Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 30m

Yield Makes 4 cups batter

Number Of Ingredients 15

2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of ground clove
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon coarse salt
3 eggs
1 3/4 cups whole milk
1/2 cup pumpkin puree
1/2 cup (1 stick) unsalted butter, melted and cooled; plus more, softened, for serving
Nonstick cooking spray
Pure maple syrup and toasted pumpkin seeds, for serving

Steps:

  • Preheat oven to 275 degrees. Set a rack on a rimmed baking sheet and place in oven. Preheat waffle iron according to manufacturer's instructions.
  • In a medium bowl, whisk together flour, spices, sugar, baking powder, baking soda, and salt. In a large bowl, whisk together, eggs, milk, pumpkin and melted butter; add flour mixture and mix just until batter is combined.
  • Lightly coat waffle iron with cooking spray. Pour about 1 cup batter into center of iron (amount may vary depending on size of iron), spreading evenly with a spatula. Cook until waffles are golden brown and crisp, 7 to 8 minutes. Remove from iron and quickly toss back and forth from hand to hand to cool slightly and allow waffles to crisp up. Transfer to rack in oven; repeat with remaining batter. Serve with butter, syrup and pumpkin seeds.

SPICED PUMPKIN WAFFLES

Spiced Pumpkin Waffles image

These waffles are my kids new favorite waffles. They're delicious! They have a light texture and the pumpkin flavor is not overpowering. The serving size is for Belgian waffles, but they will work fine in a regular waffle iron also.

Provided by Sherri35

Categories     Breakfast

Time 15m

Yield 8 Belgian waffles

Number Of Ingredients 12

1 1/2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon ground ginger
1 pinch salt
2 eggs
1/4 cup firmly packed brown sugar
1 cup canned pumpkin puree
1 2/3 cups milk
4 tablespoons butter, melted and cooled

Steps:

  • Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
  • In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
  • Gently fold in the flour mixture.
  • Cook according to your waffle iron directions.
  • I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.
  • They come out a nice deep, golden brown.
  • These are great with a little bit of syrup, but would also be great with honey butter.

EASY PUMPKIN WAFFLES

Easy Pumpkin Waffles image

Pumpkin waffles are perfect for fall! They're lightly spiced and made with real pumpkin puree for a cozy special breakfast.

Provided by Sonja Overhiser

Categories     Breakfast

Time 20m

Number Of Ingredients 9

1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 cup brown sugar
1 tablespoon Pumpkin Pie Spice*
1/4 teaspoon kosher salt
2 eggs
1/2 cup pumpkin puree
3/4 cup milk of choice (dairy or non-dairy)
1/4 cup neutral oil (like organic vegetable oil, organic canola, or grapeseed)

Steps:

  • Preheat the waffle iron to the high heat setting.
  • In a medium bowl, mix the all purpose flour, baking powder, brown sugar, pumpkin pie spice, and kosher salt until thoroughly combined.
  • In another bowl, whisk the eggs, pumpkin puree, milk, and neutral oil. Pour the wet ingredients into the dry ingredients and whisk vigorously until the batter is mostly smooth.
  • Lightly brush oil onto the waffle maker. Immediately, add the batter (1 1/4 cups for a Belgian waffle maker and a little over 1/2 cup for a standard waffle maker) into the center of the waffle iron, then cook according to the waffle iron's instructions. Remove the cooked waffles and place them on a baking sheet without stacking. Make the waffles to order, or place cooked waffles in a 250°F oven to keep warm.
  • Cooked waffles can be frozen; place them in a plastic bag and remove the remaining air with a straw before sealing. To reheat, remove from the freezer and lightly toast in a toaster.

Provided by Alice Seuffert

Time 10m

Number Of Ingredients 6

2 cups Bisquick
1 tsp Pumpkin Pie Spice
2 TB Brown Sugar
1 cup Pure Pumpkin (canned)
3/4 cup Milk
2 eggs

Steps:

  • Preheat waffle iron.
  • In a bowl, combine Bisquick, pumpkin pie spice and brown sugar. Once combined, add pumpkin and stir. Then add milk and eggs.
  • Drop batter on a preheated waffle iron until iron indicates waffle is ready. This is a sticky batter. I use a one-cup measuring cup and pour the mix in the center of my Belgian-style waffle maker and use a spoon to spread it out across the waffle iron so the whole iron is covered with batter.
  • Serve waffles with butter, syrup and sprinkle with pumpkin pie spice if desired.
  • If using a Belgian-style circle waffle iron, this recipe makes 3 large Belgian waffles.

Simple Pumpkin Waffles image

Make these simple pumpkin waffles as a special treat on a crisp fall morning - they come out soft, fluffy and perfectly spiced!

Provided by Nora from Savory Nothings

Categories     Breakfast

Time 30m

Number Of Ingredients 12

2 cups all purpose flour
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1-2 teaspoons pumpkin spice (use ground cinnamon, ginger, allspice and nutmeg if you don't have pumpkin spice)
1 teaspoons cinnamon
3 large eggs
1 1/3 cup milk
1/4 cup maple syrup
3 tablespoons oil (OR melted butter)
1 cup canned pumpkin (NOT 1 can)

Steps:

  • In a large bowl stir together the dry ingredients.
  • In a measuring jug whisk the eggs, milk, maple syrup, melted butter (or oil) and canned pumpkin until smooth.
  • Add the wet ingredients to the dry ingredients and mix until just combined - some lumps are fine.

PUMPKIN SPICE WAFFLES

Pumpkin Spice Waffles image

Nothing says good morning on a crisp fall day like these pumpkin spice waffles. Chopped pecans and a drizzle of pure maple syrup are the perfect topping, but truth be told, I've been known to devour them plain, straight from the waffle iron.

Provided by Food Network

Categories     main-dish

Time 35m

Yield about 5 waffles

Number Of Ingredients 13

3/4 cup 100 percent pumpkin puree (not pumpkin pie filling)
3 tablespoons canola oil
2 tablespoons 100 percent pure maple syrup, plus additional for topping
2 large eggs, separated

1/2 cup whole-wheat flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons pumpkin pie spice
1/4 teaspoon baking soda
1/8 teaspoon salt
Nonstick cooking spray
Chopped pecans, for topping

Steps:

  • Preheat a waffle maker.
  • Whisk together the milk, pumpkin puree, oil, maple syrup and egg yolks. In a separate bowl, whisk together the flours, baking powder, pumpkin pie spice, baking soda and salt.
  • Slowly mix the flour mixture into the pumpkin mixture and stir until smooth, taking care not to overmix.
  • In a separate large bowl, add the egg whites and beat with an electric mixer (or whisk vigorously by hand) until stiff peaks form, 3 to 4 minutes. Gently fold the egg whites into the batter until just combined.
  • Lightly spray your waffle iron with cooking spray or oil, then ladle the waffle mixture in. Cook per the manufacturer's instructions and repeat with the remaining batter. Serve with maple syrup and chopped pecans.
