6 tablespoons CRACKER BARREL Finely Shredded 100% Parmesan Cheese
6 small boneless skinless chicken breasts
330 grams spaghetti, uncooked
1 ½ cups CRACKER BARREL Shredded Mozzarella Cheese

Steps:

  • Heat oven to 375 degrees F (190 degrees C).
  • Pour sauce into 13x9-inch baking dish sprayed with cooking spray. Stir in 1/4 cup (4 Tbsp.) Parmesan. Add chicken; turn to evenly coat both sides of each breast with sauce. Cover.
  • Bake 30 minutes or until chicken is done (165 degrees F). Meanwhile, cook spaghetti as directed on package, omitting salt.
  • Top chicken with remaining cheeses; bake, uncovered, 5 minutes or until mozzarella is melted.
  • Drain spaghetti. Serve topped with chicken and sauce.

This chicken parmesan is doable on a weeknight, yet tastes as good the version from your favorite Italian restaurant.

2 pounds chicken tenderloins
2 teaspoons salt, divided
¾ teaspoons freshly ground black pepper, divided
1½ cups panko
¾ cup plus 2 tablespoons grated Parmigiano Reggiano, divided
1 teaspoon dried oregano
½ teaspoon dried thyme
½ cup flour
3 large eggs
Olive oil, for cooking
1½ cups homemade or store-bought marinara sauce, best quality such as Rao's or Victoria
6 oz fontina, shredded (about 1½ cups)
3 tablespoons fresh chopped basil

Steps:

  • Using kitchen shears, trim off any white tendons at the ends of the tenderloins. Using the palm of your hand, gently flatten the tenderloins so that they are an even ¼-inch thickness. Season the chicken all over with 1¼ teaspoons of the salt and ½ teaspoon of the pepper.
  • In a large shallow bowl, combine the panko, ¾ cup of the Parmigiano Reggiano, the oregano, the thyme, the remaining ¾ teaspoon salt, and the remaining ¼ teaspoon pepper. Mix well, making sure there are no clumps of cheese.
  • Place the flour in another shallow bowl. Beat the eggs in a third bowl. Set up a breading station in this order: flour, eggs, panko. Line a baking sheet with aluminum foil or parchment paper for easy clean up. Dredge the chicken in the flour, coating evenly; dip in the eggs, letting any excess drip off; then dredge in the panko mixture, turning and patting to adhere. Place the breaded chicken on the prepared baking sheet. (The recipe can be prepared up to this point, covered, and refrigerated up to 8 hours ahead of time.)
  • Preheat the broiler and set an oven rack about 4 inches from the heating element. Bring the marinara sauce to a simmer over low heat. Taste and adjust seasoning to your liking (with store-bought sauce, I find a generous pinch of sugar and fresh basil go a long way). Cover and keep warm.
  • Line another baking sheet with aluminum foil or parchment for easy clean up; set aside. In a large nonstick skillet, heat about ⅛ inch of oil over medium heat until shimmering. Place 5 or 6 tenders in the pan in a single layer and cook until the first side is golden brown, 2 to 3 minutes. Flip the chicken and cook for another 2 to 3 minutes, until golden and cooked through. Place the cooked chicken on the prepared baking sheet. Cook the remaining chicken in the same manner, adding additional oil only if necessary. You may need to lower the the heat as you go, so that the chicken doesn't brown before it is cooked through.
  • Sprinkle the fontina and remaining 2 tablespoons Parmigiano Reggiano over the center of the chicken tenderloins, leaving the sides bare so that they remain crispy. Broil until the cheese is melted and bubbling, 1 to 2 minutes.
  • Transfer the chicken to a serving platter or individual plates. Spoon the marinara sauce over the cheese, again leaving the sides bare so that they stay crispy. Sprinkle with fresh basil and serve.
  • Make-Ahead Instructions: The chicken tenders can be breaded and refrigerated up to 8 hours before pan-frying. The chicken is best and crispiest when fried right before baking, but it can also be fried up to 4 hours in advance and refrigerated. Reheat the chicken in a 350°F oven until warmed through, 15 to 20 minutes, before adding the cheese and proceeding with the recipe.
  • Freezer-Friendly Instructions: The breaded chicken tenders can be frozen for up to 3 months. Freeze the chicken on the baking sheet until firm, about 1 hour, then transfer to a resealable freezer bag or layer in an airtight container with sheets of parchment between the tenders. Defrost in the refrigerator before cooking.

