EASY SELF-RISING BUTTERMILK BISCUITS
Steps:
- Heat oven to 450 degrees. In a medium bowl, stir together the flour and sugar. I grate the butter with a box grater. Using your hands (that's what I do) or a pastry cutter, blend the butter in until it is crumbly. If you are adding the chopped scallions and black pepper, add them to the dry ingredients. Stir in the buttermilk until dough comes together adding more buttermilk as needed. I prefer a wetter dough than dry. You can add more flour as you knead. Knead a couple of times on a floured surface until a smooth dough forms. Roll to 1/2 inch thickness. Cut the dough with floured 2 1/2 floured biscuit cutter or cutter of your choice. Sometime I make small for appetizers that I fill with ham and mustard. On an ungreased sheet pan, place touching if you want soft sides or 1 inch apart if you want crusty sides. Bake 10-12 minutes or until golden brown.

- Preheat the oven to 450 degrees F. Place a 10 1/2-inch cast-iron skillet in the oven to heat.
- Add the flour to a large bowl. Use your hands or a pastry cutter to work the shortening into the flour until the crumbs are the size of large peas.
- Slowly pour in the buttermilk, then mix with your hands until the mixture starts to form a dough. Add buttermilk if it feels too dry. As soon as the dough comes together, transfer to a floured work surface. Press the dough into a square and fold it over itself to create layers, using additional flour to keep the dough from sticking. Shape into a 1/2-inch-thick rectangle. Use a 2- to 3-inch biscuit cutter to cut out biscuits, rerolling the scraps to use all the dough.
- Take the skillet out of the oven and add 2 tablespoons melted butter. Place the biscuits in the skillet, then lightly brush the tops with the remaining butter.
- Bake until lightly golden brown, 15 to 17 minutes. Let cool for a few minutes, then serve.
EASY, TASTY SOURDOUGH BUTTERMILK BISCUITS

- Heat oven to 450°F.
- All ingredients should be well chilled.
- In a bowl, add buttermilk to the starter and stir well to break up and dissolve the starter.
- Add the flour to a large, clean bowl and grate the butter into the flour stirring often or cut the butter into small pieces and mix with the flour using a pastry blending tool or a fork. Add the buttermilk mixing in more and more flour until all the flour is involved and the dough is sticky, gummy and on the verge of being "too wet". Add additional buttermilk if needed or flour.
- Turn out the dough onto a floured surface and with flour on your hands make into a very soft dough, sprinkling a little extra self-rising flour over it all as needed until no longer sticky. Try not to work the dough at all or anymore than necessary for it to be consistent throughout. Pat out dough to 1/2-inch thickness.
- Cut with floured 2 1/2-inch round cutter. Place on cookie sheet or greased cast iron skillet.
- Bake at 450°F for 15 minutes or until golden brown. Brush with melted butter if desired and serve warm.

- make a well in the bowl with your flour
- pour in milk and oil , i use lemon juice cause it just helps the rise for me.
- incorporate flour from inside going out may need a little more milk or flour
- pinch off six balls of dough , she used canned milk , which i do to i use 1 cup of the canned milk for gravy and 1 cup for biscuits with the wash out canned water 1/4 cup of it
- ,i like big biscuits , or 12 depending on size you want , just make them the same size . put on lightly greased cookie sheet

- bake in preheated 425 degree oven 15- 20 minutes until browned.
