Easy Potatoes in Foil image

You won't believe how easy it is to make potatoes right in foil - simply cut, wrap in foil and bake. Easy clean-up and just so good!

Provided by Chungah Rhee

Yield 6 servings

Number Of Ingredients 7

3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried thyme
Juice of 1 lemon
Kosher salt and freshly ground black pepper, to taste
2 pounds baby red potatoes, halved
2 tablespoons chopped chives

Steps:

  • Preheat oven to 400 degrees F. In a small bowl, whisk together olive oil, garlic, thyme and lemon juice; season with salt and pepper, to taste. Cut six sheets of foil, about 12-inches long. Divide potatoes into 6 equal portions, about 1 cup per foil packet, and add to the center of each foil in a single layer. Fold up all 4 sides of each foil packet. Spoon the lemon mixture over the potatoes. Fold the sides of the foil over the potatoes, covering completely and sealing the packets closed. Place foil packets in a single layer on a baking sheet. Place into oven and bake until tender, about 15-20 minutes.* Serve immediately, garnished with chives, if desired.

Terrific Tin-foil Potatoes image

A nice twist to potatoes/veggies on the grill! You can make them in the oven, too, if you're not grillin'!

Provided by LorenLou

Categories     Potato

Time 1h

Yield 6 serving(s)

Number Of Ingredients 8

4 large potatoes
2 cloves garlic, minced
1 medium onion
1 red bell pepper
1 teaspoon thyme or 1 tablespoon fresh thyme
5/8 ounce package dry onion soup mix (more or less, to your taste)
4 tablespoons butter or 4 tablespoons margarine
salt and pepper

Steps:

  • Pull off two large sheets of heavy duty foil.
  • Attach them together along wide edge, by making a"seam" in the middle (put edges together and fold over at least twice), so that you have one large sheet.
  • Slice potatoes approximately 1/4" thick.
  • (Peel, or not- up to you).
  • Place in center of tin-foil.
  • Slice onions and red pepper and pile on top of potatoes.
  • Sprinkle the minced garlic, soup mix, thyme, and salt and pepper over the piled veggies.
  • Dot with cubes of butter.
  • Wrap tightly in the tin-foil, and cook on the grill about 30-45 minutes, or until potatoes are tender.
  • (You may want to place foil packet on top of one more sheet of foil just to make sure it doesn't burn- depends on how hot the grill is!).
  • You can also bake in the oven at 375 for 45 minutes.
  • (Place on a jelly roll pan or cookie sheet for support).

EASY SALMON AND POTATO FOIL PACKETS

Easy Salmon and Potato Foil Packets image

Make and share this Easy Salmon and Potato Foil Packets recipe from Food.com.

Provided by Jo SB

Categories     < 60 Mins

Time 35m

Yield 2 serving(s)

Number Of Ingredients 6

1 medium potato, sliced into very thin rounds about 1/16th-inch thick, divided
4 tablespoons olive oil, divided
salt and pepper, divided
2 salmon fillets, about 170 g each
1 large orange, halved
1 lemon, halved

Steps:

  • Preheat oven to 400F/200°C To a 12-inch long sheet of foil (I use Reynold's Heavy Duty Non-Stick), add half the potato slices in a pile in the center of foil. Slightly fan out the potatoes so air can circulate. Make sure potatoes are sliced very thin so they cook through in the same amount of time it takes the salmon to cook.
  • Evenly drizzle the potatoes with about 1 tablespoon of olive oil, season with salt and pepper, and repeat process with another sheet of foil and the remaining potato slices.
  • Top each pile of potatoes with 1 salmon filet.
  • Evenly drizzle each salmon filet with about 1 tablespoon olive oil.
  • Squeeze half the juice of the orange over one salmon filet and half the juice over the other filet.
  • Squeeze half the juice of the lemon over one salmon filet and half the juice over the other filet.
  • Season each salmon filet with salt and pepper.
  • Seal foil packets, making sure to tightly crimp the seams so the olive oil and citrus juices don't leak. Place packets on baking sheet and bake for about 25 to 30 minutes. Carefully open one packet to check for doneness of both salmon and potatoes and if necessary, return to the oven for an additional 5 minutes, or until done.