2 large, skinless chicken breasts, halved through the middle
2 eggs, beaten
75g breadcrumb
75g parmesan, grated
1 tbsp olive oil
2 garlic cloves, crushed
half a 690ml jar passata
1 tsp caster sugar
1 tsp dried oregano
half a 125g ball light mozzarella, torn

Steps:

  • Halve 2 large skinless chicken breasts through the middle then place the 4 pieces between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin.
  • Dip in 2 beaten eggs, then 75g breadcrumbs, mixed with half of the 75g grated parmesan. Set aside on a plate in the fridge while you make the sauce.
  • Heat 1 tbsp olive oil and cook 2 crushed garlic cloves for 1 min, then tip in half a 690ml jar passata, 1 tsp caster sugar and 1 tsp dried oregano. Season and simmer for 5-10 mins.
  • Heat grill to High and cook the chicken for 5 mins each side, then remove.
  • Pour the tomato sauce into a shallow ovenproof dish and top with the chicken.
  • Scatter over torn pieces of half a 125g ball light mozzarella, and the remaining grated parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling.
  • Serve with vegetables or salad and some pasta or potatoes, if you like.

Salt, pepper and garlic powder (for seasoning the chicken)
1 egg, beaten with 1 tablespoon milk
1/2 cup breadcrumbs
1/2 cup grated parmesan cheese
1/2 cup marinara sauce (plus extra for serving)
4 slices mozzarella cheese, cut in half
Fresh or dried parsley for garnish

Steps:

  • Preheat the oven to 425 degrees.
  • Season both sides of the chicken tenderloins with the salt, pepper and garlic powder.
  • Mix the breadcrumbs and parmesan cheese together in a bowl. Dip each chicken tenderloin into the egg mixture first, letting the excess drip off and then into the breadcrumbs, pressing to adhere the breadcrumbs to the chicken. Place on a baking sheet that's been sprayed with non-stick cooking spray and repeat with the remaining chicken tenderloins.
  • Spray the tops of the breaded chicken with an olive oil or avocado oil cooking spray and bake for 8 minutes and then turn the chicken over and bake for another 5.
  • Remove the tenderloins from the oven and spoon some of the sauce over each piece. Add a half of a mozzarella cheese slice to each tenderloin and return to the oven for another 2-3 minutes to melt the cheese.
  • Sprinkle the tops of the chicken with fresh or dried parsley and serve.

2-3 chicken breasts, sliced in half lengthwise
2 teaspoons salt, divided
2 cups Panko breadcrumbs
1/2 cup Parmesan cheese, grated
1 tablespoon garlic powder
2 eggs, beaten
1/3 cup vegetable oil (for pan-frying)
1 cup onion, finely chopped
2 tablespoons garlic, minced
2 cups tomato sauce
2 tablespoons tomato paste
1 teaspoon Italian seasoning
1/4 cup fresh parsley, chopped

5 slices of mozzarella cheese
1/4 cup Parmesan cheese, grated

Steps:

  • Preheat oven to 425 F.
  • Slice each chicken breast carefully in half lengthwise. Place each halved chicken breast between 2 sheets of plastic wrap or in a freezer bag. Carefully flatten the chicken breasts with a rolling pin to achieve uniform thickness, about 1/2-inch thick. Don't pound the breasts too hard. It could tear them apart.
  • Pat dry each breast completely with a paper towel and season with 1 teaspoon salt. Set aside for at least 10 minutes.
  • In a shallow plate, whisk together Panko breadcrumbs, Parmesan cheese, garlic powder and the remaining 1 teaspoon salt. Set aside. Add beaten eggs into another shallow plate.
  • Dip both sides of each halved chicken breast into the eggs to evenly coat them, and then dip it into the breadcrumb mixture. The breadcrumbs will stick to the egg wash.
  • Heat oil in a non stick cast-iron skillet over medium-high heat for 2 minutes until the hot oil is sizzling and shimmering. Pan fry the chicken breasts for about 4-5 minutes on each side until golden and crispy. Set aside on a plate. The chicken should be almost fully cooked and the internal temperature should reach above 155 F.
  • Remove all but 2 tablespoons of the hot oil in the skillet. Add onions and sauté for 2 minutes until soft and tender. Add garlic and sauté for another 2 minutes until fragrant.
  • Add tomato sauce, tomato paste, Italian seasoning, parsley, and salt. Stir well to combine and bring the sauce to a simmer. Turn to low heat and let it simmer for 5 minutes. Remove from heat and transfer sauce into a bowl.
  • In the same skillet, or in another cast-iron skillet or baking dish, evenly spread 1/2 cup of the sauce on the bottom. Place the chicken breasts spaced evenly apart over the sauce.
  • Cover each breast with 1/4 cup sauce, and top each breast with a slice of mozzarella cheese and 1 tablespoon Parmesan cheese. Sprinkle finely chopped parsley on top.
  • Bake in the preheated oven at 425F for 15-20 minutes until the cheese melts and turns golden brown.
  • Serve with spaghetti and garnish with more parsley on top.

