- Preheat oven to 350 degrees and spray a 9x13 baking dish with vegetable oil spray.
- Add the ground beef and onions to a large skillet on medium high heat and break it apart as you cook it, for 6-8 minutes, until no longer pink.
- Drain excess fat before adding in taco seasoning and water.
- Stir well and cook until water has evaporated then add in the salsa and stir.
- Layer the baking dish with refried beans, taco salsa mixture and cheese.
- Bake, uncovered for 20 minutes, top with Fritos and bake an additional 10 minutes.
- Top with lettuce, tomato and olives before serving.

- Preheat oven to 425 degrees. Heat a 10-inch cast iron skillet over medium-high heat. Add ground beef; season with salt and pepper. Cook, stirring frequently with a wooden spoon to break up meat, until meat is browned, 10 minutes. Transfer beef to a colander to drain. Discard excess oil.
- Wipe out skillet, add oil, and return to heat. Add bell pepper and onion. Cook, stirring, until tender and browning, 7 minutes. Add tomato paste; cook, stirring, 1 minute. Add back reserved beef, chili powder, oregano and cumin, tomatoes (with liquid), pinto beans, and 2 tablespoons water; bring to a boil. Remove from heat. Season with salt and pepper.
- In a large bowl, combine tortilla chips, 1 cup Monterey jack, and 1 cup cheddar cheese. Top casserole with chip mixture followed by remaining 1/4 cup each of Monterey and cheddar cheese. Bake until cheese is melted and golden in spots, about 3 minutes. Serve with radish, jalapeno, olives, sour cream, and cilantro.

- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
- Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture. EASY TACO CASSEROLE
This is one of my mother-in-law's only recipes. So easy and absolutely yummy. . .but you have to eat it all in one setting as the leftovers don't heat up well. I have subbed lean ground turkey in the past and it is a bit more bland than the beef, so if you take that route, make sure you brown with the turkey with a clove of garlic and a couple tbsp diced onion.

- Brown hamburger, drain off fat and then mix with enchilada sauce, green chilis and soup.
- Add salt/pepper to taste (I usually only add pepper).
- Crunch up the Doritos; I usually only crunch up half of the bag to see if that's enough.
- Layer chips, then hamburger mixture, then cheese and repeat. Make sure to put a few extra chips on the top because they get crisp and yummy.
- Cook on 350 degrees for about 25 minutes.

FANTASTIC TACO CASSEROLE
I originally found this taco casserole recipe in a Taste of Home magazine. Since then, I have made this recipe at least 50 times. I love it because the ingredients list isn't complicated and, based on the layers, I can readily remember all ingredients when I am at the store without my recipe card. I have served this for myself and had wonderful leftovers or many times I have made it for company with a nice green salad to accompany it. I hope you enjoy it as much as I do.

Steps:
- Brown ground beef and drain.
- Add taco seasoning and cook according to package directions, adding proper amount of water.
- Put corn chips on bottom of 8x8" dish.
- Cook refried beans on stove until hot.
- Add 1 cup cheese and 1 cup salsa. Stir until combined.
- Pour beans over corn chips in dish.
- Add beef to top of beans.
- Sprinkle remaining cheese over top.
- Sprinkle green onions and black olives over cheese.
- Bake in a 375 degree oven until the cheese is sufficiently melted.
- Take out of oven and sprinkle chopped tomatoes on top. Wait 1-2 minutes and then serve.

- In a large skillet, heat olive oil over medium high heat. Add ground beef and break apart as it cooks. Optional step: Drain meat if desired and place back into hot pan. Add in corn, green chiles, taco seasoning and water. Stir and bring to boil. After about 3 minutes, water should have mostly evaporated and you should be left with a moist meat filling.
- Lightly spray a 11x7 baking dish with nonstick cooking spray. Spread about 3 tablespoons enchilada sauce in the bottom of the pan. Place two whole tortillas in the bottom of the pan. Sprinkle about 1/2 cup of cheese onto the tortillas. Add the rice, the entire meat mixture and top with 1 cup grated cheese. Pour over half of the remaining enchilada sauce. Top with two tortillas, tucking in the edges. Top with remaining sauce and 1/2 cup cheese.
- Bake covered with foil for 30 minutes. Optional step: remove the foil and bake another 10 minutes to brown the top (or just broil for 2-3 minutes). Remove from oven and cool 10 minutes before cutting and serving.
