This is a really easy peach cobbler dessert my mother used to make for us when we were kids. You may use either fresh peaches or drain the canned ones. Whichever method you choose you will be delighted with the end result.

1 1/2 cups sugar
2 teaspoons baking powder
1 1/2 teaspoons salt
1 cup milk
1/2 cup butter
29 ounces canned peaches (drained) or 8 -10 fresh peaches
1 tablespoon ground cinnamon

Steps:

  • Mix flour, sugar, baking powder, salt, and milk to create batter.
  • Melt 1 stick of butter in 9 X 9 casserole dish. Pour some of the batter into the dish.
  • Add peaches. (as much as needed to fill baking dish).
  • Pour in remaining batter and sprinkle with cinnamon.
  • Bake uncovered at 325 for 1 hour or until golden brown.

1/2 cup (1 stick) butter
1 cup self-rising flour
1 cup sugar

Homemade Whipped Cream, recipe follows
2 cups whipping cream, chilled in the fridge
4 tablespoons sugar

  • Preheat the oven to 350 degrees F.
  • Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with fresh whipped cream

  • Preheat the oven to 375 degrees.
  • Prepare a 9×13 pan by adding a light mist of baking spray.

Steps:

  • Cut nectarines and peaches in slices or finely chop as preferred. Discard the seeds.
  • Add sugar and cornstarch(optional), mix well, cover and keep aside for 10-15 mins.
  • Preheat oven to 350°F or 180°C.
  • Take a baking dish, add butter in it and keep in the oven, till the butter melts. It will take about 2 mins.
  • Make batter for cobbler.
  • Mix pancake mix with milk and sugar. Do not beat the batter, just combine the flour and milk. If there are lumps and leave like that.
  • In the baking dish with melted butter, transfer fruit filling.
  • Pour batter over it. Do not mix.
  • Top with more fruit slices if you want.
  • Bake in preheated oven for about 30-40 mins.
  • If baking in small ramekins bowls or pie dishes adjust the baking time accordingly. For small dishes, it should be around 15 mins.

8-9 fresh peaches, peeled & sliced thin (about 4 cups)
2 tbsp vegan butter, melted (28g)

Steps:

  • Bring a large pot of water to a boil. Pierce the skin of each peach with a knife. Boil the peaches for 1 minute and remove them from the water. Let the peaches cool slightly, and then remove the skin. It should slide right off.
  • Slice the peaches thinly and remove the pit. Add the peaches to a medium-size bowl and let cool to room temperature.
  • Sprinkle the 2 tbsp of melted vegan butter, sugar, cinnamon, and cornstarch on top. Mix until the peaches are evenly coated.
  • Set them aside, covered in the fridge, while preparing the topping.
  • Preheat the oven to 375F.
  • Whisk together the flour, sugar, baking powder, cinnamon, and salt.
  • Make a well in the center and pour in the melted vegan butter, vanilla, and dairy-free milk.
  • Mix until the wet and dry ingredients are just incorporated. The batter should be thick but spreadable.
  • In an 8x8" baking pan, spread the prepared peaches onto the bottom. Spoon the topping on the peaches, using the back of the spoon to spread it evenly. Sprinkle coarse granulated sugar on top.
  • Set the baking dish onto a cookie sheet in case the peaches bubbly over.
  • Bake at 375 F for 40-43 minutes. The topping should be golden brown and the peach filling should be bubbling. To ensure the topping is cooked through, insert a toothpick into the center of the baking dish. It should remove cleanly without any wet batter (although if you insert it too far the peach filling will get on it).
  • Serve warm with a scoop of dairy-free vanilla ice cream.

4 cups peaches (ripe & fresh, peeled and sliced (or two 28 oz. canned peaches, drained))
1 cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ginger (minced)
¼ cup water (cold)
2 tablespoons cornstarch
2 cups Bisquick (*See the notes below for how to make homemade Bisquick from scratch!)
1 cup milk
¾ cup sugar (granulated )
1 teaspoon vanilla extract
½ cup butter (melted )

Steps:

  • Preheat the oven to 350°F.
  • Place the butter in the baking dish and then place the dish in the oven to melt the butter while the oven is preheating.
  • Remove the melted butter from the oven after a few minutes and set it aside.
  • Peel and slice the peaches into quarters, and then halve the quartered peach slices. (If using canned peaches, use a colander to drain the peach juice before slicing them).
  • In a medium-sized bowl, mix the ingredients for the peach filling: peaches, brown sugar, cinnamon, nutmeg, and ginger. (I mixed the peach cobbler filling in my Instant Pot inner pot with the lid off and the 'keep warm' setting on.)
  • Add the cornstarch to the cold water and stir until smooth.
  • Pour the cornstarch mixture into the peach mixture.
  • Stir the peach mixture to combine the ingredients and then set aside.
  • In a second medium-sized bowl, whisk the ingredients for the cobbler batter: Bisquick, milk, sugar, and vanilla.
  • Pour the Bisquick mixture over the melted butter in the baking pan.
  • Then, pour the peaches into the Bisquick mixture (the dough will rise around the peaches as it bakes).
  • Bake at 350 degrees F for 50-60 minutes in the conventional oven. Bake at 350 degrees F for 35-45 minutes if using the Instant Pot Omni Plus oven. Watch the cobbler while baking, and bake until the cobbler dough is golden brown.
  • To test if the cobbler is done, insert a toothpick into the center of the cobbler dough. If it comes out clean, then it is done.
