2 tablespoons olive oil
1 medium spaghetti squash
3 tablespoons butter
2 medium tomatoes (cored, seeds removed and diced)
2 tablespoons fresh chopped basil
1 small clove garlic (crushed and finely minced)
1/2 cup grated Parmesan cheese (plus more for serving)
1/8 teaspoon ground black pepper
3/4 teaspoon salt (or to taste)

Steps:

  • Line a baking pan with foil and oil lightly with olive oil. Heat the oven to 375 F.
  • Cut the spaghetti squash in half lengthwise and scoop out the seeds and any soft fibers.
  • Arrange the squash, cut side down, on the foil-lined pan.
  • Cover the pan tightly with foil and bake for 1 hour.
  • After an hour, turn the squash over, cover once again with foil and bake for about 20 minutes longer, or until very tender.
  • Scoop the squash out of its peel and toss in a large bowl with the butter, diced tomato, basil, garlic, Parmesan cheese, pepper, and salt.

1 pound ground beef or ground turkey ((CAN LEAVE OUT FOR MEATLESS DISH))
1/2 cup chopped onion
2 cloves garlic (finely minced or 1/2 teaspoon garlic powder)
2 tablespoons tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 teaspoon dried thyme
1/2 teaspoon coarse (kosher salt)
1/4 teaspoon black pepper
1 (28-ounce) can crushed tomatoes
1 (8-ounce) can tomato sauce
1-2 teaspoons brown sugar or honey
1 tablespoon low-sodium soy sauce
6 cups cooked spaghetti squash
1 to 2 cups shredded mozzarella cheese
1/2 cup shredded Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large 12-inch nonstick skillet (see note) over medium-high heat, cook the ground meat, onion, garlic, and a pinch of salt and pepper, breaking the meat into small pieces as it cooks, until the meat is not longer pink. Drain any excess grease.
  • Stir in the tomato paste, basil, oregano, thyme, salt and pepper. Cook over medium-high heat, stirring constantly, for about a minute, until the mixture smells fragrant.
  • Add the crushed tomatoes, tomato sauce, brown sugar and soy sauce. Stir to combine.
  • Bring the sauce to a simmer and cook for 5 minutes.
  • Add the cooked spaghetti squash noodles to the skillet (if it's big enough; if not, transfer the sauce and spaghetti squash to a baking dish) and toss/stir to evenly combine. Pat the mixture into a somewhat even layer. Sprinkle with the mozzarella and Parmesan cheeses.
  • Bake for 20 minutes until the cheese and spaghetti are bubbling. Let rest for 10-15 minutes out of the oven before serving (the longer it rests, the less liquidy it will be).

1 spaghetti squash (med-smallish)
1 cup spaghetti sauce or 1 cup fire-roasted tomatoes
1/2 cup grated parmesan cheese
1 cup mushroom (sliced or diced)
1 small sweet onion
1/2 lb ground beef (optional)
1/2 cup Italian sausage (optional)
1 tablespoon butter (may use just oil if vegan)
1 tablespoon olive oil
1 cup shredded mexican cheese or 1 cup Italian cheese blend
1 scoop sour cream or 1 scoop Greek yogurt

Steps:

  • 1. Cut spaghetti squash in half (length wise). Scoop out seed from center. Put in baking pan cut side down. Pour in 2 cups water (enough to cover bottom of pan plus a little). Cover with foil. Bake 350 degrees for approximately one hour - depending on size. Test for doneness with a fork. Fork should pierce the squash easily. (if you like your squash less done then cook accordingly).
  • 2. When done take fork/spoon and scrape out the fibers of the squash. Drain well to get rid of liquid.
  • WHILE SQUASH IS BAKING:
  • 3. Brown up ground beef and Italian sausage. Drain. Set aside.
  • WHILE SQUASH IS BAKING ABOUT 1/2 WAY THROUGH (@30 MIN MARK):.
  • 4. Dice up onions and mushrooms.
  • 5. Sautee onion in butter/oil. When onions start to brown add mushrooms. When done add in spaghetti sauce and/or fire roasted tomatoes. Heat til warm. Remove from heat.
  • 6. Mix in baked squash, ground beef, sausage and parmesan cheese. Transfer to baking dish. Top with 1 cup. shredded cheese.
  • 7. Bake 350 until cheese is melted and slightly browning. About 1/2 hour.
  • 8. Remove from oven serve. Serve with spoonful of sour cream or plain greek yogurt.

