- Cook lasagna noodles according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in spaghetti sauce and, if desired, fennel seed; heat through., Drain noodles. Spread 1/4 cup meat sauce over each noodle; sprinkle with 2 tablespoons cheese. Carefully roll up noodles and place seam side down in an 8-in. square baking dish. Top with remaining sauce and cheese. , Bake, uncovered, at 400° for 10-15 minutes or until heated through and cheese is melted.

- Preheat oven to 350 degrees.
- Cook noodles according to the package directions.
- Drain, rinse under cold water and drain again. Set aside.
- Stir together spinach, 1/2 cup of the parmesan cheese, ricotta cheese, garlic, pepper flakes, salt and pepper.
- Spread about 1/4 cup of the spinach mixture along entire length of each noodle; roll up noodles.
- Place a thin layer of spaghetti sauce in a 8x8 (or 11x7) baking dish.
- Stand rolled noodles on end and slightly apart in dish.
- Pour remaining spaghetti sauce over noodles.
- Bake, covered at 350 degrees for 30-35 minutes.
- Combine remaining cheeses, add to lasagne rolls.
- Return to oven until cheese melts.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook lasagna in boiling water until cooked through but firm to the bite, about 8 minutes; drain and lay noodles flat onto a flat surface.
- Heat olive oil in a skillet over medium heat. Cook and stir garlic in hot oil until fragrant, about 2 minutes. Transfer garlic to a large bowl; add spinach, ricotta cheese, mozzarella cheese, and salt. Stir mixture until evenly combined.
- Spread a heaping 1/4 cup of spinach mixture into the middle of each lasagna noodle. Roll noodle firmly around the filling. Arrange rolled noodles into a baking dish. Pour spaghetti sauce over the rolls. Cover dish with aluminum foil.

- Boil water for noodles.
- Mix cottage cheese, half of shredded cheese, baby spinach, and spices.
- Lay your noodles on the counter or cutting board and spread cheese mixture.

- In large skillet or stock pot, brown ground beef and onion; drain.
- Stir in spaghetti sauce. Simmer 10 minutes (to heat through), stirring occasionally.
- In medium bowl, combine mozzarella cheese, fresh or frozen spinach, ricotta cheese, eggs and garlic powder; stir until well blended.
- In 13-by-9-inch baking dish, layer 1/2 of the uncooked lasagna noodles, 1/2 of the meat mixture, all of the spinach mixture, remaining half of noodles and meat sauce. Pour the 1/3 cup of water over lasagna. Cover snugly with foil.
- Bake covered at 350 F for 45 minutes.
- Remove foil from lasagna; sprinkle with Parmesan cheese.
- Bake, uncovered, an additional 10 to 15 minutes or until hot and bubbly and noodles are tender.
- Let stand 10 minutes before serving. Yields 8 servings.

I found this recipe on a can of spinach several years ago. It is very hearty and easy to make. I like using canned diced tomatoes instead of spaghetti sauce. The taste is much "cleaner".

- Cook meat with tomatoes in skillet over medium-high 7 minutes. Drain spinach well, squeezing out excess liquid, blend with ricotta cheese.
