1 1/2 cups all-purpose flour, plus more for pans
1 1/2 cups cake flour (not self-rising)
1 tablespoon baking powder
1 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature, plus more for pans
1 3/4 cups sugar, plus more for sprinkling fruit
4 large eggs
2 teaspoons pure vanilla extract
1 1/4 cups milk
10 ounces strawberries, hulled and cut into small dice, plus more for garnish
Strawberry Meringue Buttercream

Steps:

  • Preheat oven to 350 degrees. Line 2 1/2 standard 12-cup cupcake pans with paper liners; set aside.
  • Into a medium bowl, sift together flours, baking powder, and salt; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, 3 to 4 minutes, scraping down the sides of the bowl as needed. Beat in eggs, one at a time, and then beat in vanilla. With the mixer on low speed, add the flour mixture in three parts, alternating with the milk and beginning and ending with the flour; beat until combined after each addition. Fold in strawberries.
  • Divide the batter evenly among the prepared cups so that each is about two-thirds full, about 2 ounces each. Bake, rotating the pans halfway through, until the cupcakes are golden brown and a cake tester inserted in the centers comes out clean, about 20 minutes. Transfer pans to a wire rack to cool for 5 minutes. Remove cupcakes from pan and cool completely on wire racks.
  • Make Strawberry Meringue Buttercream and spread or pipe about 1/2 cup frosting on top of each cupcake. Garnish with strawberries, cut into halves, quarters, or left whole, depending on the size.

1 ¾ cups pureed strawberries
¾ cup vegetable oil
4 large eggs
2 teaspoons vanilla extract
3 cups self-rising flour
3 drops red food coloring, or as needed

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease 24 muffin cups or line with paper muffin liners.
  • Beat sugar, pureed strawberries, oil, eggs, and vanilla extract in a bowl with an electric mixer until smooth. Add flour, mixing until just incorporated. Stir food coloring into strawberry batter until color is even. Divide batter into prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 20 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

175g self-raising flour
115g caster sugar
2 eggs
100g Greek yogurt
115g butter, melted and cooled slightly
100g strawberries, hulled and finely chopped
300g icing sugar, sifted
150g butter, softened
2tbsp milk
1tsp vanilla extract
pink food colouring
6 strawberries, halved, or 12 small whole strawberries

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with cupcake cases. Mix the flour and sugar together in a large bowl. In a large jug, whisk together the eggs, yogurt and melted butter. Gradually mix the wet ingredients into the dry until you have a smooth batter, then fold in the strawberries.
  • Fill the prepared cases so they are about three-fourths full. Bake for 25-30 mins, or until golden and a skewer inserted into the middles comes out clean. Leave to cool.
  • Meanwhile, make the icing. Beat the sugar and butter together until smooth and pale, then add the milk, vanilla and a little pink food colouring and beat until the icing is an even pale pink shade. Spoon the icing into a piping bag fitted with a star nozzle, then pipe in swirls onto the cooled cupcakes. Decorate each with a strawberry half or small strawberry, then serve.

This recipe came from the Martha Stewart Show. Saw these made and knew I had to have this recipe. Made these for my husband for Valentine's Day and our 6th year anniversary. They are wonderful!! Made with fresh strawberries in both cupcake and frosting. NOTE:: For best results.... let butter and eggs come to room temperature before using and use pure vanilla extract.

3/4 cup fresh strawberries, sliced in half
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup milk
1/2 cup unsalted butter
1 cup sugar
1 large egg
2 large egg whites
1 teaspoon vanilla extract (optional)
3 tablespoons fresh strawberries, pureed
1 cup unsalted butter
3 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
1 dash salt

Steps:

  • Preheat oven to 350'.
  • Using cupcake liners, place 12 liners in a muffin pan and set to the side.
  • In a medium bowl, combine flour, baking powder and salt and set a side.
  • In a food processor or blender add strawberries and process until pureed.
  • Empty pureed strawberries into a 1/3c measuring cup and set aside. Add rest of strawberry puree to a small bowl and set aside to use in the frosting.
  • Using a electric mixer with bowl, cream butter on medium high speed until lightly fluffy.
  • Gradually add sugar and continue to mix until well blended. Reduce speed to low and slowly add one egg and egg whites and mix until lightly blended.
  • Add vanilla extract if using.
  • Mix together milk and 1/3c strawberry puree.
  • Alternate flour and milk mixture to mixer slowly ending with flour. Scrap down sides of bowl and continue to blend well.
  • Using a ice cream scoop or tablespoon, add batter to prepared muffin cups.
  • Bake for 20 to 25 minutes, or until lightly browned.
  • Cool cupcakes completely on a wire rack before adding the frosting.
  • To make the Strawberry Frosting:.
  • Using a electric mixer with bowl, add 1 cup butter (soften) and salt and blend on medium high until fluffy.
  • Reduce speed to low and add powdered sugar and blend well.
  • Add vanilla extract and 3TBS of the strawberry puree, blend well.
  • Using a knife frost the cupcakes and top with decorative candies.

