1 egg
2 egg whites
2 tablespoons finely chopped fully cooked lean ham
1 green onion, thinly sliced
1 tablespoon chopped sweet red pepper
1 tablespoon fat-free milk
2 teaspoons chopped seeded jalapeno pepper
1/8 teaspoon pepper
Dash hot pepper sauce, optional
2 tablespoons shredded reduced-fat Monterey Jack cheese or Mexican cheese blend
1 whole wheat tortilla (8 inches), warmed

Steps:

  • In a small bowl, whisk the egg, egg whites, ham, onion, red pepper, milk, jalapeno, pepper and pepper sauce if desired. Coat a small nonstick skillet with cooking spray and place over medium heat. Add egg mixture to skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath. When the eggs are set, remove from the heat; sprinkle with cheese. Slide omelet onto tortilla; roll up tightly.

3 large eggs
1 pinch salt
1 pinch cayenne pepper
1 teaspoon chopped fresh parsley
½ teaspoon chopped fresh marjoram
½ teaspoon chopped fresh thyme
3 tablespoons grated sharp white Cheddar cheese
2 teaspoons olive oil

Steps:

  • Combine eggs, salt, cayenne, parsley, marjoram, thyme, and white Cheddar cheese in a small bowl and beat with a fork until combined.
  • Heat oil in a small, nonstick pan over medium heat. Pour the egg mixture into the hot pan and use a rubber spatula to begin scrambling the eggs, moving constantly and scraping the sides of the pan as needed. Reduce heat to low when eggs start to come together. Continue cooking, stirring slowly but constantly, until you have achieved very wet, soft scrambled eggs. Turn off the heat.
  • Tilt the pan toward you and push all the eggs together at the bottom edge of the pan. Go around the edges with your spatula, tucking in and smoothing out the edges, as you form the eggs into an omelet that is no longer wet, but still moist. The curve of the pan will help the shaping.
  • Turn the heat back to medium to help form a skin on the surface of the omelet, about 15 seconds. Remove from heat and carefully flop over onto a warm plate. Serve immediately.

I am saving this one for our next camping trip, but this is also a great recipe for a quick, filling breakfast or light lunch. This recipe is very versatile and you can add any herb or vegetable to the eggs or as a topping. Suggestion -green onions, hot sauce, tomatoes etc UPDATE: We made this recipe for breakfast while camping this summer and it was just amazing.

1 tablespoon vegetable oil
1 sweet red pepper, chopped
8 eggs
2 tablespoons 1% low-fat milk
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups cheddar cheese, shredded
6 tortillas, whole wheat, flax (or your preferred kind)

Steps:

  • In large skillet, heat oil over medium heat; cook red pepper until slightly softened, about 3 minutes.
  • Whisk together eggs, milk, salt and pepper; pour into pan and cook, drawing spatula across bottom of pan to form large soft curds, until eggs are thickened and moist but no liquid remains, about 4 minutes.
  • Sprinkle cheese down centre of each tortilla; spoon 1/3 cup (75 mL) of the egg mixture over cheese. Fold top and bottom of tortilla over filling; fold in sides to form rectangle. Place, seam side down, in skillet; fry, turning once, until tortillas are crisp and golden, about 4 minutes.

1 tablespoon half-and-half
salt and pepper
1 (10 inch) flour tortillas
1/2 tablespoon butter
1/3 cup monterey jack cheese, grated
1/3 cup cooked ham, diced
1 tablespoon red bell pepper, diced
1 tablespoon onion, diced
2 teaspoons jalapenos, seeded and diced

Steps:

  • Whip eggs, half and half, salt and pepper to taste.
  • Warm tortilla in skillet and set aside.
  • Melt butter in a 10" non-stick skillet that has been coated with cooking spray and heat until bubbly.
  • Pour in egg mixture and pull eggs toward the center from all sides.
  • Remove from heat when the eggs are still moist, but no longer run.
  • Top with remaining ingredients, being sure to sprinkle over entire omelet.
  • Slide omelet onto the warmed tortilla and roll up bottom edge, then fold in sides about 1" and continue rolling until completely rolled.
  • Lay in plate seam side down.
  • Let rest for a couple of minutes and cut in half.
  • Serve with favorite salsa or relish.

100 g watercress (trimmed)

Steps:

  • Spray medium frying pan with cooking oil spray, cook half the eggs over medium heat, swirling the pan to a make a thin omelette.
  • Remove from the pan; cool on baking paper covered wire rack.
  • Repeat with remaining eggs.
  • Combine mayonnaise, dill and lemon juice in a small bowl.
  • Spread each omelette with half of the mayonnaise mixture; top each with half the watercress, salmon and cucumber.
