Dough for single-crust pie
3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups whole milk
3 large egg yolks, room temperature, lightly beaten
2 tablespoons butter
1 teaspoon vanilla extract
3 medium, firm bananas
Whipped cream, optional

Steps:

  • On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack., Meanwhile, in a saucepan, combine sugar, flour and salt; stir in milk and mix well. Cook over medium-high heat until mixture is thickened and bubbly. Cook and stir for 2 minutes longer. Remove from the heat. Stir a small amount into egg yolks; return all to saucepan. Bring to a gentle boil. Cook and stir 2 minutes; remove from the heat. Add butter and vanilla; cool slightly. , Slice bananas into crust; pour filling over top. Cool on wire rack for 1 hour. Store in the refrigerator. If desired, garnish with whipped cream and additional sliced bananas.

3 cups heavy cream
½ cup crushed ice
1 (3.5 ounce) package instant banana pudding mix
1 (3.4 ounce) package instant vanilla pudding mix
3 bananas, sliced
1 (9 inch) pie shell, baked
1 cup heavy cream

Steps:

  • Using an electric mixer, whip 3 cups heavy cream on low speed until it starts to thicken. Add crushed ice and continue to whip another 4 minutes. Increase speed and add vanilla and banana pudding mixes, whipping until pudding mixes are blended fully with the cream and the mixture thickens. Increase speed to high and beat until mixture is stiff.
  • Line the bottom and half way up the sides of pie crust with banana slices. Cover bananas with half of the banana cream mixture and top completely with banana slices. Top with the remaining banana cream mixture.
  • In a small bowl, whip 1 cup cream until stiff peaks form. Using a pastry bag, pipe cream onto top of pie, covering completely. Refrigerate 1 hour before serving.

1/3 cup fat-free sour cream
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided

1 reduced-fat graham cracker crust (9 inches)

Steps:

  • In a bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Stir in sour cream until smooth. 1 cup mashed ripe bananas (2 to 3 medium)

2 tablespoons sugar
1 teaspoon cornstarch

1/2 cups powdered sugar
1/4 teaspoon salt
1 stick cold, unsalted butter, cut into cubes
1 large egg yolk
for the filling
2 cups whole milk
6 large egg yolks
1/2 cup light brown sugar
1/3 cup cornstarch, sifted
pinch of salt
1 teaspoon pure vanilla extract
3 tablespoons unsalted butter
2 ripe bananas, sliced
10 fresh strawberries, sliced
for the topping
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract

Steps:

  • to make the pie crust... Mix the flour, powdered sugar and salt in a large bowl, until combined. Scatter the pieces of cold butter over the dry ingredients and cut in with a pastry blender or two butter knives. There will be pieces of butter that are the size of oatmeal flakes and butter the size of peas. Beat the egg yolk with a fork and add a little of the egg yolk at a time to the flour mixture. Mix for a ten seconds at a time. When the egg is in, mix until the dough forms clumps and curds. Turn the dough out onto a work surface and, very lightly and sparingly, knead the dough just to incorporate any dry ingredients that may have escaped mixing. Butter a 9-inch pie or tart pan. Press the dough evenly over the bottom and the sides of the pan. Press the crust so that the pieces cling to one another, but not so hard that the crust loses its crumbly texture. Freeze the crust for at least 30 minutes before baking. Preheat the oven to 375 degrees. Butter the shiny side of a piece of foil and fit the foil, butter side down, tightly against the frozen crust. Don't be afraid to remove the pan from the flame to whisk it smooth.) Whisk in the vanilla extract. Let stand for 5 minutes then whisk in the butter, stirring until fully incorporated and the custard is smooth and silky. Transfer custard to a medium bowl. Cover with plastic wrap so that the plastic touches the surface of the custard and refrigerate until cold throughout. Custard can be refrigerated up to three days. When ready to assemble the pie, slice bananas and strawberries into thin, round slices. Whisk the cold custard to loosen. Add a handful of banana slices. Stir. 1 1/4 cups hot water
1 pint vanilla ice cream (I use Haagen Dazs)
1 1/2 cups bananas, peeled and sliced into rounds
1 prepared 9-inch graham cracker crust (or use your favourite recipe)
2 kiwi fruits, peeled and sliced into rounds gently dry the juices on paper towels,changing as often as necessary

Steps:

  • In a 2 quart sauce pan with hot water (not boiling), stir well to dissolve jello- set aside for 5 minutes to cool.

