Steps:
- In a big bowl, mix together flour, sugar, salt.
- Pour in milk, beaten egg and melted butter. Mix several times until well blended. Make sure that the milk is only mildly warm and not hot.
- Add the instant dry yeast and fold until a sticky dough forms.
- Tip the dough on a floured surface and knead until it becomes smooth and elastic, about 5-10 minutes.
- Form the dough into a ball and lightly coat with oil. Place it in a bowl and cover with a kitchen towel or plastic wrap and place it in a warm area and let it rise until it doubled in size. Depending how warm it is, could take 30 minutes to an hour.
- Punch down the dough and divide into 2 equal parts using a knife or dough slicer. Roll each into a log. Cut each log into 6 smaller pieces.
- Shape each piece into a ball and roll it in breadcrumbs, completely covering all sides.
- Arrange the pieces on a baking sheet leaving some gaps in between (at least an inch). Leave them to rise second time until double in size.
- While waiting, preheat oven 370° F /185°C. Bake the Pandesal for 15 minutes or until the sides are a bit browned.
- Remove from oven and serve while hot!

FILIPINO PANDESAL BREAD ( BREAD MACHINE )
This recipe is from the Philippines. It makes the best rolls ever! They are wonderful fresh from the oven, with a little butter or some jam. They also freeze very well, so don't worry about any leftovers (if there are any!). Time to prepare the dough and rising time are not included. SOURCE: WWW.

Steps:
- Combine the yeast, sugar, and milk and stir until the yeast and sugar are fully dissolved. I've chosen milk instead of water because it just tastes better, but you can always use lukewarm water instead of the milk.
- In the mixing bowl, combine the dry ingredients: flour, sugar, salt, and baking powder then mix well.
- Add the egg, butter, cooking oil, and yeast-sugar-milk mixture in the mixing bowl with the dry ingredients then mix again until dough is formed. You can use your hands to effectively mix the ingredients.
- In a flat surface, knead the dough until the texture becomes fine.
- Mould the dough and put back in the mixing bowl, cover with damp cloth and let the dough rise for at least 45 minutes to 1 hour.
- After the dough has risen, transfer to a lightly floured working surface. Roll into a log then cut into four to six equal pieces. Take another portion of the dough, roll again into a log and cut into equal pieces, repeat this step until all the dough is done.
- Roll each piece of dough in breadcrumbs then arrange on a baking tray for at least an inch apart, you don't want it sticking together when it rises later on.
- Leave the dough in the tray to rise again for 15-20 minutes.
- Pre heat the oven at 375 degrees Fahrenheit (190 degree Celsius) for 10 minutes. If using a fan assisted oven, reduced the heat according to instructor's manual.
- Bake for 20-25 minutes or until nicely browned outside.

Steps:
- In a 4-cup spouted measuring cup or medium bowl, whisk together the milk, warm water, and egg. Whisk in the ube flavoring.
- In a large bowl, combine the flour, yeast, sugar, and salt and mix well.
- Make a well in the center of the dry ingredients, then pour the wet ingredients into the well. Slowly mix together using a whisk or your hands until all of the moisture is absorbed by the dry ingredients and a dough begins to form, about 3 minutes. Add the butter to the dough and knead until incorporated, about 5 minutes.
- Spray a clean surface with nonstick spray. Transfer the dough to the surface. The dough will be sticky, but resist adding more flour as it will make the finished product tough and dry. Knead the dough by picking up from the center with both hands on either side of the dough and slapping the bottom end onto the countertop, then folding the top end forward. Rotate your hands 90 degrees and pick up the dough from the center again and repeat the slap and fold motion. Repeat until the dough is more elastic and has a significantly smoother texture, 8-10 minutes.
- Transfer the dough to a clean large bowl greased with nonstick spray and spray the top of the dough with more nonstick spray. Cover and let rise in a warm place for 30-60 minutes, or until doubled in size.
- Once the dough has risen, grease your hands with nonstick spray and portion the dough into 24-25 pieces, about 50 grams each, then roll into balls. Cover the portioned dough with a kitchen towel to prevent a crust from forming while you shape each pandesal.
- Flatten a piece of dough evenly in your palm to create a disc about 3 inches in diameter. Place a cube of the easy-melt cheese in the center, gather the edges of the dough around the cheese and pinch to seal, then roll into a smooth ball. Immediately roll the finished pandesal in the bread crumbs to coat completely. Repeat with the remaining dough.
- Place 8-12 pandesal on each of 2-3 baking sheets lined with parchment paper and lightly cover with plastic wrap. Let proof at room temperature until doubled in size, 60-90 minutes.
- Preheat the oven to 350˚F (180˚C).
- Remove the plastic wrap from the baking sheets. Bake the pandesal, working in batches if needed, for 18-20 minutes, until puffed and lightly golden on the bottoms. Let cool for 10 minutes before serving.
- Enjoy!

