STRAWBERRY WALNUT TORTE

- Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease paper., Place walnuts and 1/4 cup sugar in a food processor; pulse until nuts are ground. In a small bowl, beat cream until stiff peaks form. Set aside walnut mixture and cream., In a large bowl, beat eggs and remaining sugar until thick and lemon-colored; beat in vanilla. In another bowl, mix flour, baking powder, salt and walnut mixture; fold into egg mixture alternately with whipped cream., Transfer to prepared pans. Bake 25-30 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely., For frosting, in a small bowl, beat cream until stiff peaks form. In a large bowl, beat cream cheese, sugar, vanilla and salt until blended. Fold in whipped cream., Using a long serrated knife, cut each cake horizontally in half. Place 1 cake layer on a serving plate; spread with 1/2 cup frosting. Top with a second cake layer. Reserve 2 tablespoons preserves for strawberries; spread half the remaining preserves over top of cake to within 1/2 inch of edge. Repeat layers., Frost sides of cake with remaining frosting. For a basket weave design, run a small offset spatula around cake to form ridges, stopping and starting at short intervals. Arrange strawberries over top. In a microwave, melt reserved preserves; brush over strawberries. Refrigerate until serving.

FROSTY STRAWBERRY DESSERT

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Stir together the flour, brown sugar, walnuts, and melted butter in a bowl. Spread out on a baking sheet, and bake in preheated oven for 20 minutes until crispy, then remove from oven and allow to cool completely.
- Beat the egg whites to soft peaks; continue beating to stiff peaks while slowly adding sugar. Toss the strawberries in lemon juice, and stir into the egg whites until the mixture turns slightly pink. Fold in the whipped cream until incorporated.
- Crumble up the walnut mixture, and sprinkle 2/3 of it evenly on the bottom of a 9x13 inch dish. Spoon the strawberry mixture over the crumbs, then sprinkle the remaining crumbs over top. Place in freezer and freeze for two hours until hard. Remove from the freezer several minutes before serving to make it easier to slice.

- FOR THE CRUST:.
- Mix all the ingredients together. Flatten into the bottom of a 9 by 13 inch pan. Bake 15 minute at 350 degrees or until lightly brownn around edges. Cool.
- FOR THE FILLING;.
- Heat the milk in a saucepan and melt the marshmallows inches Let cool. Fold in whipped cream; spread this mixture over cooled crust.
- FOR THE TOPPING:.
- Dissolve the jello into hot water, and stir in frozen berries. Chill until it begins to thicken, about 30-45 minutes. Spoon carefully over marshmallow layer. Serve chilled.

A frozen strawberry treat you can't put down, but is a little messy to make.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
- Line a rimmed baking sheet with aluminum foil. In a bowl, stir together the flour, brown sugar, walnuts and melted butter. Toast in the oven until walnuts are fragrant, about 15 minutes; stir occasionally. Sprinkle 2/3 of the walnut mixture evenly over the bottom of the 9x13 inch dish.
- In a large bowl, whip the egg whites with the lemon juice until they can hold a soft peak. Gradually add white sugar while continuing to whip to firm peaks. Fold in the strawberries.
- In a separate bowl, whip the cream with an electric mixer until stiff but not grainy. Fold into the strawberry mixture. Spoon over the crust in the dish and spread evenly. Top with the remaining walnut mixture. Freeze for 6 hours, or overnight.

EASY STRAWBERRY DESSERT
A very easy way to serve strawberries and a childhood favorite of mine. Whenever we had helped my German grandmother picking the strawberries in her garden she would treat us to this dessert. As children we liked to mix the cream into the juice from the strawberries to color it pink. Today I prefer it "unmixed". Whipping cream (in Germany) is a cream with a 30 percent fat content, which allows it to be whipped stiff. Use heavy cream if it is unavailable.

- Rinse strawberries carefully, remove stems, cut large berries in bite-sized pieces. Put in a bowl.
- Depending on sweetness of strawberries and your personal tastes sprinkle with about 1 tablespoon sugar and 2 teaspoons lemon juice. Stir carefully until mixed.
- Beat well cooled whipping cream on low until it starts to thicken. Add sugar (and vanilla) and beat on medium speed until stiff. Don't overbeat or you'll get sweetened butter and buttermilk. :)Put cream in a second bowl.
- For serving: Put bowls on table together with individual serving bowls, so that everybody might help themselves.
- Put some strawberries with juice in an individual bowl and top with as much (or as little) cream as desired.
- You can prepare the strawberries a few hours ahead and keep them in the fridge. Remove one hour before serving so they might get room temperature. They will develop a lot of juice while sitting in the fridge, if you don't like this, serve within 1 hour of preparation. Always whip the cream just before serving.

STRAWBERRY AND CHOCOLATE TART WITH WALNUT CRUST

- For Crust:
- Combine flour, sugar and salt in processor and mix. Add walnuts; process until chopped. Add butter and cut in using on/off turns until mixture resembles coarse meal. Add yolks and process just until moist clumps form. Gather dough into ball; flatten to disk. Wrap in plastic and chill 30 minutes.
- Preheat oven 375°F. Butter 9-inch-diameter tart pan with removable bottom. Roll out dough between sheets of waxed paper to 11-inch round. Peel off top sheet of paper. Transfer crust to prepared pan, pressing dough firmly to fit pan and patching if necessary. Discard paper. Trim edges of crust. Freeze crust 15 minutes. Bake until golden brown, about 25 minutes. Spread jam in crust. Return to oven and bake until jam sets, about 4 minutes. Cool completely on rack.
- For Filling:
- Heat cream in heavy small saucepan over medium-low heat until tiny bubbles appear around edges. Remove from heat. Add chocolate and stir until melted. Cool until mixture is room temperature and beginning to thicken but still pourable, stirring occasionally, about 50 minutes. Pour chocolate filling into crust. Refrigerate until filling is set, about 1 hour 45 minutes. (Can be prepared 1 day ahead. cover and keep refrigerated.)
- Arrange strawberries cut side down in concentric circles atop filling. Serve immediately or refrigerate up to 1 hour.