1/2 cup slivered almonds, optional
FILLING:
1/2 cup sugar
3 tablespoons cornstarch

2 cups milk
1 egg, lightly beaten
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract, optional
1/2 cup heavy whipping cream
GLAZE:
1/2 cup crushed strawberries

1/4 cup sugar
2 teaspoons cornstarch
3 cups fresh strawberries, halved

Steps:

  • Cover bottom of pie shell with nuts if desired; set aside. In a large saucepan, combine the sugar, cornstarch, flour and salt; gradually stir in milk. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat and stir a small amount into egg; return all to the saucepan. Cook and stir until almost bubbly. Reduce heat; cook and stir 1-2 minutes more (do not boil). Remove from the heat; stir in vanilla and almond extract if desired. Cool to room temperature. This recipe has gone through a lot of metamorphis'(sp) if you have the correct spelling let me know. I found this originally on vegweb.com and couldn't find a strawberry glaze to my liking - so here it is, at last. I have learned a lot about "vegan" cooking and recipes - I hope nothing in this recipe offends anyone. They have said that the pie-crust is vegan and also the glaze I chose to prepare. The pie must chill 5-6 hours.

3 whole sliced bananas
1 1/2 quarts fresh strawberries, rinsed, hulled and sliced
1 pint strawberry, halved, garnish
1 (6 ounce) graham cracker crust, Keebler
strawberry glaze
2 pints sugar
1 pint water
1 pint strawberry, cleaned & pared

Steps:

  • Strawberry Glaze:.
  • In a 3 quart saucepan, bring the sugar and water to a boil.
  • Sugar and water mixture boiled forms a simple syrup - mixture will thicken slightly.
  • Add strawberries and simmer for 15-20 minutes, then strain.
  • Serve hot or cold.
  • Make the Pie:.
  • Take crust and starting with bananas layer them on the bottom.
  • Then layer strawberries.
  • And so on, ending with strawberries on top, until crust is full.
  • Pour glaze on top so it covers the pie and fruit on the bottom is also covered.
  • Refrigerate for 5-6 hours.
  • Garnish with strawberries and served with whipped cream, if desired.
  • *Experiment with a 3rd layer of sliced Kiwi.
  • ** Another variation of glaze: stir in 1/8 cup of Grand Marnier or Cointreau, after you take it off the heat.

1/4 cup granulated sugar
1/3 cup butter or 1/3 cup margarine, melted
1 (250 g) package philadelphia brick cream cheese, softened
1/2 cup granulated sugar
1 large ripe banana, mashed
1 tablespoon lemon juice
1/4 cup sour cream
1 teaspoon vanilla
2 -4 cups strawberries, washed and hulled (or strawberries may be sliced)
1 square baker's semi-sweet baking chocolate or 2 tablespoons strawberry jam, melted

Steps:

  • Combine 36 finely crushed vanilla wafers, 1/4 cup sugar and butter. Press evenly over bottom of 9-inch flan or springform pan. Arrange about 36 whole wafers around the edge of pie, overlapping slightly and press into crumb mixture. Bake in preheated oven at 350F for 8 minutes. Cool.
  • Beat cream cheese, sugar, lemon juice, sour cream and vanilla together. Pour into crust. Arrange strawberries over top of pie and drizzle with melted chocolate or brush with jam. Remove from pan and serve.