EASIEST 5-STEP SOFT PANDESAL OR BREAD ROLL RECIPE (NO EGG)

Cuisine AsianTotal Time 40 minsCategory Breakfast, SnackCalories 154 per serving
- PREPARE the doughIn a large mixer bowl, pour dry dough ingredients and mix.Using a stand mixer with a dough hook running at slow speed, gradually add the wet ingredients – milk and butter.Knead the dough using stand mixer (in #2 speed) for 15mins or more. NOTE: If you wish to knead it by hand using this 5-step recipe, you may do so. However, kneading it by hand may potentially double your time of kneading as the mixture is more on the wet side. So, get those muscles ready!!!
- POKE OR PANE test (Important Step)Just after sufficient kneading (see Note 3.1), you can test the dough if it successfully passed either the:Window Pane Test - stretch a thin layer of the dough which you can see through without tearing.Poke test – poke the dough, if it springs back quickly and the indent disappears, it needs more proofing; if it springs back slowly and leaves a bit of indent, the dough is ready. The dough will be very sticky at first so please resist adding more flour if you are kneading by hand.If it still hasn't passed either of the above tests, you can continue kneading a bit more and re-test.
- PORTION the doughOnce the dough passed the readiness test, portion the dough into 20 equal pieces or to your desired size. You can either eyeball it or use a weighing scale for even baking results. Each of the dough balls in this recipe approximately weighs 55-60g.Roll each piece into a ball by tucking in the edges towards the bottom of the dough and placing the tucked part of the ball on a work surface and gently moving the balls (without squeezing them) in a clockwise motion until they are shaped into smooth round balls. Coat the balls with breadcrumbs and arrange them in a lined 10 x 15inches or larger baking tray. Make sure to position the smoothened part of the dough at the top and the tucked part at the bottom - this will ensure your bread will rise better than flat. Ensure to have gaps in between and cover it with a towel or plastic wrap.
- PROOF the doughLet the formed dough balls rise for about 1 hour or until the dough balls doubled in size at room temperature. (See Note 4)

Mix your dough about 30 minutes (if you don't have a breadmaker, u can knead the dough by hand at this point after all the flour is incorporated in the electric mixer.
- Let rise for one to two hours (I leave this in the breadmaker covered) or in a greased bowl covered with a kitchen towel let it rise in a dry warm place (90 F) until doubled in size.
- Once done, punch dough to let air out and roll into a log on a surface with flour, then cut into oval shapes. If you're like me, I just grabbed a fistful of dough and shape it directly on my palms. (But if you want consistency, the first method works) Roll in your bowl with the breadcrumbs. Place in a cookie sheet baking pan lined with parchment paper. Let rise again for 30 minutes. Now is the time to preheat your oven to 350 F

- In the bowl of a stand mixer, stir together the warm milk, yeast and about a tablespoon of the sugar. Let this mixture stand until it is foamy. In another bowl, combine 4 cups of flour and salt.
- Once the yeast mixture is foamy, add in the eggs, sugar and oil to the bowl of stand mixer. Gradually add the flour mixture, about a cup at a time while stirring with a wooden spatula or spoon. Briefly mix everything together until a shaggy dough forms.
- Attach the dough hook to the stand mixer and run the mixer on medium speed to start kneading the dough. After ten minutes of mixing, gradually sprinkle little amounts of flour to the dough ( about a tablespoon at a time) to help in the kneading process. Continue to knead until the dough gathers in the center and is cleaning the sides and bottom of the bowl. This should take about 20 minutes or so and you should only have used up to 1/2 cup of flour. Gather the dough into a ball. Place it inside a bowl, cover with a kitchen towel and let stand in room temperature to rise for an hour, or until size is doubled. Meanwhile, line a large baking sheet with parchment paper.
- Gently deflate the dough. Divide it into 30 equal sized portions. Smooth and shape each portion into an imperfect ball, about 2 and 1/2 to 3 inches in size. Roll each portion of dough in the bread crumbs and place in the baking sheet. Allow little spaces in between portions. Cover the rolls with kitchen towel and let rise for 30 minutes. Preheat oven to 350 F. Bake the pandesal for 20-25 minutes or until the top is lightly golden. Serve warm. Store leftovers in a tightly closed container at room temperature.

- Measure your ingredients and add them to your bread machine basket in the order specified by the manufacturer. It is usually the wet ingredients first, followed by the dry ingredients.
- Select the DOUGH cycle. This cycle tells the machine to mix, knead, and let the dough rise. It allows you to shape the dough yourself instead of finishing the bread in the machine in a loaf form. The machine will display the cycle time. Mine is 1:30. Press start.
- Once the machine beeps after the cycle, take the dough out and place it on a lightly floured clean surface. Gently deflate the dough. Shape it into a long log and cut it into 20-21 portions. Shape each portion into a smooth ball, and roll them in breadcrumbs. Arrange them in a baking pan. Don't use dark pans as they tend to brown the bottoms of the rolls faster. Cover them loosely with plastic film. Let the dough rise for 1 hour.
- Preheat oven to 350 F. Bake the pandesal for 20-22 minutes, or until the tops are lightly golden. Serve warm.
