1 large sweet onion, halved and thinly sliced
1 tablespoon brown sugar
3 tablespoons butter
2 jars (12 ounces each) beef gravy
1 package (12 ounces) frozen fully cooked homestyle meatballs, thawed
Hot cooked egg noodles

Steps:

  • In a large skillet, saute onion and brown sugar in butter until onion is tender. Add gravy and meatballs. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until meatballs are heated through, stirring occasionally. Serve with noodles.

8 ounces fresh sliced mushrooms (1 package, divided)
½ pound ground beef
½ pound ground turkey
¾ cup onion (diced and divided)
3 Tablespoons tomato paste (divided)
1 egg
½ cup oatmeal (ground in blender)
salt and pepper to taste
14 ounces low sodium beef broth (1 can, divided)
2 Tablespoons flour
2 teaspoons Worcestershire sauce
3 Tablespoons olive oil
20 ounces frozen mashed cauliflower (1 package)
2 Tablespoons fresh parsley (chopped, optional garnish)

Steps:

  • Place 1/2 cup diced mushrooms in a large mixing bowl.
  • Add the ground beef, ground turkey, 1/2 cup diced onion, 2 Tablespoons tomato paste, egg, ground oatmeal, salt, pepper and 1/4 cup beef broth.
  • Mix together well and form into 1 1/2 inch meatballs; set aside.
  • In another bowl combine flour, remaining beef broth, remaining 1/4 cup onion, tomato paste, and Worcestershire sauce.
  • Heat oil in skillet over medium-high heat and brown the outside of the meatballs.
  • Place meatballs in the slow cooker sprayed with nonstick cooking spray.
  • Place remaining sliced mushrooms over top.
  • Pour sauce over all.
  • Cook on low for 6 hours.
  • Serve over mashed cauliflower and sprinkle with fresh parsley, if desired.

1 pound ground beef
1/2 cup Italian style bread crumbs (or panko or oatmeal)
2 tablespoons ketchup
2 tablespoons mustard
1 tablespoon Worcestershire sauce
2 eggs
3 tablespoons butter
one medium onion (or 1/2 large onion), diced
2 tablespoons flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
fresh parsley leaves to sprinkle on top

Steps:

  • Preheat oven to 400 degrees F.
  • In a medium bowl, combine ground beef, bread crumbs, ketchup, mustard, Worcestershire sauce and eggs. Use your hands to gently mix.
  • With a spoon or cookie scoop, scoop out about 2 inch balls and place on a parchment lined baking sheet (easy cleanup!) Roll each ball in your palms to make rounder.
  • Bake for 15 minutes.
  • Meanwhile, make the sauce. In a saucepan over low heat, cook butter and diced onions together for about 7-8 minutes. Once onions are soft, sprinkle flour into the pan and stir. Cook for about 30 seconds. Slowly add stock, while stirring. Add ketchup and Worcestershire sauce and stir.
  • Put meatballs in the skillet with the sauce.
  • Pour over rice or noodles and sprinkle with salt, pepper and parsley.

1 tablespoon Muir Glen™ organic tomato paste
1/2 teaspoon salt
2 cups thinly sliced onions
8 oz mushrooms, thinly sliced (about 3 cups)
1 cup Progresso™ beef flavored broth (from 32-oz carton)
1 lb lean (at least 80%) ground beef
1/2 cup Progresso™ plain panko crispy bread crumbs
1/3 cup milk
1 egg, slightly beaten
1 tablespoon Montreal steak grill seasoning
1 tablespoon soy sauce
2 tablespoons cornstarch
2 tablespoons cold water
1 pouch (4.7 oz) Betty Crocker™ creamy butter mashed potatoes, made as directed on pouch
2 tablespoons chopped fresh Italian (flat-leaf) parsley leaves

Steps:

  • Spray 5- or 6-quart oval slow cooker with cooking spray. Mix melted butter, tomato paste and salt in slow cooker. Add onions and mushrooms; toss to coat. Stir in broth.
  • In large bowl, mix beef, bread crumbs, milk, egg, grill seasoning and soy sauce. Shape into about 24 (1 1/2-inch) meatballs. Place meatballs in slow cooker on top of vegetable mixture.
  • Cover; cook on Low heat setting 3 to 4 hours or until meatballs are thoroughly cooked (165°F); stir. In small bowl, beat cornstarch and cold water. Quickly stir into slow cooker; cover. Increase to High heat setting; cook 5 to 10 minutes or until thickened. Serve over mashed potatoes. Sprinkle with parsley.

1/2 teaspoon kosher salt
1/4 teaspoon black pepper
8 ounces mushrooms, sliced
1/4 cup onion, minced
1 teaspoon dried thyme
2 tablespoons dry sherry or 2 tablespoons white wine
1 (12 ounce) jar fat-free beef gravy

Steps:

  • Combine ground beef, garlic powder, salt and pepper, and mix well. Shape into 4 half-inch thick patties.
  • Coat a large non-stick skillet with cooking spray, place over medium heat until hot. Add patties, cook 4 min per side or until they reach desired doneness. Remove from the skillet and set aside.
  • Increase heat to medium-high, add mushrooms, onion and thyme to skillet, saute 3 minutes. Add sherry, saute 1 minute. Stir in gravy, return patties to skillet. Cook 2 minutes or until heated through.
  • Serve on garlic mashed potatoes with a steamed veggie.

1 teaspoon dried onion flakes

1/2 cup water
1 tablespoon prepared mustard

Steps:

  • In a bowl, whisk the egg and milk.
  • Add bread crumbs, 1 tablespoon gravy mix and onion.
  • Crumble beef over mixture and mix well.
  • Shape into two patties, about 3/4 inches thick.
  • Broil 3-4 inches from the heat for 6-7 minutes on each side or until meat is no longer pink and a meat thermometer reads 160°.
  • Place the remaining gravy mix in a small saucepan; stir in the water and mustard. Bring to a boil; cook and stir until thickened. Serve over patties.

1 egg white, lightly beaten
2 tablespoons 2% milk
1 tablespoon prepared horseradish
1/4 teaspoon salt, optional
1/8 teaspoon pepper
1 pound lean ground beef (90% lean)
1 jar (12 ounces) beef gravy
1-1/4 to 1-1/2 cups sliced fresh mushrooms
2 tablespoons water
Hot cooked noodles, optional

Steps:

  • In a large bowl, combine the onion, saltines, egg white, milk, horseradish, salt if desired, and pepper. Crumble beef over mixture. Shape into 4 oval patties. , In a large skillet over medium heat, cook patties for 5-6 minutes on each side or until no pink remains and a thermometer reads 160°. , Remove patties and keep warm. Add the gravy, mushrooms and water to skillet; cook for 3-5 minutes or until heated through. Serve with patties and noodles if desired.

  • Add all the meatball ingredients (excluding the olive oil) to a large bowl and mix well, use your hands. Shape into 1 inch meatballs. You should get about 40 meatballs.
  • Add the olive oil to a large skillet and heat over medium to high heat. Add meatballs and cook. If you're using a large skillet all meatballs should fit in one batch otherwise, you might have to fry them in a couple batches. Cook the meatballs on all sides, add more oil if needed. Remove meatballs from skillet and set aside.
  • To the same skillet add butter and melt. Add onion and cook until onion is soft and translucent. In a bowl add the cornstarch and beef broth and whisk. Add broth and remaining gravy ingredients to skillet, and cook for about 3 to 5 minutes, sauce should thicken. If the sauce is too thick add a bit more beef broth. Taste for seasoning and adjust as necessary.
  • When the gravy is done add the meatballs back to the skillet and toss them around so they're covered in the gravy. Garnish with parsley.