Easy to make Strawberry Cupcakes without the boxed cake mix, freeze dried strawberries, strawberry extract, or gelatin! The secret to getting the strawberry flavor is reducing the strawberry puree into a thick liquid. This one easy step makes all the difference and can be done ahead of time.

8 ounces strawberries ((can be frozen and thawed or fresh) )
1 ½ cups all purpose flour
1 ½ teaspoon baking powder
¼ teaspoon salt
½ cup butter, softened ((one stick))
¾ cup sugar
2 large eggs
⅓ cup milk
1 teaspoon vanilla
6 tablespoons butter, softened
4 ounces cream cheese, softened
3 cups powdered sugar
strawberries for garnish, optional

Steps:

  • Preheat oven to 350 degrees. Line muffin tin with 12 cupcake liners; set aside.
  • To make the strawberry concentrate, puree 8 ounces of strawberries in either a blender or food processor. Pour the mixture into a small saucepan over medium heat. Bring to a boil and reduce to simmer. Simmer over low heat until mixture thickens to about half its size, stirring frequently, about 15-20 minutes. Set aside to cool.
  • To make the strawberry cupcakes, whisk together the flour, baking powder, and salt in a medium bowl; set aside. In a large bowl or stand up mixer, cream together the butter and sugar until fluffy. Beat in the eggs, milk, ⅓ cup of strawberry concentrate, and vanilla. Pour in the dry ingredients and stir to combine.
  • Divide the batter evenly among the muffin liners. Bake for 20-25 minutes, or until toothpick inserted in middle of cupcake comes out clean. Cool on wire baking rack completely before adding frosting.
  • To make the strawberry frosting, use a handheld mixer to cream together the butter and cream cheese until well combined. Add in 2 tablespoons of the strawberry concentrate and mix to combine. Add in the powdered sugar and mix until frosting is well combined. Frost the cupcakes as desired and garnish with a strawberry.

1 tablespoon water (14 grams)
2⅔ cups all-purpose flour (320 grams)
1 tablespoon baking powder (4 grams)
1¼ teaspoons kosher salt (4 grams)
¾ cup unsalted butter (170 grams, room temperature (1½ sticks))
1 cup granulated sugar (200 grams)
½ cup Greek yogurt (114 grams)
4 large eggs (200 grams, room temperature)
Strawberry Tequila Lime buttercream ((click for recipe))
2 limes (sliced, for garnish)
15 strawberries (for garnish)

Steps:

  • Preheat oven to 350°F. Line 2 12-count cupcake tins with cupcake liners. Set aside.
  • Make the strawberry puree ahead of time so it has time to cool. To do so, blend the strawberries and water until you have 1¼ cups of strawberry puree. Pour into a microwave-safe bowl and place into the microwave for 45 seconds and stir. Continue to microwave in 30-second increments, stirring in between. Once your puree has reduced to ½ or ¾ cup, set aside to cool.
  • In a medium bowl, combine flour, baking powder, and salt. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together for 60 seconds on medium-high. Add in the cooled strawberry puree and Greek yogurt and mix. Add in the eggs and mix well.
  • Fold in the flour mixture until just incorporated. Do not overmix.
  • Fill each cupcake mold ¾ full and bake for 16 minutes, or until a toothpick inserted comes out clean or with moist crumbs. Once baked, remove from the oven and let cool.
  • Once cooled, frost the cupcakes with the strawberry tequila lime buttercream. To garnish, cut halfway through a lime slice and gently twist it. Place it on top of the buttercream, slightly to one side so that there is room for a strawberry. If you have small strawberries, place one on top of each cupcake. If you have large strawberries, slice them in half and place a half onto each cupcake next to the lime.
