1 pound ground beef (, (85/15))
1 yellow onion (, diced)
2 cups salsa
3 tablespoons taco seasoning (, or one packet)
1/2 cup water
2 cans refried beans
2 cups cheddar cheese (, shredded)
2 cups Fritos chips
1 cup romaine lettuce (, thinly sliced)
1 vine tomatoes (, diced)
1/2 cup black olives (, sliced)

Steps:

  • Preheat oven to 350 degrees and spray a 9x13 baking dish with vegetable oil spray.
  • Add the ground beef and onions to a large skillet on medium high heat and break it apart as you cook it, for 6-8 minutes, until no longer pink.
  • Drain excess fat before adding in taco seasoning and water.
  • Stir well and cook until water has evaporated then add in the salsa and stir.
  • Layer the baking dish with refried beans, taco salsa mixture and cheese.
  • Bake, uncovered for 20 minutes, top with Fritos and bake an additional 10 minutes.
  • Top with lettuce, tomato and olives before serving.

1 cup coarsely crushed tortilla chips

Steps:

  • Preheat oven to 400°F. Brown meat in large skillet on medium-high heat. Drain fat.
  • Stir in Seasoning Mix, beans, tomato sauce and corn. Bring to boil. Reduce heat to low; simmer 5 minutes. Spoon into 2-quart baking dish. Sprinkle with cheese and tortilla chips.
  • Bake 5 to 10 minutes or until cheese is melted. Serve with assorted toppings, if desired.

Coarse salt and freshly ground pepper
2 tablespoons safflower oil
1 medium green bell pepper, diced (1 1/2 cups)
1 medium white onion, diced (1 1/2 cups)
2 tablespoons tomato paste
2 1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1 can (14.5 ounces) diced tomatoes
1 can (15 ounces) pinto beans, drained and rinsed
4 cups yellow corn tortilla chips, slightly crushed
1 1/4 cup freshly shredded Monterey jack cheese (3 ounces)
1 1/4 cup freshly shredded sharp cheddar cheese (3 ounces)
Thinly sliced radish, thinly sliced jalapeno, sliced black olives, sour cream, and fresh cilantro leaves for serving

Steps:

  • Preheat oven to 425 degrees. Heat a 10-inch cast iron skillet over medium-high heat. Add ground beef; season with salt and pepper. Cook, stirring frequently with a wooden spoon to break up meat, until meat is browned, 10 minutes. Transfer beef to a colander to drain. Discard excess oil.
  • Wipe out skillet, add oil, and return to heat. Add bell pepper and onion. Cook, stirring, until tender and browning, 7 minutes. Add tomato paste; cook, stirring, 1 minute. Add back reserved beef, chili powder, oregano and cumin, tomatoes (with liquid), pinto beans, and 2 tablespoons water; bring to a boil. Remove from heat. Season with salt and pepper.
  • In a large bowl, combine tortilla chips, 1 cup Monterey jack, and 1 cup cheddar cheese. Top casserole with chip mixture followed by remaining 1/4 cup each of Monterey and cheddar cheese. Bake until cheese is melted and golden in spots, about 3 minutes. Serve with radish, jalapeno, olives, sour cream, and cilantro.

15 taco shells, broken up, or more to taste

This is one of my mother-in-law's only recipes. So easy and absolutely yummy. . .but you have to eat it all in one setting as the leftovers don't heat up well. I have subbed lean ground turkey in the past and it is a bit more bland than the beef, so if you take that route, make sure you brown with the turkey with a clove of garlic and a couple tbsp diced onion.

1 lb ground beef
0.5 (10 ounce) can enchilada sauce, mild
1 (4 1/2 ounce) can green chilies, chopped
1 (10 1/2 ounce) can fat-free cream of mushroom soup
2 cups sharp cheddar cheese
0.75 (13 ounce) bag Doritos (or any other taco flavored chip, you won't use the entire bag)
salt & pepper

Steps:

  • Brown hamburger, drain off fat and then mix with enchilada sauce, green chilis and soup.
  • Add salt/pepper to taste (I usually only add pepper).
  • Crunch up the Doritos; I usually only crunch up half of the bag to see if that's enough.
  • Layer chips, then hamburger mixture, then cheese and repeat. Make sure to put a few extra chips on the top because they get crisp and yummy.
  • Cook on 350 degrees for about 25 minutes.

I originally found this taco casserole recipe in a Taste of Home magazine. Since then, I have made this recipe at least 50 times. I love it because the ingredients list isn't complicated and, based on the layers, I can readily remember all ingredients when I am at the store without my recipe card. I have served this for myself and had wonderful leftovers or many times I have made it for company with a nice green salad to accompany it. I hope you enjoy it as much as I do.

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
1 (15 ounce) can refried beans
2 cups monterey jack cheese, divided (or mixed cheddar, jack etc.)
1 cup salsa (I prefer mild, but if you would like to kick it up a notch, go for it)
2 green onions, chopped
1 (2 1/3 ounce) can sliced black olives
1 tomatoes, chopped
2 cups corn chips (coarsely crushed or chopped)

Steps:

  • Brown ground beef and drain.
  • Add taco seasoning and cook according to package directions, adding proper amount of water.
  • Put corn chips on bottom of 8x8" dish.
  • Cook refried beans on stove until hot.
  • Add 1 cup cheese and 1 cup salsa. Stir until combined.
  • Pour beans over corn chips in dish.
  • Add beef to top of beans.
  • Sprinkle remaining cheese over top.
  • Sprinkle green onions and black olives over cheese.
  • Bake in a 375 degree oven until the cheese is sufficiently melted.
  • Take out of oven and sprinkle chopped tomatoes on top. Wait 1-2 minutes and then serve.

Add in corn, green chiles, taco seasoning and water. Stir and bring to boil. After about 3 minutes, water should have mostly evaporated and you should be left with a moist meat filling.
  • Lightly spray a 11x7 baking dish with nonstick cooking spray. Spread about 3 tablespoons enchilada sauce in the bottom of the pan. Place two whole tortillas in the bottom of the pan. Sprinkle about 1/2 cup of cheese onto the tortillas. Add the rice, the entire meat mixture and top with 1 cup grated cheese. Pour over half of the remaining enchilada sauce. Top with two tortillas, tucking in the edges. Top with remaining sauce and 1/2 cup cheese.
  • Bake covered with foil for 30 minutes. Optional step: remove the foil and bake another 10 minutes to brown the top (or just broil for 2-3 minutes). Remove from oven and cool 10 minutes before cutting and serving.
