a friend gave me this recipe..she says it is wonderful..have not had a chance to try it myself..but looking forward to..Be sure to get the pudding that needs to be cooked, not instant

3 ounces butterscotch pudding mix
1 cup granulated sugar
1/2 cup brown sugar
1/2 cup evaporated milk
1 tablespoon butter
1 1/2 cups pecan halves

Steps:

  • Mix butterscotch pudding (not instant) sugar, brown sugar, milk and butter in a heavy 1 1/2 quart pan.
  • Cook and stir to a full all over boil.
  • Then boil slowly 3-5 minutes.until mixture reaches soft ball stage.
  • Remove from heat.stir in pecans.beat until mixture begins to thicken, but still looks shiny.
  • Drop tblsful of mixture onto waxed paper to form 3" pralines.
  • If mixture thickens and starts to loose its shine, add a few drops of milk before dropping more.
  • Let pralines stand till firm.

1 cup all-purpose flour
2/3 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Pinch ground cloves
1/2 cup whole milk
4 medium pears, peeled and cut into 1/2-inch cubes
1/2 cup chopped pecans
3/4 cup packed brown sugar
1/4 cup butter
3/4 cup boiling water
Optional: Vanilla ice cream or whipped cream

Steps:

  • Preheat oven to at 375°. In a large bowl, combine the first six ingredients; beat in milk until smooth. Stir in pears and pecans. Spoon into an ungreased 2-qt. baking dish. , In another bowl, combine the brown sugar, butter and water; pour over batter. Bake, uncovered, for 45-50 minutes. Serve warm, with ice cream or whipped cream if desired.

3/4 cup caster sugar
1 teaspoon cornflour
2 cups pears, peeled and diced
250 g strawberries, quartered
1 cup self raising flour
1 pinch salt
1/2 cup milk
125 g butter, melted and cooled
1 egg
1 teaspoon vanilla extract
heavy cream or ice cream, to serve

Steps:

  • Preheat oven to moderate (180). Lightly grease a 4 cup ovenproof baking dish.
  • Place 1/4 cup of the sugar, the cornflour and 100ml water in a saucepan and stir to combine. Add the pear, place over a medium heat and simmer, stirring occasionally for 4-5 minutes or until pear is tender. Remove from heat and stir through the strawberries.
  • Sift the flour and salt into a large bowl, add remaining sugar and stir to combine. Whisk together the milk, butter, egg and vanilla extract. Add the wet ingredients to the dry ingredients and stir until smooth and combined.
  • Set aside 3/4 cup of the fruit mixture. Spoon the rest of the fruit mixture over the base of the prepared dish.
  • Carefully pour the batter evenly over the fruit, then spoon the set aside fruit mixture over the batter.
  • Bake for 30-35 minutes or until a skewer inserted into the centre comes out clean.
  • Set aside to cool slightly.
  • Serve with thick cream or ice cream.
