This is just a simple recipe that came from my mom's mom. Its not the most authentic, but it is easy, quick, and good. I always have the ingredients on hand.

1/4 cup butter or 1/4 cup bacon fat
1 cup yellow onion
2 cups instant rice
8 ounces tomato sauce
8 ounces water
salt
pepper
1 tablespoon prepared yellow mustard

Steps:

  • Melt Butter in sauce pan.
  • Add onions and saute until translucent.
  • Add rice and stir to coat with butter. Cook until rice turns golden brown and smells slightly nutty,.
  • Add tomato sauce, water, salt, pepper, and mustard. Stir.
  • Bring to a boil, cover, and turn off heat. Let stand for 10 minutes.

So easy this should be illegal. The only caveat, if you can call it that, is you need an ingredient most gringos do not usually have. I'm not even too sure what it does but it lends a little something that I otherwise could not achieve. Get Sazón Goya in the Hispanic isle at your local store. Small box with 10 or so packets of this spice blend.

1 tablespoon olive oil
1 cup brown rice
1 (14 1/2 ounce) can chicken stock
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon ground cumin
5 g sazon goya

Steps:

  • Rinse brown rinse and drain.
  • In a small sauce pan heat the olive oil over medium heat.
  • Sauté the rice for a few minutes in the oil.
  • Add the cumin and Sazón Goya and mix well.
  • Add the chicken stock and tomatoes. Bring to a boil.
  • Reduce to a slow simmer and cover for about 1 hour. Check after 50 minutes due to stove differences. There should be a small amount of liquid left.
  • Remove from heat, uncover and let stand for a few minutes to absorb the rest of the liquid.

Never before have they been measured, always a 'handful of this and equal parts of this' until it looked right. I hope you enjoy it. It has become a family favorite in our home. I am always asked to make it!

2 tablespoons olive oil
1 ½ cups long-grain rice
3 cups water
2 roma (plum) tomatoes, chopped
1 cup chopped onion
¾ cup chopped fresh cilantro, or more to taste
1 tablespoon tomato bouillon with chicken flavoring (such as Knorr®), or more to taste

Steps:

  • Place a pot over medium-heat heat; add oil and heat until oil shimmers slightly. Pour rice into the hot oil, stirring constantly, until rice is golden to dark brown, about 5 minutes.
  • Mix water, tomatoes, onion, cilantro, and bouillon into rice. Bring to a boil. Turn off heat and cover pot tightly with a lid. Leave pot covered on hot burner until rice has absorbed all the liquid, about 20 minutes. Adjust seasonings as needed.

3 cups cooked white rice (such as Uncle Ben's®)

Steps:

  • Heat butter in a frying pan over medium heat; cook and stir onion, green bell pepper, celery, and garlic until slightly tender, 5 to 10 minutes. Stir tomatoes with juice, chili powder, beef bouillon granules, and salt into onion mixture; add rice. 1 medium onion, chopped (I like onions so I used a large one)
2 tablespoons vegetable oil (I used olive oil)
2 1/2 cups water
1 (8 ounce) can tomato sauce
1 small green bell pepper, chopped
1 1/2 teaspoons salt
3/4 teaspoon chili powder
1/8 teaspoon garlic powder

Steps:

  • In a large skillet, heat the oil over medium heat.
  • Add rice and onion and cook (about 5-10 minutes) stirring occasionally, until rice is golden brown and onion is tender.

1/4 cup salsa (or pic de gallo or 1/4 tomato & 1/8 onion if you don't have salsa)
