Have you ever been to a mexican restaurant or burrito joint and tried that tasty white cheese dip? After much experimentation, I finally have a recipe that is on par with the cheese dip you can get there, and you're sure to love it too. This beats anything you can buy prepackaged in a store! If you do not have a double boiler, you can improvise by using a metal mixing bowl over a saucepan.

1 lb white American cheese (from deli, get a good brand)
1 cup half-and-half
2 tablespoons diced jalapenos
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper
1 dash chili powder

Steps:

  • In a double boiler on low heat (enough to keep a gentle boil), add the cheese and some of the half and half.
  • Stir mixture until cheese begins to evenly melt, adding half and half to result in the consistency you desire. (It should be thin enough to flow well, but thick enough to stay on a chip).
  • Add diced jalapenos to mixture, according to your preference. If they are from a jar, add a teaspoon or two of the juice as well.
  • Begin to add the spices. Start with the cumin and black pepper. Add red pepper gradually, tasting along the way. A little goes a long way, so be sure you don't make it too hot. I use a bit more than 1/4 tsp, you may use more or less.
  • Add a pinch of chili powder, and serve hot with tortillas or chips.
  • Leftovers can be microwaved (add more half and half or water to keep consistency). Don't worry about yellowing from day to day (due to spices/cheese), it will be good for 4-5 days.

  • Place the cheese and heavy cream together in a medium-sized pan and heat over low-medium heat until the cheese melts.
  • After the cheese has melted, add green chilis and onions and stir well.

¾ cup whole milk (if needed)

*NOTE: I have gotten mixed feedback about using low-fat substitutions so use full-fat dairy for best results!*
*NOTE 2: For a smoother queso, try using half white American cheese and half pepperjack!*

Steps:

  • In a medium pot over LOW heat, combine the cheese, cream cheese, sour cream, and Rotel.
  • Let the mixture heat until the cheeses melt and a smooth cream forms, stirring often. This should take 15-20 minutes. Add the spices if desired. Add milk if needed.
  • Once melted, serve immediately, or transfer to a slow cooker with a "warm" setting to keep dip warm and melted. Enjoy!

1/2 white onion, chopped fine
1 garlic clove, minced
2 jalapeños, diced
1 Tbsp extra virgin olive oil
2 cups asadero cheese, cubed ((Can substitute chihuahua cheese, or monterey jack for a Tex-Mex take))
1 tsp cornstarch
8 oz can green chilies, diced
1/2 cup half-and-half
1 tsp cumin
1 tsp salt
2 Tbsp cilantro, chopped
1 cup pico de gallo ((Optional))

Steps:

  • Set up a double boiler on your stovetop. Bring a medium pot of water to a simmer over medium heat. Place a shatterproof, heat-proof bowl over the top of the boiling water. The top bowl should be too big to fit into the bottom pot, and therefore should just absorb the heat from the simmering water.
  • To begin, heat the olive oil over medium heat in a medium skillet. Add the onions, garlic, and jalapeños. Sweat, or cook, until translucent, about 5 minutes.
  • In your double boiler, add the 1 cup of the asadero cheese and the half-and-half. Stir continuously until the cheese begins to melt. Add the cornstarch and combine, stirring as the cheese melts more. Add the remaining cup of cheese. This will take about 3 to 4 minutes.
  • When the cheese appears to be nearly finished melting, add the onions, jalapeños, garlic, green chilies, cumin, and salt.
  • When serving, add the pico de gallo on top of the queso blanco dip with a few splashes of your favorite hot sauce. Serve immediately.

  • Melt butter in a medium-sized pot over medium-heat. Sauté the green onions (white parts only) for 4 minutes, until soft. Then add the garlic and sauté until fragrant, about 30 seconds.
  • Add the tomatoes in with juices with the chiles, cumin, onion powder and cayenne pepper. Cook while stirring occasionally, for 2 minutes until soft and fragrant.
  • Mix cornstarch into the pot, then pour in the evaporated milk, stirring well to combine.
  • Bring to a boil, then add the cheese, mixing well. Cook, while stirring, until cheese just melts through the milk and transforms into a smooth sauce. Take off heat immediately.

Transfer to a serving bowl or reduce the temperature of the slow cooker to warm and keep covered until ready to serve.
  • Top with diced tomatoes, cilantro, and sliced jalapeño. Serve immediately.

  • Heat the half & half in a medium skillet over medium/high heat. Watch as soon as it starts simmering, just before it reaches a boil, reduce the heat to low.

As each addition of cheese is completely incorporate, smooth/bubbly, add a bit more and continue the process until all the cheese has been completely incorporated.

  • At this point you have two options. A) Transfer the queso to a bowl or a small crock pot to keep it warm, and serve with chips. B) Transfer the queso to a small oven proof dish, and broil for 3 minutes, or just until it begins to bubble and brown.
