16 oz sharp cheddar cheese (grated)
8 oz cream cheese (softened)
1/2 cup mayonnaise
4 oz chopped pimentos (drained)
1/2 tsp garlic powder
1/2 tsp dried onion flakes
1/4 tsp salt
1/4 tsp pepper

Steps:

  • Combine all ingredients in a mixing bowl. With an electric mixer mix the cheese on low to combine and then on high for 1 minute.
  • Place the cheese in an airtight container and refrigerate for at least two hours so the flavors can meld.
  • Serve with crackers, chips, as a sandwich, or on veggies. Enjoy!

1 cup shredded sharp yellow cheddar ((Best if grated with food processor or by hand finely from a block))

1/2 cup shredded mild white cheddar ((Best if grated with food processor or by hand finely from a block))
1/2 cup shredded mozzarella cheese ((Best if grated with food processor or by hand finely from a block))

Steps:

  • In a medium sized bowl, whisk together mayonnaise, pimentos, onion, Worcestershire sauce, salt, pepper, garlic powder, and cayenne together.
  • Next carefully fold in all cheeses with a spatula until well mixed and combined throughout. Add to a container and refrigerate for 3 hours then serve. Use within 1 week.

Pimento Cheese is an old Southern favorite. Perfect for sandwiches, as a dip or as a spread on celery sticks. Great for family get together's of any type. Really easy to make. We're using Hoop Cheese, another Southern favorite, but regular or sharp cheddar cheese can be used as well.

1 lb. of Hoop Cheese, grated
1 cup Duke's Mayonnaise
1 small jar of Pimento's, drained. (4oz)
1/2 teaspoon Worcestershire Sauce
1/4 teaspoon Onion Powder
1/2 teaspoon Texas Pete Hot Sauce
1/4 teaspoon Black Pepper
1/2 teaspoon Sugar - optional
1/2 teaspoon Apple Cider Vinegar - optional.

Steps:

  • Remove and discard the red rind from the Hoop Cheese.
  • Grate the cheese. Place in large mixing bowl.
  • Drain and discard liquid from the jar of Pimento's.
  • Add mayonnaise to the grated cheese.
  • Add the drained Pimento's.
  • Add Worcestershire Sauce
  • Add Onion Powder.
  • Add Texas Pete Hot Sauce.
  • Add Black Pepper.
  • Stir well. Taste.
  • Add more seasonings if needed to suit your taste.
  • Add the sugar if preferred. It's optional.
  • Add the Apple Cider Vinegar if preferred. It's optional.
  • Mix well. Place in container. Refrigerate overnight to let flavors blend together.
  • Enjoy!

2 cups freshly grated extra-sharp Cheddar cheese
8 ounces cream cheese, cut into 1″ cubes and softened at room temperature*
4 ounces pimento peppers**, well drained and chopped if in strips
2 tablespoons mayonnaise (Duke's is traditional but I also like Sir Kensington's)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon ground cayenne pepper (decrease or omit if sensitive to spice)
1/2 medium jalapeño pepper, ribs and seeds removed, and minced (about 1 tablespoon; omit if sensitive to spice)
Freshly ground black pepper, to taste
Salt, to taste

Steps:

  • In a large mixing bowl or the bowl of your stand mixer, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper and jalapeño (if using), and several twists of black pepper.
  • Beat the mixture together with a hand mixer, your stand mixer, or by hand with a sturdy wooden spoon or spatula. Beat until the mixture is thoroughly combined.
  • Taste, and add more black pepper if desired, and/or salt for more overall flavor (I usually add a pinch of two). If you'd like your pimento cheese to have more of a kick, add another pinch of cayenne. Blend again.
  • Transfer the mixture to a smaller serving bowl. Serve your pimento cheese immediately, or chill it in the refrigerator for up to 1 week. Pimento cheese hardens as it cools; let it rest for 30 minutes at room temperature to soften.

Pimento Macaroni and Cheese is an easy skillet mac with the flavors of pimento cheese. If you're a pimento cheese lover, it'll be your new favorite dinner!

10 ounces cavatappi pasta (or elbows, or rotini)
2 Tbsp butter
2 Tbsp flour
1 1/2 tsp smoked paprika
1/2 tsp salt
2 cups whole milk
1/2 cup cream
8 ounces sharp cheddar cheese (yellow or white is fine) shredded
1/2 cup finely chopped pimentos (I used a 5 ounce jar of whole pimentos)
1/2 cup Ritz cracker crumbs (process them in a food processor or crush them in a baggie with a rolling pin)
2 Tbsp butter, melted

Steps:

  • Preheat oven to 325F and lightly butter a 10 inch cast iron skillet.
  • Cook the pasta in plenty of salted boiling water until al dente. Drain and set aside.
  • Melt the butter in a medium heavy bottomed saucepan and whisk in the flour, paprika, and salt. Cook for a couple of minutes over medium heat, whisking constantly.
  • While whisking, add the milk and cream slowly to avoid lumps. Whisk or stir with a silicone spoonula until all the milk and cream are incorporated. Keep cooking, stirring constantly, until the mixture ALMOST comes to a boil, and thickens. Do not let it boil.
  • Remove the pan from the heat (this is important) and let it cool for a minute or two.
  • Add the shredded cheese to the pot, stirring until the cheese has completely melted. This may take a few minutes. If necessary you can put the pot back on the stove to gently heat until the cheese melts.
  • Stir in the pimentos and cooked pasta and turn into your buttered skillet.
  • Mix the cracker crumbs with the melted butter until the crumbs are evenly saturated.
  • Top with the crumb mixture, and bake for about 25 minutes, or until bubbling and golden.

1 baguette
4 ounces cream cheese, softened
2 ounces (1/4 cup) mayonnaise (Duke's is my favorite!)
8 ounces sharp white Cheddar cheese, shredded
4 ounces (1/2 cup) diced jarred pimento or roasted red peppers (see Cook's Notes for homemade)
Salt and pepper, to taste

Steps:

  • Preheat the oven to 350 degrees F. Place the baguette on a wire rack set over a baking sheet. Bake until the bread is just warm and toasted, 8 to 10 minutes.
  • Meanwhile, place the cream cheese and mayonnaise into a large mixing bowl and stir with a rubber spatula until thoroughly combined. Add the Cheddar cheese. Mix until combined, then stir in the pimentos or bell peppers (add them last so they don't get too beat up). Season to taste with salt and pepper.
  • Cook's Notes: Okay, so this recipe is pretty simple, right? And now you want to experiment and make it your own... Do you have a certain type of cheese you love? Feel free to substitute another type of cheese in for additional flavor. For example, substitute 2 ounces of blue cheese in for 2 ounces of the sharp white Cheddar cheese.
  • Feel like adding a little kick to your pimento cheese? Substitute another pepper or flavor in for the 2 ounces of pimentos. For example, I've tried Asian chili garlic sauce, kimchi, banana peppers, jalapenos, or grated horseradish.
  • To roast a red bell pepper, drizzle it with 1 teaspoon vegetable oil and place on a baking sheet. Bake in a 500 degrees F (260 degrees F) oven until the skin is charred, about 40 minutes, turning it halfway through to ensure even roasting. Remove it from the oven and immediately wrap the entire pepper in plastic wrap. Let it steam for 30 minutes. When it is cool to the touch, remove the skin with the back of a butter knife. Remove the stem, seeds and membrane. And that's all there is to it! It is a little more effort than buying jarred roasted peppers, but worth the work.
