THE BEST FRIED RICE
The BEST Fried Rice. This fried rice is loaded with veggies and only takes 20 minutes to make!

Steps:
- Heat 1 tablespoon of butter into a large skillet.
- Add the eggs and scramble until fully cooked. Remove them from the pan and set aside.
- Add the remaining tablespoon of butter into the pan. Add carrots and onion to the pan and cook until tender, 3-4 minutes. Stir in garlic and cook for an additional minute.
- Add in the cold rice and peas and sauté for 3-4 minutes. The rice should brown up a bit.
- Add the eggs back to the pan and stir in soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes to heat through.
- Serve immediately with green onions for garnish, if desired.

EASIEST FRIED RICE (USING UNCOOKED RICE)
Found this on an Aussie Website and have used it ever since. It is the easiest fried rice I've ever made and it is so good. I have often wanted to cook fried rice and I have had no leftover cooked rice ready well you don't use leftover rice for this recipe so it is a very handy recipe.

Steps:
- Cook the eggs in a pan with a quick spray of olive oil. I break the yolks and run a knife through them and cook until just set then cut into small strips.
- Fry rice until browned, add stock and cook until moisture is absorbed and rice is tender.
- Add shallots, then egg and bacon pieces, cooked prawns and heat through.
- Add lemon juice (if using prawns) and soy sauce to taste.

A quick fried rice like you get at your favorite Chinese restaurant. A couple of eggs, baby carrots, peas and soy sauce is all you need.

- In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
- In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.
- Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

NO EGG FRIED RICE

Steps:
- Add oil to skillet over high heat. When oil is hot add the cold rice and butter. Stir until butter melts and all of the rice has been coated. Add pepper and drizzle of sesame oil. Continue to cook over med-high heat and stir occasionally. (Here is where I would add veggies if you want them.) After about 5-8 minutes add soy sauce turn the heat down and mix well. Cook for another few minutes to heat through.
- I sample the rice throughout the cooking process to make sure it isn't getting crispy and that I have seasoned it enough. You may need to adjust your heat if your rice starts to get crunchy.
- If you do not have leftover rice, you can cook some up and put it on a baking sheet and place in the freezer for about 10-20 minutes -- works great!

- Place Butter, chicken, onion and frozen vegetables in a microwave safe container. Microwave on high for 6 minutes.
- Blend stock cubes into water.
- Add stock, rice and herbs to the container. Microwave for 10 minutes, stir and then microwave for a further 10 minutes checking occasionally.
