cup prepared espresso, at room temperature
1/4 cup coffee liqueur
One 11-ounce box vanilla wafer cookies
6 ripe bananas, sliced into 1/4-inch rounds
Unsweetened cocoa powder, for dusting

Steps:

  • Heat 4 cups of the milk in a large saucepan over medium heat until steaming. Whisk the sugar, cornstarch and 1/2 teaspoon salt together in a large bowl; whisk in the egg yolks and the remaining 1/2 cup milk. Whisk half of the hot milk into the egg mixture until smooth, and then gradually whisk the egg mixture back into the pan. Cook over medium heat, whisking constantly, until the mixture boils. Once it boils, continue to whisk over medium heat until it has thickened to a pudding-like consistency, 3 to 4 minutes. Remove from the heat and whisk in the mascarpone cheese until melted. Transfer to a bowl or baking dish (a 9- by 13-inch baking dish will speed up the cooling process) and cool slightly, stirring a few times to prevent a skin from forming. Place a piece of plastic wrap directly on top of the pudding and refrigerate until completely cooled and thickened, about 2 hours.
  • To assemble, loosen the chilled pudding by whisking it vigorously until smooth and creamy. Stir the espresso and coffee liqueur together in a small bowl. Dip some vanilla wafers in the espresso mixture, soaking completely for a couple of seconds. Stand the soaked cookies around the bottom of a 3-quart trifle dish to make a decorative ring.
  • Dip more vanilla wafers and stack two layers of soaked cookies on the bottom of the dish within the ring of standing cookies. Spoon 2 cups of pudding on top of the cookies. Smooth the pudding to the edge of the dish with a small spatula. Layer half of the banana slices evenly over the pudding. Repeat with two more layers of soaked cookies, 2 cups of pudding and the remaining bananas.
  • Top with the remaining cookies and then the remaining pudding. Place a piece of plastic wrap directly on top of the pudding. Refrigerate for at least 4 hours or up to overnight.
  • Lightly dust with unsweetened cocoa powder just before serving.

  • Dissolve coffee granules in hot water. Gradually add to cream cheese in medium bowl, beating with whisk until blended. Add sugar; mix well. Stir in the whipped topping.
  • Place 16 of the wafers on bottom of 8-inch square dish; cover with half of the whipped topping mixture. Repeat layers; cover. Refrigerate several hours or overnight.
  • Top with raspberries just before serving. Sprinkle with cocoa powder and grated chocolate. Store leftovers in refrigerator.

2/3 cup milk
1 lb mascarpone cheese or 2 packages (8 oz each) cream cheese, softened
1 1/4 cups whipping (heavy) cream
1/2 teaspoon vanilla
1/4 cup brewed espresso or very strong coffee, chilled
2 tablespoons rum*
2 packages (3 oz each) ladyfingers**
1 1/2 teaspoons baking cocoa

Steps:

  • In 2-quart saucepan, beat egg yolks and sugar with wire whisk until well mixed. Beat in milk. Heat to boiling over medium heat, stirring constantly; reduce heat to low. Boil and stir 1 minute; remove from heat. Pour into medium bowl; place plastic wrap directly onto surface of custard mixture. Refrigerate about 1 hour or until chilled.
  • Add cheese to custard mixture. Beat with electric mixer on medium speed until smooth; set aside.
  • In chilled medium bowl, beat whipping cream and vanilla with electric mixer on high speed until stiff; set aside. In small bowl, mix espresso and rum.
  • Separate ladyfingers horizontally; brush with espresso mixture (do not soak). In ungreased 11x7-inch glass baking dish, arrange half of the ladyfingers in single layer. Spread half of the cheese mixture over ladyfingers; spread with half of the whipped cream. Repeat layers with remaining ladyfingers, cheese mixture and whipped cream. Sprinkle with cocoa. Refrigerate at least 4 to 6 hours to develop flavors but no longer than 24 hours. Store covered in refrigerator.

This is not authentic, but it is a fast, easy to make and very tasty version of Venice's favorite cheesecake. It comes from the Magic of Jell-O. The name means "pick me up". Also try substituting vanilla wafers for the lady fingers. If you do, reduce the coffee to 1/2 cup because the wafers won't absorb the liquid as well.

1 cup brewed espresso, cooled or 1 cup strong coffee
1 tablespoon sugar
1 (7 ounce) package ladyfingers

Steps:

  • Prepare pudding according to box direction.
  • Add cheese and coffee liqueur and beat until smooth.

1 pound mascarpone
1 cup granulated sugar
4 ounces almond biscotti
1 1/2 cups brewed espresso, cooled
2 tablespoons plus 2 teaspoons coffee liqueur, such as Kahlua
Ladyfingers for Tiramisu
1 1/2 cups heavy cream
1 tablespoon confectioners' sugar
1 teaspoon vanilla extract
Best-quality milk chocolate, chilled, for garnish

Steps:

  • Whisk together yolks and mascarpone in a large bowl until smooth. Add granulated sugar; whisk until dissolved. Set aside.
  • Place biscotti in the bowl of a food processor; pulse to form coarse crumbs. Fold biscotti into mascarpone mixture; set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, add egg whites; beat until soft peaks form. Fold egg whites into mascarpone mixture; set aside.
  • Combine espresso and liqueur in a medium bowl; pour half the mixture into a pie plate. Quickly dip half the ladyfingers individually into the pie plate, and place in the bottom of a 13-by-9-inch glass baking dish; fit snugly to line.