1 cup parmesan cheese (freshly grated)
½ cup breadcrumbs (such as Panko)
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
1 teaspoon garlic powder
1 teaspoon smoked paprika
2 large chicken breasts (boneless and skinless cut in half horizontally or 4 smaller breasts)
¼ cup butter (unsalted (4 tablespoons))
3 cloves garlic (minced)
¼ cup fresh parsley (chopped)
1 teaspoon Italian seasoning
½ teaspoon red pepper flakes
½ cup chicken broth (low sodium)
1 cup heavy cream

Steps:

  • Make the coating: In a shallow plate combine the parmesan cheese, breadcrumbs, salt, pepper, garlic powder, and smoked paprika. Dredge the chicken breasts through the cheese mixture and shake off any excess.
  • Cook the chicken: In a large skillet, melt 2 tablespoons of the butter over low heat. Add the chicken breasts and cook until golden on each side and cooked through, about 5 to 6 minutes per side. If you notice the chicken browns too quickly and doesn't cook in the middle, lower the heat and cook slowly. Transfer cooked chicken to a plate.
  • Make the sauce: If there's too much parmesan cheese left in the bottom of the skillet, wipe clean with a paper towel. Add the remaining butter to the skillet and add the garlic, parsley, Italian seasoning and red pepper flakes. Cook for about 30 seconds until the garlic is aromatic. Deglaze the pan with the chicken broth. Stir in the heavy cream. Taste for seasoning and adjust with salt and pepper as necessary.
  • Finish and serve: Return the chicken back to the skillet and simmer for another minute to warm up the chicken. Turn off the heat and spoon some of the sauce over the chicken. Serve immediately with pasta or steamed veggies.

1 can (14.5 oz each) Hunt's® Diced Tomatoes with Basil, Garlic and Oregano, undrained
6 tablespoons Kraft® Grated Parmesan Cheese, divided
6 small boneless skinless chicken breasts (6 breasts = 1-1/2 lbs)
¾ pound spaghetti, uncooked
1½ cups Kraft® Shredded Mozzarella Cheese

Steps:

  • 1. Heat oven to 375°F.
  • 2. Pour tomato sauce and undrained tomatoes into 13x9-inch baking dish. Stir in ¼ cup (4 tablespoons) Parmesan. Add chicken; turn to coat evenly both sides of each breast with sauce. Cover.
  • 3. Bake 30 minutes or until chicken is done (165°F). Meanwhile, cook spaghetti as directed on package, omitting salt.
  • 4. Top chicken with remaining cheeses; bake, uncovered, 5 minutes or until mozzarella is melted. Drain spaghetti. Serve topped with chicken and sauce.

1 egg (lightly beaten)
1/2 cup seasoned breadcrumbs (Italian-style, garlic, or Parmesan seasoned)
2 tablespoons butter
1 (16-ounce) jar spaghetti sauce (or 1 1/2 to 2 cups homemade )
1/2 cup mozzarella cheese (shredded, or more)
1 tablespoon Parmesan cheese (grated)
1/4 cup fresh parsley (chopped)

Steps:

  • Gather the ingredients.
  • Pat the chicken breasts dry and put them between two pieces of plastic wrap or in a food storage bag. Pound gently to flatten for even cooking.
  • Add the egg to one shallow bowl or deep plate and the breadcrumbs to another. Dip a chicken breast into the egg to coat then into crumbs to coat. Repeat with the remaining chicken breasts.
  • Melt the butter in a large skillet over medium heat. Brown the chicken pieces on both sides. Add the spaghetti sauce, bring to a simmer, and reduce the heat to low.
  • Cover the skillet and simmer for 10 minutes, or until the chicken is thoroughly cooked.
  • Sprinkle with the mozzarella cheese and Parmesan cheese.
  • Cover and simmer 5 minutes, or until the cheese is melted.