2 small to medium spaghetti squash (or 1 very large one)
4 cups chopped broccoli
2 red bell peppers, sliced
1 medium white onion, sliced
1 tsp coconut oil, extra virgin olive oil or avocado oil
pinch of salt, pepper and garlic powder
1 package medium or firm tofu, cut into slabs
soy sauce or gluten-free-tamari
dusting of cornstarch or arrowroot powder (approx. 1-2 tbsp, optional, results in crispier tofu)
fresh cilantro, for serving (optional)
4 tbsp almond butter
2 tbsp sweet chili sauce
3 tbsp tamari or soy sauce
1 tsp apple cider vinegar
1/4 cup light coconut milk

Steps:

  • Turn the oven on to 450 F.
  • To make the spaghetti squash, cut in half, scoop out the seeds and place face up on a baking tray. Roast in the oven for approximately 30-40 minutes until you can pierce the flesh with a fork and the squash easily peels away from the skin. Once it's cooked, remove from the oven, let it cool a bit until you can handle it, then drag a fork across the squash to create noodles. Spend a few minutes, scraping out all the squash into noodles.
  • To make the roasted veggies, place on a baking tray, toss with 1 tsp of oil and sprinkle with salt, pepper and garlic powder. Roast in the oven at the same time as the squash for approximately 30 minutes until tender and browned.
  • To make the tofu, cube and toss with a splash of soy sauce, a generous amount of black pepper, a pinch of garlic powder and the optional cornstarch or arrowroot powder. Either place on a baking tray and bake in the oven with the veggies and squash for about 30-40 minutes until browned and crispy.
  • To make the sauce, vigorously whisk the ingredients together until smooth and creamy.
  • To assemble, either scoop the spaghetti squash noodles into a bowl and top with the tofu and sauce or for a fun serving idea, create a spaghetti squash boat by piling everything into the noodled spaghetti squash, using the squash itself as a bowl.
  • Serve with fresh cilantro, if desired.

1 spaghetti squash
1/4 cup lowfat parmesan cheese (just the shaker kind is fine)
1/2 cup mozzarella cheese, grated (you can substitute for cheddar, farmer's, colby etc.... any kind of cheese you want!)
1/3 cup fresh parsley, chopped (1/8 cup if using the dried stuff)
1 cup salsa (mild, hot, whatever. I have even substituted this with spaghetti sauce!)

Steps:

  • Cut squash in half lengthwise.
  • Remove and discard seeds (or keep them to plant for next year).
  • Steam squash, cut side up for 10-15 minutes, or until softened.
  • Pre heat oven to 400 degrees F.
  • Remove squash from steamer and place on a baking sheet.
  • With a fork, scrape the insides of the squash to form the spaghetti strands. (This will be very easy if your squash is cooked enough).
  • Top each squash half with the remaining ingredients ending with the mozzarella (or whatever type you used) cheese on top to melt.

14 ounces canned stewed tomatoes
1 zucchini
1 yellow onion
12 fresh basil leaves

1/2 cup Lightlife Gimme Lean ground sausage
1/8 cup red wine

  • Take your spaghetti squash and cut in half lengthwise.
  • Pierce the skin with a fork on the bottoms.

This is the most enjoyable part of this recipe as it always amazes me to see just how much the fibers of the squash resemble spaghetti! One 3- to 4-pound spaghetti squash
Extra-virgin olive oil, for the pot and drizzling
Kosher salt and freshly ground black pepper
4 cloves garlic, roughly chopped
1 large carrot, cut into chunks
1 celery stalk, cut into chunks
1 large yellow onion, roughly chopped
1 pound cremini mushrooms, quartered
1 large zucchini, trimmed and cut into chunks
1/2 cup milk
3/4 cup red wine, such as pinot noir
One 28-ounce can crushed tomatoes
1/2 cup fresh basil leaves, torn, plus more for serving
1/2 teaspoon red pepper flakes
One 2- to 3-ounce piece Parmesan rind plus freshly grated Parmesan, for serving

Steps:

  • Preheat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper.
  • Cut the spaghetti squash in half from top to bottom. Scoop out and discard the seeds. Place the squash on the prepared baking sheet cut-side up. Drizzle each half with about 1 1/2 teaspoons olive oil and season with a generous pinch of salt and black pepper. Turn the squash cut-side down and bake until a fork easily pulls the "spaghetti" strands away from the squash, about 40 minutes.
  • In the meantime, start the sauce. Heat a Dutch oven or large pot over medium heat and add enough olive oil to coat the base of the pot, about 2 tablespoons. Add the garlic, carrot, celery and onion to a food processor fitted with the blade attachment. Pulse the vegetables until finely chopped. Add the vegetables to the heated pot and season with 1/2 teaspoon each salt and black pepper. Sauté the vegetables, stirring occasionally, until they soften, about 5 minutes. Re-attach the food processor bowl and add the mushrooms and zucchini. Pulse the vegetables until finely chopped but still with some texture. Add them to the pot with the other vegetables. Season with another 1/2 teaspoon each salt and pepper. Cook, stirring occasionally, until the vegetables are soft and their natural liquid has mostly evaporated, 7 to 10 minutes.
  • Add the milk and cook, stirring occasionally, until the milk is mostly evaporated, about 5 minutes. Next, add the red wine and cook, stirring occasionally, until the wine is mostly evaporated, about 7 minutes.
  • Add the crushed tomatoes, basil, red pepper flakes, cheese rind and 1/2 teaspoon salt. Bring the sauce up to a low boil, then reduce the heat to low, cover the pot and simmer for 15 minutes. Remove the lid and let the sauce simmer for an additional 15 minutes. Remove the cheese rind and discard. Season the sauce to taste.
  • To serve, add spaghetti squash to individual bowls and top with a big ladle of sauce, freshly grated Parmesan and torn basil.
